I’m obsessed with these Slow Cooker Chicken Tacos

I  have a love obsession with salsa verde.  From my 3-Ingredient Salsa Verde Chicken to my creamy Green Chile Chicken Enchiladas smothered in a luscious, white sauce infuses with sour cream, green chiles and salsa verde to my Salsa Verde Honey Lime Chicken Enchiladas.  These enchiladas are unlike many of the recipes out there by the same name that use heavy cream.  Instead, my recipe combines extra honey and lime with extra salsa verde for an explosion of flavor that equals my husband’s favorite enchiladas.  Ever.

As I started thinking about those enchiladas, I started obsessing about them.  I needed that fiesta of flavors — in my mouth.  But we’ve been having a heat wave around here and when its extra hot, I love my slow cooker just as much as I love my grill.  So in went chicken, salsa verde, honey, lime, chili powder, cumin, smoked paprika, etc…

And out came Crockpot salsa verde chicken tacos without even breaking a sweat (at least from cooking). And barely raising a finger.

After you shred your chicken, it will seem like there is a ton of juice/liquid let, but let the shredded chicken soak in the salsa verde honey lime bath for 20-30 minutes more and you will be amazed at how much deliciousness it drinks up.  And even more amazed when the chicken enters your mouth.

Now as much as you will want to devour this Slow Cooker Salsa Verde Honey Lime Chicken plain, it is perfect to stuff in burritos, chimichangas and enchiladas and pile on nachos, tostadas and salads -— but my favorite way to devour slow cooker salsa verde chicken is in Tacos with pico de gallo, guacamole and a side of Cilantro Lime Rice or Mexican Style Rice

Crockpot Chicken Tacos Ingredients

These slow cooker chicken tacos have a simple ingredients list:

  • Chicken breasts: I prefer using boneless skinless chicken breasts in this recipe.
  • Olive oil: Use extra virgin olive oil for the best flavor.
  • Salsa verde: You can use your favorite store-bought salsa verde, or you can make it yourself.
  • Honey: Balances out the spices perfectly.
  • Lime juice: Freshly squeezed in best, but bottled will work in a pinch.
  • Spices: I flavored the slow cooker salsa verde chicken with chili powder, onion powder, garlic powder, smoked paprika, cumin, salt and pepper.
  • Flatout FolidIt Flatbread: The base of the tacos.
  • Taco toppings: Use your favorite toppings, like cheese, lettuce, tomatoes, hot sauce, and so on!

How to make Salsa Chicken Crockpot Tacos

  1. Rub chicken breasts with olive oil and place in the bottom of your slow cooker.
  2. Add all of the remaining Slow Cooker ingredients.
  3. Cook on high for 2-4 hours or on low for 6-7 hours or until chicken is tender enough to shred.
  4. Remove chicken to a cutting board, and let rest 5 minutes before shredding.
  5. Return shredded chicken and let cook on low for an additional 20-30 minutes to absorb some of the liquid/juices.
  6. Season the Foldit Flatbread Taco Shells (detailed instructions in the recipe card below).
  7. Stuff taco shells with chicken and top with desired taco toppings.

How to prep Crockpot Salsa Chicken ahead of time

Yes! You can make the recipe as instructed, then chill for up to 5 days. You can reheat big batches in your slow cooker if you plan on serving this to friends and family — or if you simply want to meal prep for the week ahead!

Salsa Verde Chicken Tacos Crockpot tips and tricks

  • For spicier tacos, add extra hot sauce and / or cayenne pepper to the chicken.
  • I highly recommend using boneless chicken breasts to make these easy chicken tacos. Boneless chicken breasts are easier to shred and you won’t have to worry about chomping down on any bones.
  • The original recipe stated ½ cup honey, so if you have made this recipe previous to 2/22/2017 and thought it was perfect, that is the amount you used.  This was too sweet for some, so I have adjusted it to 1/3-1/2.  You can start with ⅓ cup and add more to taste if desired.

Slow Cooker Chicken Tacos variations to try

  • Sweeten it up: with additional honey.
  • Spice it up:  add additional chili powder or chipotle chili powder to taste.
  • Make taco salad: Instead making salsa verde tacos, you could use this chicken to make taco salads or burrito bowls.

Storing and reheating Crock Pot Chicken Tacos

This slow cooker salsa verde chicken recipe makes fantastic leftovers as it reheats beautifully and stays tender, juicy and saucy for days! 

  • How to store:  store leftover chicken in an airtight container in the refrigerator for up to 5 days. Taco toppings should be stored in separate containers.
  • How to reheat on the stove:  heat a skillet over medium heat on the stove.  Once hot, add the chicken, reduce to medium low and continue to cook and stir occasionally until warmed through. You may need to add a splash of water for saucier chicken.
  • Reheating in microwave:  transfer chicken to a microwave-safe plate.  Heated on high for 90 seconds, stir then continue to cook at 30-second intervals as needed until heated through.     

How to freeze Slow Cooker Chicken Tacos

Yes!  This Crockpot salsa verde chicken recipe freezes very well.  To freeze:

  1. Let chicken cool completely.
  2. Transfer chicken to either a large freezer size bag or divide into smaller size bags.  Alternatively, transfer to airtight container(s).
  3. Press air out of the freezer bag, seal, label and freeze for up to 3 months.
  4. When ready to eat, defrost chicken in the refrigerator.
  5. Heat on the stove until warmed through.

Ingredients

Slow Cooker Salsa Verde Honey Lime Chicken

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup mild salsa verde (medium for a kick) (I use roasted Herdez in the jar)
  • 1/3-1/2 cup honey
  • 1/2 cup lime juice
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • cayenne pepper or hot sauce to taste

Tacos

Instructions

  • Rub chicken breasts with olive oil and place in the bottom of your slow cooker. Add all of the remaining Slow Cooker ingredients except for the hot sauce. Cook on high for 2-4 hours or on low for 6-7 hours or until chicken is tender enough to shred.
  • Remove chicken to a cutting board, and let rest 5 minutes before shredding (there will be a lot of liquid remaining). Return shredded chicken and let cook on low for an additional 20-30 minutes to absorb some of the liquid/juices. Drain excess liquid before serving or use tongs to remove shredded chicken. Taste and add more honey for sweeter, lime for more tang, hot sauce/cayenne for spicier.
  • To make Seasoned Flatout FolidIt Flatbread Taco Shells, preheat oven to 375 degrees F. Cut each FoldIt in half and lightly brush with Salsa Verde Honey Lime juices from slow cooker on one side. Hang each cut FoldIt in half over individual oven rungs so they from a taco shell and bake at 375 degrees F for approximately 10-12 minutes or until edges are crisp. Remove and let cool for 1 minute.   • Stuff taco shells with chicken and top with desired taco toppings.

*The original recipe stated ½ cup honey, so if you have made this recipe previous to 2/22/2017 and thought it was perfect, that is the amount you used.  This was too sweet for some, so I have adjusted it to 1/3-1/2.  You can start with ⅓ cup and add more to taste if desired. **This chicken is a little on the spicy side due to the salsa verde but I think its perfect for most people. If you want it very kid friendly, then I would recommend reducing the salsa verde to ½ cup, honey to ¼ cup lime juice to ¼ cup.  Then adjust to taste. **This recipe makes enough for 2 packages Flatout FoldIt Flatbread (24 mini tacos) but you can just make one package (12 mini tacos) if you prefer.

    Another winning recipe. I’m a total fan now! Your food is exactly my taste. I love a crock pot recipe that isn’t “too wet”. This came out perfectly and the sauce to meat ratio was perfect. I was out of limes so I subbed that real lemon bottled stuff…. it was still delicious, but think lime is the way to go.

    I cannot give enough praise about this recepie! I’m always looking for new things to throw together in my roaster and this one is by far my favorite so far. I made it specifically with tacos in mind but can see myself pairing it with zoodles or putting it in my salads.     This was soooo good! I’ve now made it twice. And this last time I made it with a pork loin and it was just as good! I think I waited too long to shred though so it was a little tough, but once I finished shredding and had it soak back in the juices, it was all good. Thanks for the recipe!

    We moved to NW Costa Rica from Colorado. Back home hatch green chilies went in almost everything I made. Here they are no where to be found, so I am so excited to find recipes without them. Any other Mexican dishes you recommend with no green chilies? We do have jalapeño, but the flavor is so different. Also, I can’t find smoked paprika, can I use regular paprika and a bit of liquid smoke instead? We are eating these tacos (minus the flat bread, can’t find them here) tonight!!!

      Hi Anne, that is quite the exotic move, I hope you loving your new adventure! As far as a substitution for smoked paprika, regular paprika with liquid smoke is a great idea in slow cooker dishes such as this. When used in a rub, etc., then I would add a dash of chipotle chile powder as that will add some smokiness – but just a dash as it is quite spicy 🙂 As far as substitution for green chilies, do you have fresh poblanos? If so, you could roast them under a broiler (problably 2-3 for 4 oz.) until blackened then put them in a sealed paper bag for 30 minutes to cool then the skin will slip right off, deseed them and chop for recipes! I still wouldn’t shy away from recipes using green chilies though, they will still be delicious! Good luck!

    Wow, this recipe was delicious! The only substitution that I made was making my own salsa verde. I found a recipe on Pinterest for roasted tomatillo salsa verde and it was so easy to make. The best part is you can adjust the recipe to your liking, so if you want it spicy or mild or more tomato favor you make the necessary adjustments. I did my prep work the night before, making the salsa verde, cleaning the chicken, and measuring out the spices. So all I had to do was go home at lunch and put everything in the crock pot and dinner was ready when we got home from work. This recipe will be going in the regular rotation!

      Hi Meredith, I am so sorry I am just getting to your comment! I would have said 4 average side chicken breasts would equal around 2 pounds. I personally like it without tomatoes but I think it comes down to personal preference.

    I cooked a little over 2 lbs of chicken in my Instant Pot. My chicken was a bit frozen still. I cooked on Manual for 14 minutes and then NPR. I removed the chicken and boiled down the juices. Served over baked sweet potatoes. So good!

      Hi Laura, fresh is always better but you can definitely reheat it. For the best texture, I would shred into big chunks and let that sit in the juices overnight then reheat in the juices then shred. I hope that helps!

    You were correct! This recipe is awesome! I used a wee bit more honey (probably closer to half a cup) and the flavor was amazing.

    Due to unforeseen circumstances, I had to put the cooked chicken into the fridge and waited two days to serve it to my family. But, I HAD to taste the chicken when I was putting it away and it tasted good, probably a “B” or “B+.” I was expecting great but it was acceptable. However, when I tasted it 2 days later, it was OUTSTANDING!!! The flavors really meld together wonderfully. Hubby is VERY happy! Thank you so much for another terrific recipe, Jen. BTW…I’ve been pouring over your T-Day recipes (50+ plus? I’m getting excited!) and am trying to select your very best (gotta make the family happy!) Hope your list shows YOUR favorites!

    I made this recipe recently and wow… one of the best crock pot chicken recipes I’ve ever had. It smelled heavenly then when I tasted it, I had to make myself stop spooning the juice. I followed the recipe exactly as listed except I subbed 1/3 cup agave for the honey. The sweetness was level was perfect.

    Other reviewers have mentioned how good the leftovers are and I have to concur – I think it was even better after it had refrigerated. Because I have zero time in the evenings with a full-time job and a 2 year old, I put the leftover chicken into tortillas, topped with red enchilada sauce and cheese and baked. Yum! We all loved it.

    Your Mexican Chicken is up next. I can’t wait. Thanks again!

      Hi Riley, I don’t think it will be hot – I always add the hot sauce – I personalty think it needs it. I just say not to add it to the end for those who don’t like any heat or so people can customize the heat and don’t get mad at me for it being too spicy 🙂 So if you like heat at all, I think you’ll be fine.     I made this last night in the Instant Pot. It was amazing! It cooked for 6 minutes, so about half an hour including pressurizing and depressurizing. Then I shredded the chicken and let it sit in the juices for about 25 -30 minutes. It was so good! Even my pickiest eater loved it! Thanks for another amazing recipe, Jen!

    I made this last night. I used thighs instead because that’s what we prefer (and because I used thighs, I skipped the olive oil step). The meat shredded perfectly and it was a really tasty dish. Perfect for tacos. My husband really loved it.

    I didn’t add hot sauce at the end so everyone could add their own to taste to their tacos and I think that ended up being a good move. My husband loves more than I do and I love more than my mother does, LOL.

    I will definitely be making this again.

    By “hot sauce” you mean the salsa verde, correct? It is confusing since the image shows it added with the raw chicken at the beginning. So cook chicken with spices and add salsa verde at the very end before you pull it out? Just hoping it will be moist enough…

    I have made this so many times over the last couple of years that I have lost count. I have varied the amount of honey or even left it out and never regretted any of the changes. I have made it the crock pot and I have made it in the Insta-Pot but we prefer the slow cooked method. I always use thighs and serve over rice with various sides like avocado and hot sauce.     I just made this tonight, it was great! After shredding the chicken and cooking it a bit more in all the sauce, i separated the chicken out and reduced the sauce by probably more than half on the stove and poured it back on the chicken to keep warm in the slow cooker. Very juicy tacos but it was delicious.

    I have maybe half a cup of sauce and some bits of shredded chicken left and I plan to use them to cook my rice tomorrow night for a rice & beans bowl, should be great.

    Can bone in thigh/leg be used … maybe partially cook chicken and remove bones . At this point add all spices and continue cooking ?

      Hi Grace, you can absolutely do it that way, or just cook it all together, shred the chicken when it’s time and then make sure to let it soak for the 3o minutes.

      For safety reasons, you should thaw the chicken before adding the crockpot, then it will work great.

    Anyone make this with beef? I think I will use a 2lb chuck roast, maybe rub some of the dry spices on it, sear it in my instant pot with some oil, add the other ingredients and then use the slower cooker function. Any suggestions?

    The recipe sounds delicious and I will be giving it a try. You advised reheating large batches in the slow cooker on another day. You should never reheat food in a slow cooker due to food safety issues. The food does not reach proper temperature fast enough and can be a breeding ground for bacteria.

    My favorite recipe ever!! I’ve made this about 10 times now. Fresh lime juice is best, and I never end up needing the whole amount. I leave it in the juice after its shredded for as long as possible! Good on rice, in a taco, or added into chili.

    Made this tonight. My super picky 10 year old tried just the chicken (not in a taco) and liked it. She then asked for it as a taco (she will never eat tacos like ever). She absolutely loves love it and had a second taco. She never has seconds. I am telling you she is picky beyond picky. She is already asking for it again for dinner. The whole family loved it. Need all the shredded chicken recipes
