I’m obsessed with these Slow Cooker Chicken Tacos

I  have a love obsession with salsa verde.  From my 3-Ingredient Salsa Verde Chicken to my creamy Green Chile Chicken Enchiladas smothered in a luscious, white sauce infuses with sour cream, green chiles and salsa verde to my Salsa Verde Honey Lime Chicken Enchiladas.  These enchiladas are unlike many of the recipes out there by the same name that use heavy cream.  Instead, my recipe combines extra honey and lime with extra salsa verde for an explosion of flavor that equals my husband’s favorite enchiladas.  Ever.

As I started thinking about those enchiladas, I started obsessing about them.  I needed that fiesta of flavors — in my mouth.  But we’ve been having a heat wave around here and when its extra hot, I love my slow cooker just as much as I love my grill.  So in went chicken, salsa verde, honey, lime, chili powder, cumin, smoked paprika, etc…

And out came Crockpot salsa verde chicken tacos without even breaking a sweat (at least from cooking). And barely raising a finger.

close up of crockpot salsa verde chicken

After you shred your chicken, it will seem like there is a ton of juice/liquid let, but let the shredded chicken soak in the salsa verde honey lime bath for 20-30 minutes more and you will be amazed at how much deliciousness it drinks up.  And even more amazed when the chicken enters your mouth.

Now as much as you will want to devour this Slow Cooker Salsa Verde Honey Lime Chicken plain, it is perfect to stuff in burritos, chimichangas and enchiladas and pile on nachos, tostadas and salads -— but my favorite way to devour slow cooker salsa verde chicken is in Tacos with pico de gallo, guacamole and a side of Cilantro Lime Rice or Mexican Style Rice

But these aren’t just any tacos, these are mini taco shells made of guilt-free Flatout Foldit Ancient Grains Flatbread that get brushed with the seasoned juices from your slow cooker then hung on the oven rungs and baked to golden crispy taco perfection (see video of technique HERE, and start dreaming of the seasoned taco shell possibilities!  BBQ Sauce, Pesto, Buffalo Sauce, etc.).  The shells are hearty, crispy on the outside while still tender on the inside, perfect to cocoon Salsa Verde Honey Lime Chicken piled high with cheese, lettuce, tomatoes, avocados, sour cream.  And perfect to eat 5 in one sitting.   At least.

Slow Cooker Salsa Verde Honey Lime Chicken.  For the most delicious, easy “dump and run” meal.  For your tangy, sweet and spicy chicken cravings.  For your otherworldly delicious taco cravings.  For you.  With love.

Crockpot Chicken Tacos Ingredients

These slow cooker chicken tacos have a simple ingredients list:

  • Chicken breasts: I prefer using boneless skinless chicken breasts in this recipe.
  • Olive oil: Use extra virgin olive oil for the best flavor.
  • Salsa verde: You can use your favorite store-bought salsa verde, or you can make it yourself.
  • Honey: Balances out the spices perfectly.
  • Lime juice: Freshly squeezed in best, but bottled will work in a pinch.
  • Spices: I flavored the slow cooker salsa verde chicken with chili powder, onion powder, garlic powder, smoked paprika, cumin, salt and pepper.
  • Flatout FolidIt Flatbread: The base of the tacos.
  • Taco toppings: Use your favorite toppings, like cheese, lettuce, tomatoes, hot sauce, and so on!

How to prep Crockpot Salsa Chicken ahead of time

Yes! You can make the recipe as instructed, then chill for up to 5 days. You can reheat big batches in your slow cooker if you plan on serving this to friends and family — or if you simply want to meal prep for the week ahead!

Salsa Verde Chicken Tacos Crockpot tips and tricks

  • For spicier tacos, add extra hot sauce and / or cayenne pepper to the chicken.
  • I highly recommend using boneless chicken breasts to make these easy chicken tacos. Boneless chicken breasts are easier to shred and you won’t have to worry about chomping down on any bones.
  • The original recipe stated ½ cup honey, so if you have made this recipe previous to 2/22/2017 and thought it was perfect, that is the amount you used.  This was too sweet for some, so I have adjusted it to 1/3-1/2.  You can start with ⅓ cup and add more to taste if desired.

Slow Cooker Chicken Tacos variations to try

  • Sweeten it up: with additional honey.
  • Spice it up:  add additional chili powder or chipotle chili powder to taste.
  • Make taco salad: Instead making salsa verde tacos, you could use this chicken to make taco salads or burrito bowls.

Storing and reheating Crock Pot Chicken Tacos

This slow cooker salsa verde chicken recipe makes fantastic leftovers as it reheats beautifully and stays tender, juicy and saucy for days!

  • How to store:  store leftover chicken in an airtight container in the refrigerator for up to 5 days. Taco toppings should be stored in separate containers.
  • How to reheat on the stove:  heat a skillet over medium heat on the stove.  Once hot, add the chicken, reduce to medium low and continue to cook and stir occasionally until warmed through. You may need to add a splash of water for saucier chicken.
  • Reheating in microwave:  transfer chicken to a microwave-safe plate.  Heated on high for 90 seconds, stir then continue to cook at 30-second intervals as needed until heated through.

How to freeze Slow Cooker Chicken Tacos

Yes!  This Crockpot salsa verde chicken recipe freezes very well.  To freeze:

  1. Let chicken cool completely.
  2. Transfer chicken to either a large freezer size bag or divide into smaller size bags.  Alternatively, transfer to airtight container(s).
  3. Press air out of the freezer bag, seal, label and freeze for up to 3 months.
  4. When ready to eat, defrost chicken in the refrigerator.
  5. Heat on the stove until warmed through.

What to serve with Salsa Verde Slow Cooker Chicken Tacos

Slow cooker chicken tacos are a spectacular main event that don’t need much by the way of sides.  I love serving them with grilled corn, watermelon, and cilantro lime rice.

These easy chicken tacos are also fabulous with:

Slow Cooker Salsa Verde Honey Lime Chicken

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup mild salsa verde (medium for a kick) (I use roasted Herdez in the jar)
  • 1/3-1/2 cup honey
  • 1/2 cup lime juice
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • cayenne pepper or hot sauce to taste

  • Rub chicken breasts with olive oil and place in the bottom of your slow cooker. Add all of the remaining Slow Cooker ingredients except for the hot sauce. Cook on high for 2-4 hours or on low for 6-7 hours or until chicken is tender enough to shred.
  • Remove chicken to a cutting board, and let rest 5 minutes before shredding (there will be a lot of liquid remaining). Return shredded chicken and let cook on low for an additional 20-30 minutes to absorb some of the liquid/juices. Drain excess liquid before serving or use tongs to remove shredded chicken. Taste and add more honey for sweeter, lime for more tang, hot sauce/cayenne for spicier.
  • To make Seasoned Flatout FolidIt Flatbread Taco Shells, preheat oven to 375 degrees F. Cut each FoldIt in half and lightly brush with Salsa Verde Honey Lime juices from slow cooker on one side. Hang each cut FoldIt in half over individual oven rungs so they from a taco shell and bake at 375 degrees F for approximately 10-12 minutes or until edges are crisp. Remove and let cool for 1 minute. (See video on how to bake shells).
  • Stuff taco shells with chicken and top with desired taco toppings.

*The original recipe stated ½ cup honey, so if you have made this recipe previous to 2/22/2017 and thought it was perfect, that is the amount you used.  This was too sweet for some, so I have adjusted it to 1/3-1/2.  You can start with ⅓ cup and add more to taste if desired. **This chicken is a little on the spicy side due to the salsa verde but I think its perfect for most people. If you want it very kid friendly, then I would recommend reducing the salsa verde to ½ cup, honey to ¼ cup lime juice to ¼ cup.  Then adjust to taste. **This recipe makes enough for 2 packages Flatout FoldIt Flatbread (24 mini tacos) but you can just make one package (12 mini tacos) if you prefer.

    • Jen says

Agreed!!! I am cooking a slow cooker meal and grilling on this hot summer day 🙂 And I can’t take all the credit for the oven rack idea – that was all Flatout as linked in the video but they brushed their shell with Sriracha first – super yummy too! the possibilities for flavored shells are endless!

Is the lime juice fresh or can I use bottled? Can’t wait to try this out! I recently made your shredded Mexican chicken with a few alterations to fit a gluten free guest’s needs and it was fabulous!

  12. Trisha says

I made this and it was awesome! Thank you for the great recipe! I loved it on the Flatbreads (shaped them into taco shells just like recommended). I also loved the leftovers on crisp lettuce for an awesome salad! It didn’t even need any dressing thanks to the honey lime flavor. Thanks again.

    • Jen says

You are so welcome Trisha, and I’m so glad you loved it on the Flatbreads and it sounds divine as a salad – I’m going to have to try that next time!

I have made this twice now. So easy and delicious. Thank you for the recipe.

    • Jen says

Awesome Nicole and you are so welcome! Thank you for your comment – I love hearing it is a hit at your house!

  14. Jennifer says

Another winning recipe. I’m a total fan now! Your food is exactly my taste. I love a crock pot recipe that isn’t “too wet”. This came out perfectly and the sauce to meat ratio was perfect. I was out of limes so I subbed that real lemon bottled stuff…. it was still delicious, but think lime is the way to go.

    • Jen says

Hi Jennifer, I am so happy my food is your taste! It is so fun when you find a “foodie kindred spirit” 🙂 I hope you continue to find lots of recipes to love here! Thank you!

  15. Danielle says

I cannot give enough praise about this recepie! I’m always looking for new things to throw together in my roaster and this one is by far my favorite so far. I made it specifically with tacos in mind but can see myself pairing it with zoodles or putting it in my salads. The flavor is incredible and this is going to be in my dinner rotations for the foreseeable future until someone tells me to stop. Thank you 🙂

    • Jen says

Thank you for such a wonderful comment Danielle, seriously made my day! Yes, this chicken would make be delicious in salads – even sliders, taquitos, pizza, etc! I hope no one ever tells you to stop Danielle 🙂

  16. Perla Mejia says

I am going to try this recipe for a potluck at work. When do you add the salsa verde?

    • Jen says

In step 1 where you add all of the ingredients except the hot sauce. Enjoy!

  17. Anna says

Hi! Looking forward to making these! Any advice where you can buy the flat breads? I’ve checked publix but no luck. Looks amazing!! Thanks!

    • Jen says

Hi Anna! You can definitely get them at any health store: Sprouts, Whole Foods, etc. but I have even seen them at Wal-mart! But here is a link to their page and at the top there is a store locator – that will do the trick! https://secure.imtco.com/flatoutbread/index.php

  18. Kailei says

This was soooo good! I’ve now made it twice. And this last time I made it with a pork loin and it was just as good! I think I waited too long to shred though so it was a little tough, but once I finished shredding and had it soak back in the juices, it was all good. Thanks for the recipe!

    • Jen says

You are so welcome Kailei! I am so happy you are loving this recipe and thanks for the tip on the pork loin – that sounds delicious as well!

  19. Anne says

We moved to NW Costa Rica from Colorado. Back home hatch green chilies went in almost everything I made. Here they are no where to be found, so I am so excited to find recipes without them. Any other Mexican dishes you recommend with no green chilies? We do have jalapeño, but the flavor is so different. Also, I can’t find smoked paprika, can I use regular paprika and a bit of liquid smoke instead? We are eating these tacos (minus the flat bread, can’t find them here) tonight!!!

    • Jen says

Hi Anne, that is quite the exotic move, I hope you loving your new adventure! As far as a substitution for smoked paprika, regular paprika with liquid smoke is a great idea in slow cooker dishes such as this. When used in a rub, etc., then I would add a dash of chipotle chile powder as that will add some smokiness – but just a dash as it is quite spicy 🙂 As far as substitution for green chilies, do you have fresh poblanos? If so, you could roast them under a broiler (problably 2-3 for 4 oz.) until blackened then put them in a sealed paper bag for 30 minutes to cool then the skin will slip right off, deseed them and chop for recipes! I still wouldn’t shy away from recipes using green chilies though, they will still be delicious! Good luck!

  20. Stephanie says

Yum!! This was so good. Ate it in lettuce wraps with avocado and fire roasted corn. And so easy to make. Will be adding this one to my recipe book for sure, thank you for the recipe!!

    • Jen says

I’m drooling over your lettuce wraps with fire roasted corn – yum – what a fun way to eat these! So happy you liked them! Thanks Stephanie!

  21. Julie says

Think I could use a 4 pound roast {doubling the rest of the ingredients to compensate for more meat} and have it turn out ok?

    • Jen says

Yes Julie, I think that should work great! Just be aware it will require an hour or so more cook time. Please let me know how it goes!

  22. Katie says

Can anyone tell me how many containers this would be for 21 Day Fix?

  23. Jenny says

Just loaded my crockpot up with all the ingredients. Can’t wait until dinner! Already smells amazing. I love honey lime Mexican food!

    • Jen says

Hi Jenny, I hope you loved this chicken! Nothing better than an easy crockpot meal!

  24. sarah says

Oh my goodness. This was the best slow cooker chicken ever!!! I had my doubts because I haven’t really done much with salsa verde and I was worried the kids would turn their noses up. The whole family enjoyed this chicken, and it is so versatile as leftovers as well. Thank you for the great recipe I’ll be using again and again!

    • Jen says

YAY! That is awesome Sarah, I am thrilled your entire family loved this so much, Thank you!!! and welcome to salsa verde 🙂

  25. Paula Coxwell says

I just made a batch of salsa verde and look forward to trying it in this chicken taco recipe.

    • Jen says

Thanks Paula, hope you love it!

  26. Alison says

This looks AMAZING!! I plan to make it tonight but only have 1.5 lbs of chicken breast. Should I alter the recipe at all? Thanks!

    • Jen says

Hi Alison! You could reduce everything by 25% but that is probably more of a pain to figure out then its worth so I would just follow the recipe as is – just expect to have or extra liquid after cooking. Enjoy!

  27. Niki says

Found your recipe on Pinterest and had to try it. These came out absolutely delicious! We ended up using the same flatbread as you since they were BOGO at our grocery and they were perfect. Thank you so much for the delicious recipe! Looking forward to trying more.

  29. sarah says

This is such a versatile and a helpful recipe! I love this chicken, my husband loves it, and so do the kids! I was worried about it because of the salsa verde, but once it is cooked you can’t tell it is there in terms of texture. Just an incredible flavor.

Hi Jen, just found your website, & love it! Just made your honey buffalo meatballs (with ground turkey) & they were honestly one of the best things I’ve ever eaten. Think I could drink the sauce,
Anyway-would the recipe for the salsa verde honey lime chicken work in an “instant pot?” & if so, how–& could I by chance use frozen chicken if in instant pot?
    Thx so much!

    • Jen says

Oh man. This was so freaking good! Made tonight as per the recipe (sort of). Used regular tortillas instead of the wraps mentioned. Topped with a Taylor Farms Baja Salad kit from Costco. But the flavour in the meat was unreal. I could drink that sauce. Would definitely recommend and will absolutely be making again. Another awesome recipe from your site. Keep them coming 😉

I made these delicious tacos over the weekend. The chicken has such great flavor! I didn’t add more honey or lime. I thought it was perfect the way it was. I love having some great crockpot recipes in my repertoire, since they’re perfect for when it gets hot outside. BTW, I did not use the Fold-Its. I just homemade tortillas. Thanks so much for another great recipe!

    • Jen says

You are so welcome Kristin, I’m so happy you loved this chicken and found it perfect just as written 🙂 I bet it was amazing with your tortillas – can’t beat homemade tortillas – yum!

  44. Sarah says

This sounds absolutely delicious. If I double the amount of chicken, do I also double all of the other ingredients? Have you tried making a bigger batch? Thanks so much.

    • Jen says

Thank you Sarah! I haven’t tried making a bigger batch but I would double all of the ingredients and increase the cooking time. Enjoy!

  45. Lori Willhite says

I just made this and it is amazing!! Love the shells!!

    • Jen says

Awesome Lori, I’m so happy it was a hit, thank you!

  46. Elisabeth says

I’ve made this twice now. Used chipotle powder because I keep forgetting to buy chile powder. It’s great though! Definitely something I will continue making. Thanks for sharing!

    • Jen says

You are so welcome, so happy its on repeat! and Chipotle powder sounds wonderful!

  47. Kat says

I made a chicken taco salad and it was beyond delicious! I used a sugar-free honey substitute (lesser amount) and regular paprika because that is what I had on hand. I love the Recipe Converter Calculator, it is so handy when I want to half or double one of your amazing recipes.

    • Jen says

mmmm, I love the idea of this for a chicken salad! And I’m so happy the Recipe Converter Calculator came in handy! Thank you Kat!

    • Laura says

Kat–What kind of sugar free substitute did you use (and how much)?

  48. Ashley says

This was my first time making chicken for tacos! THIS CHICKEN WAS ABSOLUTELY AMAZING. Thank you so SOOOOO much for this!!!! I will be making this forever!!! Thank youuu!

    • Jen says

You are so welcome Ashley, I’m so happy your first attempt at chicken tacos was such a hit and a new favorite! Thank you for taking the time to comment!

  49. Lori says

Do you think you could freeze this? If so with or without the liquid? Having a party next week and the more I can get done ahead of time the better 🙂 Thanks.

    • Jen says

I think it will freeze great, and yes I would freeze it with the liquid, enjoy!

  50. Kate says

I’m excited to make this for a weekend dinner part! I’ve never made slow cooker chicken tacos, would you suggest chicken thighs or chicken breasts?

    • Jen says

Hi Kate sorry for the delay as I am way behind after recovering from pneumonia, so I know this comment is coming too late, but I would say it comes down to personal preference. Can’t go wrong with chicken breasts as everyone loves them but I personally love thighs 🙂

  51. Matt Easley says

This recipe sounds amazing! Looking forward to trying it this weekend at the lake. One question; the directions state to add everything except the hot sauce. When do you recommend adding the hot sauce? Let me know when you have a minute. Thanks!!

    • Jen says

Hi Matt! I would add the hot sauce at the very end of cooking so you can taste the chicken first and know how much if any you want to add. Enjoy!

  52. Taylor says

I don’t usually come back and comment on most recipes but this chicken was ABSOLUTELY AMAZING. Thank you so much for sharing!

    • Jen says

That means so much to me, thank you so much Taylor! I’m thrilled you loved it so much!

  53. Matt says

I plan to prepare this for my family for tonight’s dinner. Does the chicken need to be thawed before placing it in the crock pot?

    • Jen says

Hi Matt, yes I would thaw the chicken. Enjoy!

  54. Chrissy says

Wow, this recipe was delicious! The only substitution that I made was making my own salsa verde. I found a recipe on Pinterest for roasted tomatillo salsa verde and it was so easy to make. The best part is you can adjust the recipe to your liking, so if you want it spicy or mild or more tomato favor you make the necessary adjustments. I did my prep work the night before, making the salsa verde, cleaning the chicken, and measuring out the spices. So all I had to do was go home at lunch and put everything in the crock pot and dinner was ready when we got home from work. This recipe will be going in the regular rotation!

    • Jen says

Thank you so much Chrissy, I’m so happy you enjoyed it! I’m sure making your own salsa verde made it even more delicious! Great idea to prep everything the night beforehand too – love meals that can be thrown together with a little prep!

  55. KG says

I’d love to use this recipe in my Instant Pot, has anyone tried this? I’m sure you’d follow the same instructions but I’d want to figure out how long to cook it for. Can’t wait to try it 🙂

  56. Julie says

Holy crap. It’s not every day that I leave a review for a recipe, but I HAD to leave one for this! Made this earlier this week and my husband and I DEVOURED these! Topped them off with a healthy cabbage slaw, which took them over the top Thank you for this wonderful recipe. It is going to be a staple in our recipe collection!

    • Jen says

YAY! I’m so happy you DID comment and made my day! I am thrilled you and your husband loved these so much and your addition of cabbage slaw sounds fantastic!

  57. Krista says

Do you think this would be good with a can of fire roasted tomatoes?

  58. Sarah says

These look amazing, but I can’t use onions and salsa verde has onions. Could I substitute green enchilada sauce for the salsa verde?

  59. Meredith says

Hello!!! I just found this recipe and will make it for dinner tonight! a couple questions: how many chicken breasts would you say you use in this recipe? I don’t have a scale and I want To make sure my seasoning to chicken ratio is correct! Also do you think adding some canned tomatoes would take away from the salsa verde?

    • Jen says

Hi Meredith, I am so sorry I am just getting to your comment! I would have said 4 average side chicken breasts would equal around 2 pounds. I personally like it without tomatoes but I think it comes down to personal preference.

  60. Stacy says

Thank you so much for this recipe! It is delicious!!!
I cooked a little over 2 lbs of chicken in my Instant Pot. My chicken was a bit frozen still. I cooked on Manual for 14 minutes and then NPR. I removed the chicken and boiled down the juices. Served over baked sweet potatoes. So good!

    • Jen says

I’m so happy you loved it and THANK YOU so much for the instant pot instructions!!! And I love the idea of serving it over sweet potatoes – yum!

  61. susan says

Made this, Awesome flavor, used the 1/2 c honey, not too sweet, I could have just put my face in the pot and inhaled! Thank you!

    • Jen says

LOL! Thanks Susan, that’s the amount I use and love too! Thanks for taking the time to comment!

  62. Vivian redken says

To make it low carb, can I switch the honey with maple syrup?

    • Jen says

Hi Vivian, I would just use less honey as I’m afraid maple syrup would alter the taste.

  63. Laura says

Can this be made ahead of time, refrigerated, then reheated? Or does the texture suffer?

    • Jen says

Hi Laura, fresh is always better but you can definitely reheat it. For the best texture, I would shred into big chunks and let that sit in the juices overnight then reheat in the juices then shred. I hope that helps!

  64. Meagan says

    Is this recipe gluten free?

    • Jen says

Yes, the chicken recipe is gluten free, enjoy!

  65. Debi says

Another Carlsbad Cravings recipe to be filed under EXCELLENT!

    • Jen says

yesssssss! Thanks for making my day Debi!

  66. Holly says

This looks and sounds DELICIOUS! For the “hot sauce to taste,” do you use red or green hot sauce? Is there a particular brand you’d recommend?

  67. Nick says

Any suggestions on how to adapt this recipe for an instant pot

    • Jen says

Sorry I don’t have an instant pot Nick – good luck!

    • Frank says

I did this in my instant pot for 7 mins. Came out very tasty. I did have to add broth, almost a cup, to get to required liquid amount for my pot. I have the largest pot as well

      • Jen says

7 minutes is amazing! Thanks for the liquid tip as well Frank!

    • Al says

Use the instant pot slow cooker mode. Easy to use and turns out great.

  68. Jude says

Made this yesterday for tacos! It was a big hit!! Thanks for all your great recipes!

    • Jen says

You are so welcome Jude! I’m so happy you’re enjoying them!

  69. Ms. Brooke says

Fantastic!!! We loved it! Will make again. Super easy. Excited to make enchiladas version.

    • Jen says

Awesome! I’m so happy they were a hit, thank you!

  70. Karen says

You were correct! This recipe is awesome! I used a wee bit more honey (probably closer to half a cup) and the flavor was amazing.

Due to unforeseen circumstances, I had to put the cooked chicken into the fridge and waited two days to serve it to my family. But, I HAD to taste the chicken when I was putting it away and it tasted good, probably a “B” or “B+.” I was expecting great but it was acceptable. However, when I tasted it 2 days later, it was OUTSTANDING!!! The flavors really meld together wonderfully. Hubby is VERY happy! Thank you so much for another terrific recipe, Jen. BTW…I’ve been pouring over your T-Day recipes (50+ plus? I’m getting excited!) and am trying to select your very best (gotta make the family happy!) Hope your list shows YOUR favorites!

Again, thank you for all your outstanding recipes!

    • Jen says

Thank you so much Karen! That is awesome it was even better after sitting in the fridge – love that idea for taste and convenience. That is a great idea to add my favorites list to the Thanksgiving recipes – I’ll work on that, although it is going to be HARD :)!

  71. Lise says

    This was amazing!
Has anyone frozen the leftover chicken?

    • Jen says

I’m so happy you loved it! This chicken should freeze great!

  72. Melody says

I made this recipe recently and wow… one of the best crock pot chicken recipes I’ve ever had. It smelled heavenly then when I tasted it, I had to make myself stop spooning the juice. I followed the recipe exactly as listed except I subbed 1/3 cup agave for the honey. The sweetness was level was perfect.

Other reviewers have mentioned how good the leftovers are and I have to concur – I think it was even better after it had refrigerated. Because I have zero time in the evenings with a full-time job and a 2 year old, I put the leftover chicken into tortillas, topped with red enchilada sauce and cheese and baked. Yum! We all loved it.

Your Mexican Chicken is up next. I can’t wait. Thanks again!

    • Jen says

Hi Melody, thank you so much for taking the time to comment! I’m thrilled this is one of the best crock pot chicken recipes you’ve ever had! I love the idea of making red chicken enchiladas with this chicken – I’m going to have to try that next! I hope you love the Mexican Chicken and find many new recipes to love here!

  73. Katherine says

This recipe is amazing! I actually eat it with brown rice in lieu of the tortilla. It tastes amazing and is pretty healthy. Is there an instant pot version of this or have you tried it in an instant pot before?

    • Jen says

Thank you so much Katherine and I love it with brown rice too! I don’t have an instant pot version yet, but I am working on some Insta recipes coming soon!

  74. Helen Walker says

This looks so delicious! Can I use chicken thighs?

  75. Riley says

So I got a little too excited about this recipe and added all of the ingredients to my slow cooker including the hot sauce (a few dashes of Tapatio) and I just realized I was supposed to wait… How bad did I mess up? Is it going to be too hot? I guess I’ll find out in 7 hours!

    • Jen says

Hi Riley, I don’t think it will be hot – I always add the hot sauce – I personalty think it needs it. I just say not to add it to the end for those who don’t like any heat or so people can customize the heat and don’t get mad at me for it being too spicy 🙂 So if you like heat at all, I think you’ll be fine. Please let me know what you think!

  76. Lisa Long says

I made this last night in the Instant Pot. It was amazing! It cooked for 6 minutes, so about half an hour including pressurizing and depressurizing. Then I shredded the chicken and let it sit in the juices for about 25 -30 minutes. It was so good! Even my pickiest eater loved it! Thanks for another amazing recipe, Jen!

    • Jen says

You are so welcome Lisa! I LOVE how fast it cooks in the InstaPot and great call letting sit in the juices another 30 minutes!

    • Lisa says

Hi there. I’d love to make this in my instant pot but I’m new to it and haven’t used it. Can you help with how to do it, do I need to modify anything? Is it the pressure cooker setting? Thanks

  77. Stephanie says

Both my 5 year old and 1 year old gobbled these in tacos, no complaints. And for that, you are my hero!

    • Jen says

Wahoo! Love a dinner the whole family loves! Thanks so much Stephanie!

  78. Maria says

I started making this and realized I misread the ingredients and though you used regular salsa instead of salsa verde. I do not have any salsa verde on hand. Any suggestions on what I could use instead? I have regular salsa?

  79. Nancy Maloy says

This is totally amazing!! Just had this for dinner and used the smaller amount of honey. Very, very good flavor. I could see how you could make this taste a little different each time you make it. Next time going to add some cilantro and a tad more lime juice. Thank you so much for sharing this wonderful recipe.

    • Jen says

You are so welcome Nancy, I’m so happy you loved it so much!

  80. Megan says

Love it! So easy and a new staple for me. I added up nutrition facts (2T olive oil, 1/3 c honey) in case anyone else needed. If you divide into 4 servings, each is 434 calories, 32 g carbs, 9 fat, 71 protein. Pretty darn good!

    • Jen says

Thank you Megan, I’m so happy it was a winner! And thank you for the nutritional info!

  81. Debbie says

Absolutely delicious!!!! We made quesadillas and dipped in extra salsa Verde, guacamole, and sour cream. Definitely a keeper – thank you!

    • Jen says

Thank you so much Debbie and your quesadillas with all the goods has me drooling!

  82. Shannara Suazo says

Medium or high in a slow-cooker and for how long?? this looks soo good!

  83. Jenny says

I’m sorry if you’ve answered this before but can you please explain why you always put olive oil on your chicken before puting it in the crock pot? Is it to keep it from sticking or another reason? TIA!

    • Jen says

It protects it from heat and helps keeps it moist.

  84. Valerie says

I might be missing it but the first step says to add all ingredients to slow cooker except salsa. And then I never see where you add the salsa. But the pic shows it in the crock pot at the beginning. I’m confused! Lol

    • Jen says

Hi Valerie, it says to add all the ingredients except the hot sauce. You’ll want to add the hot sauce to taste at the end of cooking. Enjoy!

  85. Kristen says

This has become a favorite at our house. We just received an electric pressure cooker. Can this be done in that instead of a crock pot?

    • Jen says

Hi Kristen, I am so glad this has become a favorite! I have been working my way through a backlog of comments and see yours somehow got lost in the mix! I have not personally tried it but a reader commented on my Shredded Mexican Chicken that this is how she did it: “2 breasts (probably 2.25 pounds). Cooked on high pressure for 13 minutes then let release for 15 minutes. Shredded, added salsas and pressured for another 5. Foolproof.” I appreciate you and hope you’re well!

  86. Jeanette Thompson says

I made this last night. I used thighs instead because that’s what we prefer (and because I used thighs, I skipped the olive oil step). The meat shredded perfectly and it was a really tasty dish. Perfect for tacos. My husband really loved it.

I didn’t add hot sauce at the end so everyone could add their own to taste to their tacos and I think that ended up being a good move. My husband loves more than I do and I love more than my mother does, LOL.

I will definitely be making this again.

    • Jen says

Thanks so much Jeanette, I’m so happy you all loved them! Hot sauce is always a winning condiment at our house!

  87. Faith Maupin says

Awesome recipe! Made these yesterday – delicious! We love all of your recipes, and this one surely did not disappoint. Thank you

    • Jen says

You’re so welcome Faith! Thanks for making my recipes and taking the time to comment! xo

  88. Liza Andre says

By “hot sauce” you mean the salsa verde, correct? It is confusing since the image shows it added with the raw chicken at the beginning. So cook chicken with spices and add salsa verde at the very end before you pull it out? Just hoping it will be moist enough…

    • Jen says

Hi Liza, no by hot sauce I mean cayenne hot sauce like tapatio or Franks hot sauce – add to taste at the end.

  89. Christy Dukes says

I’ve made this recipe at least 2 dozen times and it is on the top of my list for having company over because it’s so easy and everyone loves it. My guests always ask for the recipe. Thanks for sharing!

    • Jen says

Thanks for your awesome comment Christy and for making my day! I’m so pleased this recipe is a repeat favorite!

  90. Patty says

I have made this delicious chicken several times, and my family loves it. It is so satisfying. I have a picky teen ager in the house, and he absolutely loves this dish! Thank you. I have to try another one of your recipes soon.

    • Jen says

Thank you for taking the time to comment Patty! I’m thrilled this crockpot chicken is a hit with everyone! I hope you have fun exploring my other recipes!

  91. Sherry says

Any suggestions for making this with pressure in the Instant Pot? This sounds delicious and right up my alley

    • Jen says

Hi Sherry, I’m sorry but I haven’t tried it yet in an instant pot. Good luck!

    • Wendy says

I use the meat setting for 10 mins then a soup setting for 30 and it’s perfect.

  92. Chastity says

This chicken is soooo good!! Your recipes are always so flavorful! This even got better the day after I made them. So quick and easy, thank you for all of your wonderful recipes!!

    • Jen says

Thank you so much for your kind comment Chastity! I so appreciate you sharing how much you’re enjoying my recipes!

  93. claudia m mitson says

Hi, love this recipe! And it seems pretty healthy to me. Is it possible to get the nutritional information?

  94. sarah says

This chicken is a go-to at our house. I make a big batch and freeze leftovers for another time. We use in tacos, enchiladas, burrito bowls, and over nachos. Kids and adults enjoy it. I don’t add any hot sauce while cooking, but my husband sometimes adds some at the table. Thanks for such a great and versatile recipe. I think your trick of rubbing the chicken with oil before cooking is genius, it really does make a difference.

    • Jen says

Hi Sarah, I’m thrilled this salsa verde chicken is your go to and I love hearing all the different ways you use it, thank you!

  95. Brianna says

I just wanted to say that this is my go-to recipe when guests come to visit. Every single time they ask for my recipe, and I have to send them this link. Spot on, thank you for making me look like a magical taco chef!

    • Jen says

Thanks so much Brianna! I’m honored this is a favorite go-to recipe!

  96. Jennifer says

I made this recipe exactly as stated. It was unbelievably juicy and packed with flavor. I absolutely love the combination of honey and lime, who knew? Thank you for sharing!

    • Jen says

You’re so welcome Jennifer. I’m so pleased it was a hit!

  97. Kristen says

This chicken is absolutely delicious! I recently had to go gluten and dairy free, and this chicken has so much flavor that I didn’t miss my usual taco toppings! I just topped with tomatoes, lettuce, and avocado, and the combo was perfect. This recipe is a keeper – thank you!

    • Jen says

You’re so welcome Kristen, I’m so pleased it’s new favorite!

  98. Cameron W says

I am so happy to finally be leaving a comment. This recipe is AMAZING and I suggest it to anyone when they’re asking me for an easy crock pot recipe. Its SO easy and so delicious. Always my go to. Making it tomorrow!

    • Jen says

Thanks so much for the awesome review Cameron! I love hearing it’s a repeat favorite!

  99. Melissa says

I have made this so many times over the last couple of years that I have lost count. I have varied the amount of honey or even left it out and never regretted any of the changes. I have made it the crock pot and I have made it in the Insta-Pot but we prefer the slow cooked method. I always use thighs and serve over rice with various sides like avocado and hot sauce. It’s so good and it is in the cooker right now, drool!

    • Jen says

Thank you for taking the time to leave a comment Melissa, I love hearing this salsa verde is a repeat family favorite!

  100. Brandie Farrell says

Absolutely delicious! Everyone loved it! I had 1.5 lbs chicken… cooked it in the instant pot for 15 minutes…quick release…shredded it…and simmer it In the sauce for another 10 min. Would definitely make this again!

    • Jen says

I’m so pleased it was a hit and thanks for he instant pot instructions!

  101. Amanda says

Absolutely delicious my husband and I couldn’t get enough. The robust flavors were perfectly paired with spice in this dish. Highly recommend…. my husband who usually only eats 2 tacos went for a full 5. If that doesn’t say weeknight win I don’t know what does.

    • Jen says

LOL! Love that this dish was 5 tacos approved! Thanks so much for the awesome review Amanda!

  102. Desyree Price says

Hello, I have this marinating in my fridge right now. I was wondering if it’s possible to make this in a instant pot? I work 10 hours a day and I’m worried about over cooking the chicken while I’m gone. Thank you!

    • Jen says

I have not personally tried it but a reader commented this is how she did it: Cooked on high pressure for 13 minutes then let release for 15 minutes. Shredded and let it simmer in the sauce for another 10 minutes.

  103. Kaitlyn says

LOVE THIS!! Been making this for years and figured it’s time to leave a positive review. This chicken is sooo flavorful and easy. I usually make tacos the first night and then use the leftover chicken and sauce for a salad. The sauce makes a perfect dressing! I’ve brought this to family parties and pot lucks and always get asked to share the recipe!

    • Jen says

Thanks so much for taking the time to comment Kaitlyn, I love hearing this has been a favorite for years! Brilliant idea about using the sauce as salad dressing – I can’t wait to try that, thank you!

  104. Ekta Kumar says

Hello! If I don’t want to use salsa can I use something else? Thank you

  105. Kam says

You never fail me! This was excellent. I made it exactly as stated. I wanted to drink the sauce 😉 Thank you!

    • Jen says

I love hearing that, thank you Kam!

  106. Jose says

Any advice for my chicken coming out a little dry?

    • Jen says

Hi Jose, dry chicken just means it was cooked too long. Next time reduce the cooking time, but every time it will be different due to different size chicken. Good luck!

  107. Amanda says

Instead of flatbread can I brush flour tortillas with the sauce and hang them in the racks in the oven????

    • Jen says

Absolutely! You can also use any of your favorite taco shells. Enjoy!

    • Judy says

Wow wow wow! This recipe was everything!!! Sooooo delicious I had to force myself to stop eating. My two picky kids devoured it! It’s a new favorite!

      • Jen says

I love hearing that, thanks so much Judy!

  108. Zach says

I just made this tonight, it was great! After shredding the chicken and cooking it a bit more in all the sauce, i separated the chicken out and reduced the sauce by probably more than half on the stove and poured it back on the chicken to keep warm in the slow cooker. Very juicy tacos but it was delicious.

I have maybe half a cup of sauce and some bits of shredded chicken left and I plan to use them to cook my rice tomorrow night for a rice & beans bowl, should be great.

    • Jen says

Hi Zach! Sorry this comment got lost in a backlog, but thank you so much for letting me know how it went! I am so glad you liked it and I hope your rice bowl was delish!

  109. Scott McCann says

I love almost everything you make but this is a soup / chili recipe. Who puts soup in a tort????

    • Jen says

I am very confused – this is a slow cooker shredded chicken recipe – not a soup/chili.

  110. Grace says

Can bone in thigh/leg be used … maybe partially cook chicken and remove bones . At this point add all spices and continue cooking ?

    • Jen says

Hi Grace, you can absolutely do it that way, or just cook it all together, shred the chicken when it’s time and then make sure to let it soak for the 3o minutes.

  111. Barbara says

Do you have the nutrition information for this recipe?

  112. Maileni says

Will using frozen chicken be ok

    • Jen says

For safety reasons, you should thaw the chicken before adding the crockpot, then it will work great.

  113. Stephanie says

OMG so darn good, what a great combo of flavors! My kids were digging forks into the shredded chicken in the slow cooker before I could get it in the tacos LOL.

    • Jen says

That’s what I like to hear, thanks Stephanie!

  114. Linda says

Absolutely delicious. You’re recipes are always a winner. Thank you.
    Best wishes far Bonnie Scotland

    • Jen says

Thank you Linda all the way from Scotland! I’m honored you’re enjoying my recipes!

  115. Nora says

My family and I loved this! My son wanted to know why I didn’t make it sooner!

    • Jen says

      I’m so glad it’s a new favorite!

      • Claire Belles says

Can I prep this the night before to marinate on the fridge?

        • Jen says

          Yes, that would work great!

  116. Valerie says

Hi! I was wondering if I could switch out the honey for brown sugar. Thank you!

    • Jen says

Yes, but it will taste like brown sugar with more molasses notes instead of more mild honey with fruit notes.

  117. Julie says

I made this delicious super easy chicken dinner. So very good!
I paired mine with coconut lime rice. My husband who is very picky enjoyed this dinner. thanks!

    • Jen says

Hi Julie! I am happy to hear that both you and your husband enjoyed it! Pairing it with coconut lime rice sounds delicious! Thank you for taking the time to comment!

  118. Ranjita says

Anyone make this with beef? I think I will use a 2lb chuck roast, maybe rub some of the dry spices on it, sear it in my instant pot with some oil, add the other ingredients and then use the slower cooker function. Any suggestions?

    • Jen says

I think that sounds perfect, please let me know how it turns out!

  119. Deb McAlpine says

The recipe sounds delicious and I will be giving it a try. You advised reheating large batches in the slow cooker on another day. You should never reheat food in a slow cooker due to food safety issues. The food does not reach proper temperature fast enough and can be a breeding ground for bacteria.

    • Jen says

Is the honey necessary? Has anyone made it without?

    • Jen says

Hi Liz! I find that it balances out the spices and adds the right touch of sweetness!

Made these tonight. Seriously the best chicken tacos I’ve ever had definitively going to be in the weekly rotation.

Thanks Chrisanna! I am so thrilled they were such a hit!

Yes! You should be safe to keep it on warm for up to 2 hours.

My favorite recipe ever!! I’ve made this about 10 times now. Fresh lime juice is best, and I never end up needing the whole amount. I leave it in the juice after its shredded for as long as possible! Good on rice, in a taco, or added into chili.

    • Jen says

Wow! I am so glad it has been a go-to for you!

I love this recipe. I always make extra so that I can use the leftovers for a taco salad later in the week. I also like to use the 505 Southwestern Salsa Verde.

Genius! I’m so glad that it’s been a hit!

One of my favs I’ve even swapped the salsa verde for regular jarred salsa it’s amazing I use it most often for burrito bowls adding black beans and corn near the end

Yum! I’m so glad it has become such a favorite!
