This Lasagna Soup Recipe can’t get any easier!

I looooove Italian food or even anything resembling Italian food from my Italian Vegetable Soup, Tomato Basil Soup, Million Dollar Baked PenneMillion Dollar Macaroni and Cheese CasseroleZuppa Toscana Soup, Minestrone Soup and everything in between!  And while lasagna is technically Italian, it has to be one of America’s favorite foods – and one of my favorite foods! For being a favorite, however, I hardly ever make traditional lasagna – so sad. I just can’t get into the time-consuming, tedious, layering.

But now, I am thrilled to introduce my “can’t-get-any-easier,” One Pot Lasagna Soup!  I made this soup twice in a week because I am SO in love with it-and so is my very honest critic, Patrick, who lived in Italy for two years. Sometimes he is a little too honest, but he tells me it’s a good thing, because then I know when he really, really loves something. So as he sat spooning this Lasagna Soup into his mouth, repeating “So good, you nailed it. Insane, taste just like lasagna…,” I knew it was going in my back pocket of easy, “Patrick approved”, delicious recipes.

A pot of Lasagna Soup in a white bowl with cheese served with a ladle.

And it belongs in your back pocket too for all those busy nights when everyone is starting to get hangry (AKA hungry and tired) or simply any time you want to devour something extraordinary.

Why you’ll love this Lasagna Soup

  • EASY ONE POT RECIPE. No tedious layering – dump the ingredients together and simmer!
  • TASTES LIKE LASAGNA. Lasagna noodles are cradled in a beefy marinara broth, then cradled with Parmesan, mozzarella, and ricotta.
  • ADEPTLY SEASONED. Onions, garlic, red pepper flakes, Italian seasonings, and a splash of balsamic create a symphony of flavors.
  • SIMMERED TO PERFECTION. The noodles emerge delightfully al dente.
  • CUSTOMIZABLE. You don’t have to use lasagna noodles! Use whatever pasta you have on hand, add veggies, use turkey or chicken sausage, go light on the cheeses or pile it on, etc.

What you’ll need for Easy Lasagna Soup

  • Lasagna Noodles: Use regular lasagna noodles -NOT no boil lasagna noodles. Break the noodles into 1-2” pieces – they do not have to be perfect!
  • Beef: Use lean ground beef, or for extra flavor, use half beef, half Italian sausage.
  • Onion: Use one yellow onion diced small so the pieces soften quickly.
  • Garlic: I use 5 garlic cloves but you can use more or less depending on your garlic love.
  • Marinara sauce: Use one 24-ounce jar of your favorite marinara sauce. Use Prego as pictured, or my new favorite Rao’s brand which you can purchase on Amazon HERE.
  • Crushed tomatoes: I recommend San Marzano tomatoes from the brands San Marzano, Cento and Muir Glen. They are highly prized for their sweet, intense tomatoey flavor and lower acidity.
  • Tomato paste: Tip! Freeze leftover tomato paste by the tablespoon wrapped in parchment paper.
  • Chicken broth: Use low sodium chicken broth so the soup isn’t too salty.
  • Herbs and spices: This Lasagna Soup is seasoned to perfection with dried basil, thyme, oregano, and parsley, salt and a bay leaf.
  • Red pepper flakes: A pinch of red pepper flakes adds an extra kick but will not make the soup spicy.
  • Heavy cream: This mellows the acidity while adding a subtle creaminess and thickness to the soup.

Lasagna Soup Variations

  • Pasta: Any small pasta shape will work.
  • Bouillon broth: Use water plus chicken bouillon or chicken base to equal 8-10 cups broth. Omit the salt, then add salt to taste. You may also use vegetable broth but it is not as flavorful.
  • Turkey sausage: Swap the lean ground beef for turkey or chicken sausage. I recommend adding a tablespoon of beef bouillon, reducing the salt, then salting to taste.
  • Italian sausage: Use all Italian sausage for extra flavor. Use hot Italian sausage for a kick!
  • Onion: Fresh is best, but you may substitute with 1 ½ teaspoons onion powder.
  • Garlic: You may substitute with 1 ½ teaspoons garlic powder.
  • Add vegetables: Carrots, celery, bell peppers, zucchini, green beans, spinach, etc. would all be tasty.

Best pot for soup

A large, 7-9 quart Dutch oven is ideal for making soup due to its capacity, heat distribution, heat retention, versatility, and durability. Its size allows for cooking large quantities of soup, while its even heat distribution ensures consistent cooking throughout. The cast iron is extremely durable while its enameled finish makes for easy cleanup.

My recommendation: Le Creuset offers an expensive Dutch oven (pictured in all my soup recipes) or a less expensive Chef’s oven with sloped sides (also great for soups). Alternatively, there are several less expensive options on Amazon like this highly rated one from Lodge.

How to Make Lasagna Soup

To make this One Pot Lasagna Soup, simply brown your beef (or half Italian sausage if you like), onions and garlic…

Then add all your remaining ingredients – Prego Traditional Italian Sauce, crushed tomatoes, chicken broth, spices…

Showing how to make Lasagna Soup adding Prego sauce.

And lasagna noodles!

Now the list of ingredients might seem long, but you are just dumping and running as the sauce simmers, cooking the noodles, and infusing the whole soup with Prego Italian goodness that smells nothing less than heavenly! Prego not only elevates this One Pot Lasagna Soup and can be the answer to your weeknight dinner dilemma without sacrificing any flavor! Prego boasts rich flavor from real ingredients – no more bland, boring dinners!

Finally, top your soup with ricotta, mozzarella and Parmesan – as little or as MUCH as you like and start slurping and shoveling, then repeat.

Often.

How to serve Lasagne Soup

Serving Lasagna Soup is where the fun is at! Ladle the soup into bowls, then top with desired amount of mozzarella, Parmesan and a dollop of ricotta. Stir the cheeses into the hot soup to melt and mingle with the noodles. Finish it off with a side of Caesar Salad and garlic bread!

Lasagna Soup Recipe Easy storage

Storage: Store Lasagna Soup in an airtight container in the refrigerator for 4-5 days.

To reheat: You may need to add a splash of broth before reheating. Reheat large batches on the stove over medium heat, or microwave for 90 seconds, stir, then continue to microwave for 20-second intervals, if needed.

Can you freeze lasagna soup?

I do not recommend freezing Lasagna Soup because the noodles can become mushy once thawed. If you would like to freeze the soup, omit the noodles and reduce the broth. When ready to enjoy, cook the lasagna noodles separately and add them to the thawed, warmed soup.

  2. Stacey @ Stacey Homemaker says

Yep, I’m drooling. I LOVE lasagna, but I never make it because it’s so much work! Dump and go recipes are the best, I can’t wait to try this, it looks so simple! I just picked up some lasagna rice noodles yesterday….yaaaasss!

    • Jen says

I am right there with you Stacey – I never made lasagna very much either UNTIL now! Sounds like you are all ready to go with your lasagna noodles – yay! I hope you love it!! Thank you!

      • Lori Ann says

  3. Dee Dee says

Wondering if the lasagna soup recipe can be cooked in a crock pot? Basically just dump all the ingredients in, and set to cook for 8-10 hours? Will try the recipe none the less….

    • Jen says

Hi Dee Dee! I have never made this in the crockpot but I would suggest browning the meat then adding it to the crockpot with all of the other ingredients except the noodles. Noodles can be a little funny in the crockpot so you can either turn the heat to HIGH and add the noodles the last 30+ minutes of cooking and simmer until tender or cook the noodles separately then add to the crock pot. Hope this helps!

  4. Laura says

I made this last night and while it was very yummy, the consistency was much more runnier than your pictures. I followed the recipe to a “t” minus the extra chicken broth at the end because it was too runny. Any ideas? I’m definitely going to make this again but use less chicken broth.

    • Jen says

Hi Laura, So happy you enjoyed the soup! To make it less runny you can simmer it longer or at a higher heat. You can also stir more cheese directly into the soup and not just as garnish – this will definitely thicken it up. Hope this helps!

      • Laura says

I did add the cheese to thicken it up and letting it cook longer would have helped, but I was hungry and just couldn’t wait 🙂 Again, thanks for providing the recipe and I will definitely follow you to check out your other recipes.

        • Jen says

You are so welcome, and I totally get the hungry thing! I hope you find more recipes here to enjoy!

I don’t have a Dutch oven. Can I just use a regular soup kettle?

    • Jen says

Certainly! as long as it is large, it will work great! Enjoy!

  6. Lindsey says

  7. Stacy says

I found you through a link on Foodiecrush – this looks amazing! I’ll definitely be looking through your archives for others. One question though – how big is your Dutch oven? Mine is 7 1/4 and I can’t decide if that would be way too big for this recipe.

    • Jen says

Hi Stacy, welcome! I am so happy you found my site and I hope you find more to love here! My Dutch oven is 4″ deep an 8 ” wide. I have a larger stock pot though that I have also made it in as well, so as long as its not too small – you should be good to go! Enjoy!

  9. Seanna says

What kind of lasagna noodles do you use? I have a recipe for regular lasagna that calls for no-cook noodles, but was wondering if you used regular dry noodles. Thanks in advance. 🙂

Hi Seanna, great question! I use the regular dry lasagna noodles that need to be cooked. Hope this helps, enjoy!

      • Seanna says

Thanks!!!! I can hardly wait to try this!!!

I made this soup a while back and it was delicious! My kids scarfed it up and I enjoyed every bite! Yum!

    • Jen says

Hi Anita, so happy your kids “scarfed” it up – that’s when you know its good, thank you! and thank you for reminding me of the word “scarfed” – it is SO descriptive, I am going to have to use it in my next post 🙂 Happy New Year!

  12. Kelly says

Thank you for the great recipe! Everyone enjoyed it and I loved how I had everything in the pantry, including a third of a box of lasagna noodles (perfect use for them since it’s not quite enough for a proper lasagna)! I threw in a bag of prewashed spinach right before I served it because my kids are likely to eat more of it when it tastes like lasagna 😉

    • Jen says

You are so welcome Kelly, thank you for letting me know how much your family enjoyed it – yay! And I love your addition of spinach at the end!

  13. Rachel says

Made this for dinner last night and it was delicious! It was all the wonderful parts of lasagna that normally fall apart in the bowl anyways. A great way to thicken this up is to add an extra sheet of noodles, extra tomato paste, and let it simmer a little bit longer. It thickens right up! We also added some ricotta straight into the mix and it tasted great. Thanks so much for this recipe….. Everyone loved it!

    • Jen says

Hi Rachel, I am so happy everyone loved it and adding ricotta straight to it sounds divine!

  14. Heidi says

I made this tonight and it was amazing! The perfect meal for a cold, rainy day. I added about 3oz. of fresh spinach with the heavy cream at the end because I was too lazy to make a spinach salad. My husband had seconds (licked his bowl) and was effusive with his compliments. I’m going to freeze 4 cups of it for another meal for two next month. Thanks so much for sharing a new family favorite!

    • Jen says

Hi Heidi, I am thrilled you loved this so much and I love your addition of spinach at the end – that sounds absolutely divine and wAY easier than a salad 🙂 Thank you so much for brightening my day with your kind comment!

    • Elizabeth says

How did it come out from the freezer? I am worried the noodles will just be mush.

  15. Tammie says

This was good but I think I was hoping for a meatier flavor than tomato-ey. Maybe I should’ve used Italian sausage instead. I loved the dump and go aspect and it really did feel like a comfort food meal. I am pretty sure I will make it again!

    • Jen says

Hi Tammie, I’m glad you enjoyed this comfort food! Italian sausage would be delicious and/or you can always use more meat!

      • Paul says

How about adding beef broth instead of chicken? Maybe that would help with the meaty flavor?

        • Jen says

Beef broth has a pretty strong flavor so I prefer chicken but if you try it, I’d love to hear what you think!

  16. Lysa says

This looks really yummy! I wonder how it would work with a vegetable broth instead of a chicken broth (as my husband and I are vegetarians)? We have a hamburger substitute that we use in our lasagna so that part is covered. This recipe looks like it could be really good. I’ll have to have my husband cook it (he’s the chef in the family lol) with the vegetable broth and our hamburger substitute sometime.

    • Jen says

Hi Lysa, I think it would work just fine. Do you use chicken bouillon? Adding some bouillon would definitely add some nice flavor to the vegetable broth as well. Can’t wait to hear how it goes! Enjoy!

    • Christy says

I’m making a vegetarian version right now! I used lost of mushrooms that I put in the food processor so the kids don’t have a clue. Also added finely shredded carrot, and celery. Will update after dinner!

      • Jen says

Hi Christy, that sounds absolutely delicious! I love that you are adding so many veggies – can’t wait to hear how the kids liked it!

  17. Angelica says

I made this recipe last night and my 14 year old tried to eat the whole pot. I was able to save some for lunches and gave a sample to a coworker and she just asked for the recipe.

    • Jen says

I LOL when I read your 14 year old tried to eat the whole pot – LOVE it! haha I am so happy your family (and your co-worker!) enjoyed the recipe! Thank you so much Angelica!

  18. Melanie says

We like lasagna, but it is so tedious to make. This was a perfect variation! My 10-year-old informed me that it was, “Scrumdiddlyumptious” and that he wishes he could have this for dinner every night! Thank you for sharing with us.

    • Jen says

You are speaking my language- Love lasagna but hate the layering! I am so happy you loved this so much – especially your 10-year-old – what a cutie! Thank you for making my day and please tell your son thank you for his “Scrumdiddlyumptious” compliment!

  19. Maria McNamara says

Put on my pinterest board for next weekend..My question is the sugar just to cut the acidity of the tomato? I am hoping I can leave it out due to being diabetic .

    • Jen says

Hi Maria, you can definitely leave it out and add it to taste at the end. Enjoy!

  20. Christina Lyle says

Can you freeze the one pot lasagna ?.
It looks great and is on my menu to make it this week …
    Thank you for sharing

    • Jen says

HI Christina! I have never frozen this soup myself as it has always gone very quickly 🙂 but from my experience in freezing, pasta can become mushy, so I would freeze it without the pasta or cream and cheeses. If you end up trying it another way with success, please let me know!

  21. Bettie Martin says

The One Pot Lasagna Soup was a huge hit with the whole family. We’re eating better, exercising and enjoying life 5 days a week. One night per is clean out the leftovers night and one night is a fun recipe that we’ve never tried. I’m thankful that our fun recipe night was a winner. Thank You.

  22. Brooke says

This was such a good recipe!! I only had one issue… My noodles were hard to break into nice neat little pieces like yours. I used fresh basil & Jovial gluten free noodles and they tasted wonderful in your soup.

    • Jen says

Hi Brooke, I am so happy you enjoyed this soup and were able to make it gluten free! I am guessing the different type of noodle had something to do with breaking them nicely but I’m glad that doesn’t affect the taste! 🙂

  23. Donna says

  27. Kristin says

Is it possible to make this in a crockpot?

    • Jen says

Hi Kristin, if you make this in the crockpot, I would brown the meat and onions first and then you can simmer the sauce on low but I would not cook the noodles in the crockpot – I think their texture wouldn’t turn out quite right – but you could add cooked noodles to rest of the ingredients in the crockpot. Hope this helps!

  28. Tara says

Wow, that looks so easy and so cheesy, I just love it!! Your recipes are always fantastic and you have done it again!!

    • Jen says

You are the sweetest, Tara, thank you so much! I hope you are able to try it and love it!

  29. Paula says

I made this tonight- wonderful! I used whole wheat lasagna noodles (took about 10 minutes extra to cook) and 8 cups broth total, thickened with a cornstarch/broth slurry rather than the heavy cream option. Thank you for the recipe!

    • Jen says

You are so welcome Paula! I am so happy you enjoyed it and were able to adapt it using whole wheat noodles! Thank you!!

  30. Serene says

Hello! I was wondering if I could used Ground Turkey instead of ground beef. Do you think that would be fine?
    Thank you!!

    • Jen says

Hi Serene, I think it comes down to personal preference. If you like ground turkey, then go for it 🙂

      • Serene says

I LOVED IT!! It was AMAZING, and SO easy to make!!
I ended up using ground beef becasue I thought that that would be better!!
I will definitely be making this again!! Thank you so much for sharing!

        • Jen says

You are so welcome Serene, I am thrilled you loved it and found it easy to make! Have a wonderful weekend!!

You are so welcome Shonta, so happy your family enjoyed it and you found it so easy! Thank you so much!

  32. Nicolee says

I made this yesterday and it was so very, very good and easy too! I used the heavy cream and I think it made it so much more creamy and yummy! The only problem I had was breaking the noodles as they just crumbled no matter how careful I was so I soaked them in some warm water for just a few minutes and then I was able to break them in nice 1-2″ pieces. Is there a trick to breaking the hard noodles? Anyway, we loved this recipe and I know we’ll make it many, many times. Thank you so much for sharing!

    • Jen says

Hi Nicole! I am so happy you all loved this soup and found it easy! As far as the noodles go – I wish I had better advice for you! My only thinking is to try and snap them larger than you want them and they will naturally break smaller – so aim for a 3″ breaking point and it will break before that. You could also try scoring the noodles and then using a ruler to snap them – but that seems like too much work. Sorry I can’t be of more help – mine just broke “nicely” 🙂

      • Nicolee says

Hi Jen! Thanks for the suggestion on the noodles and I will try that next time. The soaking them for a few minutes worked great but that was just an extra step so I’ll try your suggestion the next time. Either way, the soup is delicious and we’ll make it many times. Can’t wait to try some of your other recipes 🙂 Thanks again, Nicolee

        • Jen says

You are so sweet! I hope that helps eliminate an extra step 🙂 I am excited for you to try some more of my recipes – I hope you love them just as much as this soup!

  33. Ashley says

When you say half Italian sausage do you mean half and half with the ground beef or just 1/2 lb of Italian sausage by itself?

    • Jen says

Hi Ashley! I mean 1/2 pound Italian sausage and 1/2 pound lean ground beef. Hope that helps!

  34. Angela says

Hi I was just wondering how much ricotta is needed and if it’s needed in the soup itself or per bowl

    • Jen says

Hi Angela, no ricotta is needed in the actual soup but is used as a garnish so the amount is up to you – but I would say a total of 8 oz. then divided among servings. Enjoy!

  35. Marla says

I just made this! Unbelievable! I did add some veggies (zucchini, mushrooms, peppers and onions) and roasted them up in the pan …and I used bow tie noodles and used a regular big pot! It was so good! Can’t wait to check some other recipes!

Hi Marla, you addition of roasted veggies sounds INCREDIBLE! I am so happy you loved this recipe – thank you so much for letting me know! I think you would especially love my Basil Parmesan Italian Soup 🙂 I hope you have fun exploring and trying new recipes!

    • Jen says

Hi Jen, so happy you enjoyed it, thanks so much for sharing!

  36. Heather says

I could not get this to thicken up. 🙁 I only used the 6 cups of chicken broth and then ended up adding corn starch with the heavy cream and let it simmer for almost an hour trying to thicken it up.

It was very good, just a bit too soupy. Do you have any suggestions? How much of the cheeses do you generally use?

    • Jen says

Hi Heather, I am sorry you couldn’t get it to thicken, that is so odd! If you let cornstarch simmer for too long it can thicken and then thin again, otherwise, just simmering for an hour without the cornstarch should have been enough for it to simmer down. Next time you could try sprinkling the meat with 1/4 cup flour and cooking for 2 minutes and then adding the garlic and proceeding with the recipe as outlined. Hope this helps!

  37. April says

Oh. My. Goodness!!!! This was absolutely delicious! My husband is a Police Officer on 2pm-10pm shift, so I have to cook our meals around 1030-11am every day he works, I also homeschool my two teenage sons and my 9yr old son, I did double the entire recipe, except for the heavy cream I only used 1/2 cup, and cooked on low for about 49 minutes to get it super thick. Even with the little amount of cream it still thickened pretty well. This lasagna soup was super easy to make and really filling. I need more meals like this in my life for sure. We had this for lunch today and will also have again this evening. My husband will have some this evening also for his dinner. I served this with garlic bread, a salad and fresh fruit for dessert. I will definitely be trying more of your one pot meals. Thanks so much.

    • Jen says

Hi April, I loved your comment, thank you! You sound like a super busy, amazing woman and I am so happy this soup could help make your life a little easier 🙂 I hope you have fun trying more of my one pot meals and I highly recommend the slow cooker meals- so easy (and hopefully yummy as well)!

  38. Jamie Manzano says

  39. MC says

I tried this (using real marinara, not Prego) and it came out pretty good. I did add some extra fresh thyme while cooking.

  40. Jo says

OMG…this was the bomb! LOVED it! I am trying to refrain myself from making it every week…lol. I love your recipes & the soups. Its coming into winter here so I am loving these comfort foods.

We came home hungry & cold after being out all day, I had the sauce simmering in the slow cooker, was not sure how it would turn out but that was the best comfort food and just what we needed, my husband & I could not stop raving about it.

I used vegetarian mince in mine & would definitely take your advice on pre-cooking the pasta first for the slow cooker, I did a lot of separating of the pasta but that does not matter, it was therapeutic…lol.

    • Jen says

Hi Jo, You are so sweet, thank you for your compliments! I love hearing that you are enjoying my recipes – yay! I am so happy you enjoyed this soup enough to want to make it every week 🙂 I hope you continue to enjoy my recipes and stay warm!

  41. Brooke says

Delicious! Thank you for a wonderful recipe!

    • Jen says

You are so welcome! Thank you Brooke!

  42. Samantha says

I LOVE this recipe, my family eats it all in one night. We have family in town and I would like to make it for everyone. Do you know the ingredient amounts to serve for 8 people? I assume adults would eat a bit more than the kids. I would also think doubling it would be too much, but I’m not sure. Help!

    • Jen says

Hi Samantha, I am so happy to hear your family loves this recipe! As far as how much to make – I am wondering the size of your family if they eat it almost all in one night? If you have equal to your family in town than doubling it might be the way to go otherwise- what about 1 1/2 the recipe?

  43. Lori says

This recipe is fantastic. I made it while on vacation because it was raining and cold. Everyone loved it. I have family that can’t eat dairy so I left out the cream and cheese for theirs. I will definitely make this again. Thanks!

    • Jen says

Thank you so much Lori, what a fun meal to make on vacation! I am so glad it was easily adaptable so everyone could enjoy it!

    • Kathy says

Lori we found that Tofu mozzerrella makes a good cheese substitute for a vegetarian version we make on occasion when Our friend who is lactose intolerent comes over

  44. Kathy says

except that it is a soup the recipe reminds me very much of my friends one pan Lasagne she uses bowtie pasta and less liquid

    • Jen says

Nice! hope you love this version just as much!

  45. Bianca says

This sounds amazing and I can’t wait to try it! Just wondering if the balsamic vinegar is a must? Not something myself or my partner use so I don’t want to buy a bottle just for this if it’s not something that needs to go in this dish.

    • Jen says

Hi Bianca, no the balsamic vinegar it is not a “must”- it will still taste great without it. Enjoy!

  46. Bianca says

Ended up making it tonight and it was amazing! Will be making this again for sure!

    • Jen says

Awesome Bianca, so happy you loved it! Thank you!

  47. Marisol says

Oh my goodness! This was delicious and SUPER easy to make! With two toddlers, it is hard to find recipes for the whole family that they like. I made this tonight for dinner and it will definitely be one of my go-to recipes from now on! Thank you for sharing it!

    • Jen says

You are so welcome Marisol, I am so happy you found it easy and delicious and that everyone loved it! Thank you so much!!

  48. Carrie says

So easy and with everyday staples! It is simmering now in my Dutch oven. And it smells wonderful too. Another one pot wonder…i love it! Thanks you for the recipe.

    • Jen says

You are so welcome Carrie, so happy you are enjoying the “one pot wonder” :)! Thank you!!

      • Carrie says

Since we made this Friday and it made so much (only two adults and 3 year old)I added more broth to leftovers yesterday and left it in slow cooker on low for afternoon. We have been busy this weekend with outside work and it has been feeding the three of us perfectly when we are ready. Plan on having more this afternoon. It’s a go too recipe for us now. Thanks again and have already shared recipe with friends. It is just like lasagna but simple and better, especially for leftovers. I served it with ricotta, parmesan and garlic toast. Perfect!

        • Jen says

Hi Carrie, I am so happy to hear this the soup that keeps on giving/feeding and is a new go-to recipe! What a great idea to put the leftovers in the slow cooker so you all can eat as needed. Thank you for sharing with friends! Hope your yard work is coming along 🙂

  49. Amy K says

We made this for dinner tonight and it turned out great. We wanted garlic bread with it but I came up with the idea to use garlic croutons on top and it was delicious!

    • Jen says

Hi Amy, I am so happy you enjoyed this and I love your idea of garlic croutons! I actually did something similar in a Philly Cheesesteak Soup I’m posting – great minds think alike :)!

  50. Laura says

Made this in my crocpot and added the corn stratch. AMAZING! Could not get enough and it was a big hit with our kids!

    • Jen says

YAY! Love it when a recipe is a big hit with the kids and I’m so happy it worked in your crockpot! Thanks Laura!

  51. Joann says

Thank you so much for posting! Made this tonight for dinner & it was the bomb-diggity! My two teenage daughters loved it & the hubs kept saying, “this is very good”! It’ll definitely become a part of our regular rotation! Thank you again!

    • Jen says

Hi Joann, I am thrilled this was the “bomb diggity” 🙂 and that everyone loved it! I love knowing it will be repeated often at your house 🙂 Thank you!

  52. Melissa says

Great recipe! My husband and I really liked it. I can’t eat the cheeses that are usually in lasagna so this was a great way for me to still get the lasagna taste. My husband just added cheese to his bowl and it worked well for both of us! -Melissa

    • Jen says

Hi Melissa, sorry I am just getting back to you as I had surgery this week and have been totally out of it 🙂 but THANK YOU so much for your comment! I am thrilled this version of lasagna works for both of you and you can still have a taste and your husband an still have the cheese 🙂

  53. Borkai says

OMG! Awesome all ’round! I REALLY don’t like layering, so this worked well. Flavor and everything else was just great. Thanks so much for this! Next week, the White Chicken one!

    • Jen says

Hi Borkai, sorry for my delayed response as I had surgery this week and have been totally out of it but thank you so much for taking the time to comment! I am so happy this was such a hit and I am excited for you to make the White Chicken Lasagna version too! Can’t wait to hear what you think!

  54. Julie says

I see where it says to heat your Dutch oven will it work on a regular stove top?

    • Jen says

Yes! The Dutch oven refers to thee type of pot but used on the stove. You use either a Dutch oven or a large soup pot on the stove. Enjoy!

  55. Brianne says

I was wondering if the chicken broth could be substituted for beef broth? My boyfriend is allergic to poultry. Thank you!

    • Jen says

Hi Brianne, I think beef broth might be a little strong – what about a combo of vegetable broth and beef broth or just vegetable broth?

  56. Jenny says

Thank you for this recipe! I made it tonight and I can’t wait to make it again! It’s amazing. I did add some chopped zucchini and carrots for some veggies. Thanks again!

    • Jen says

You are so welcome Jenny, I am so happy it was a hit and your additions of zucchini and carrots sound divine!

  57. Tonya says

Absolutely delicious!!! Funny thing though…when I told my husband what we were having for dinner & that in the first paragraph of the recipe it said, ” you might never go back to traditional lasagna again”, he said, “yeah right…blah, blah, blah”. Well, guess who loved it so much that he stuffed himself miserable & even asked me to prepare him some to take for lunch tomorrow.?.?.

    • Jen says

hahaha- I am so glad this made a believer out of your skeptical husband and that he’s eating his words and the lasagna soup 🙂 Thanks Tonya!

  58. Ria says

Hey! How lean of beef do you recommend? Also do you only cook the beef until the outside is browned or till no pink. My meat was chewy when I made this so I’m wondering where I went off path. I also used a large skillet instead of a Dutch oven since I didn’t have one. Thanks!

    • Jen says

Hi Ria, I use 85% lean ground beef. Your beef should be completely browned by the time the onion is done. As far as it not being chewy, using quality meat is key as well as not overstirring/manipulating the meat. Hope this helps!

  59. Rebecca says

I’ve made this a few times, and it always turns out absolutely delicious!!

    • Jen says

Awesome Rebecca, I am so glad it is such a hit at your house! Thank you!

  60. Lacy says

Do you think I could leave out the crushed tomatoes and use more of the paste? I love everything tomoatoey except actual tomato chunks! Lol The texture is a big no no from me and I don’t want to have to pick around them to enjoy my soup! lol

    • Jen says

Hi Lacy! They definitely add tomato flavor so I would puree them instead. Hope that helps!

  61. Ashlie says

I’m thinking of adding zucchini to get more veggies. How would you recommend I do that so they don’t get overcooked or make it watery?

    • Jen says

Hi Ashlie! I would saute them with the garlic for 30 seconds then simmer with the soup just make sure they aren’t sliced super thin – hope this helps, enjoy!

  62. Liz says

Any thoughts on if this would freeze well? There is just two of us and it can be so hard to make a full batch of soup to eat at once since it takes us forever.

    • Jen says

Hi Liz, I am afraid the noodles would get mushy if frozen so I would just half the recipe or cook the noodles separate and freeze the part of the soup without the noodles. Hope this helps!

  63. Megan says

Omg! This was so good and so easy to make!

    • Jen says

Awesome! So happy you liked it Megan, thank you!

  64. jan says

Thank you for sharing your amazing recipe. I made it last night for my family and they LOVED it!
Looking forward making more soups this winter.

    • Jen says

You are so welcome! I love soups this time of year so my blog is packed with them! I hope you find more family favorites! Thanks Jan!

  65. Rob says

Sitting here at the dinner table stuffed to the max. This was an amazing dish! I liked it so much I felt like I needed to check out your comments to see if others were addicted to it as I will be now.

I will be trying out the creamy chicken version in a week or two. Thanks for all the great recipes!

Oh, and PS, all six of us in my family finished their whole bowl (that rarely happens!).

    • Jen says

Hi Rob, that is awesome! I am thrilled the entire family loved it so much – a great new addiction 🙂 Thank you for sharing how much you loved it! I hope you love the Creamy White Chicken version too!

  66. Donna says

This is the absolute best ! Everybody I have served it to has requested the recipe. Thank you !!

    • Jen says

Awesome Donna, I am so happy to hear that, thank you!!!

  67. Jen says

Everything here looks amazing, but this soup is the first recipe I’ve tried since I recently found the site. (I’ve got lots of stuff pinned and ready to try!) This lasagna soup is magically delicious and I will be making this again…and again…and again. Used cream cheese instead of ricotta because that’s what I had on hand. Turned out great! No leftovers! This was a great introduction to your recipes and I am now encouraged to try more and more of them. Thanks!!!

    • Jen says

Hi Jen, welcome to Carlsbad Cravings! I am so happy your first foodie experience here was a great one! I am excited for you to try a lot more of my recipes – I hope you love them just as much!

  68. gina love says

Hello! I’ve made this once before and am currently making it now. My husband is watching football and just keeps saying how good it smells. lol! I do, too! I’ve sampled the soup while the noodles are cooking and, gosh, it is just soo good! Thanks so much for an awesome recipe. Can’t wait until it is finished. We at the whole pot last time and I’m sure it will happen again. Truly one of my all-time faves!

    • Jen says

What a wonderful comment, thank you so much Gina! I can just picture your husband on the couch turning to say how good it smells as you sample it 🙂 I truly love hearing this is one of your all time favs – it just makes my heart so happy! Thank you!

  69. Kris Ann Hansen says

Could this recipe be modified to use in an instant pot? Either way it’s getting made. I’m drooling. ❤

    • Jen says

Hi Kris, I’m sorry but I’m not familiar with instant pots so I can’t say either way – sorry!

  70. Tiffany says

Hi, this looks so delicious so I’m going to try it tonight. I thought about making it in the crockpot without the heavy whipping cream. Would you recommend adding the cornstarch at the beginning or near the end of the cooking process? Also, should I cook the noodles separately and add them in at the end as well? Thanks

    • Jen says

Hi Tiffany! I would add the cornstarch the last 30 minutes and turn your crockpot to HIGH. I would definitely cook the noodles separately. Also, because the crockpot has a tightly sealed lid the liquid won’t evaporate as much so you will want to reduce the chicken broth by about 1/4. You can always add more later if its not enough. Hope this helps!

  71. Erin says

This looks delicious – I can’t wait to try it! We aren’t big fans of crushed tomatoes – do you think it would affect the recipe much to omit them? Thank you so much!

    • Jen says

Hi Erin! Since crushed tomatoes serve more as a liquid in this recipe, I would replace them with the equivalent amount of marinara. Hope that helps, enjoy!

      • Erin says

Thank you so much – I really appreciate it! Have a great weekend!

  72. Monica says

Another AMAZING recipe! Thank you so much for sharing your cooking talents with us. 🙂 This recipe came out just perfect and my family LOVED it!

    • Jen says

YAY for a recipe the whole family loved, thanks Monica! I’m having fun seeing your comments and what recipes you decide to try!

  73. Michelle says

This looks divine!! Can this be made with rice instead of.the noodles? If so, how much would you suggest? Thanks!

    • Jen says

Hi Michelle, rice would be a fun spin! I am guesstimating 1 1/2 cups uncooked rice might be about right. You will want to check the rice as the cooking time will vary. Enjoy!

  74. Tina says

Made this tonight and OMG! It came out amazingly yummy! I just doubled everything and good thing i did. My husband thats not a huge fan of cheese or pasta he had 3 bowls of it and as i speak he still wants more. Everyone at my moms has had at least 2 bowls and everyone said the same. It beats my moms lasagna! thats not a easy thing to do! Deffinetly going to have to make this again!

    • Jen says

Hi Tina! I’m so flattered this “beats moms lasagna” and that everyone went back for multiple bowls! Thank you so much!

  75. Claudia says

I just made this tonight (I love soup no matter what time of year). The only changes I made were to use Hunt’s Traditional Garlic pasta sauce because that’s what I had on hand and bow-tie noodles instead of lasagna noodles because the lasagna noodles I had were the oven-ready variety and I wasn’t sure how well they’d work – probably be just fine but I didn’t want to chance ruining it. We garnished with mozzarella, white cheddar, Parmigiano-Reggiano and cottage cheese (no ricotta on hand). I had a batch of homemade chicken broth which I used instead of canned. The soup was darned DELICIOUS and my husband requested I make it again! Thanks so much.

    • Jen says

I love that you eat soup year round and I am thrilled this was such a hit! The addition of white cheddar and cottage cheese sound divine!

  76. Irina says

Ok so, seriously, the easiest, fastest, and MOST delicious lasagna ever. I made this for our wedding anniversary a few days ago since we both love lasagna, but with 3 kids ages 5 and under, I just don’t have time to do the traditional method, more like, i am way too distracted! I found this link on Natasha’s Kitchen, and I’m so glad i did. I subbed cottage cheese for ricotta and didn’t add the extra chicken broth at the end ( I simmered my soup on very low heat). Tasted just like regular lasagna except all the extra creamy tomatoey goodness that I love!

    • Jen says

YAY, thanks for such an awesome comment Irina! I’m thrilled you loved this lasagna soup so much and that its easier to make with all the kiddos! Thank you!

  77. Pam says

Hi, can u put this recipe in the crock pot?

    • Jen says

HI Pam, I don’t recommend cooking the noodles in the crockpot but you could add them later.

  78. Nancy says

This was just FABULOUS! My family of guys does not like lasagna, because of the cheese and ricotta, so being able to just add my own as desired was a perfect solution. Thank you, thank you, thank you! This recipe is a keeper—
    and passer-on-er! 🙂

    • Jen says

Thank you so much Nancy! I am so happy customizing the cheese allows you and your family to eat “lasagna” again!

  79. Leslie says

I prepared this recipe yesterday for our 1st cool day of the season, with a few tweaks using what I had on hand(1# Italian sausage and no ground beef; about 1/8 tsp. ground red pepper instead of red pepper flakes; 2+cups Mafalda pasta instead of lasagna noodles). What a HOME RUN!! Seasonings were spot-on too. Didn’t miss the ricotta or the long process of regular lasagna.
    Thanks Jen!!

    • Jen says

You are so welcome Leslie! I’m so happy you loved it and were able to use what you had on hand! thank you!

  80. Nicolle says

Has anyone added cheese right into the soup instead of adding it right before serving?

    • Jen says

Hi Nicolle, I have also done that and it is delicious! You can make it super cheesy this way.

  81. Marie says

I have made this over and over again.. this is in my ass kickin folder for a reason …LOVEEEEE

    • Jen says

haha! Thank you so much Marie – I am honored it has made it into your coveted folder :)!

  82. Dajoine Moore says

Hi, I’m trying the recipe out as I type. I was wondering if I could just add the cheese into the whole pot? I have a household of cheese lovers.

  83. Gina Love says

I wanted to tell you I took this to my work potluck and won the entree contest!! My family goes ga ga over it. Thank you so much!! I did make sure to tell everyone it was not my recipe and then posted your recipe to mak suRe you got credit.

    • Jen says

That is awesome Gina, congratulations!!! I am trilled it was such a hit and you won! And I love hearing that your family loves it too! Have a great weekend!

  84. Eli says

So when I first told my family what was on the menu yesterday they had a what soup? reaction(ewwww)! Lol and when they arrived and served themselves it turned into OMG THIS IS DELISH! I follow the instructions to the t, except for the basil leave and crushed tomatoes because I’m not a fan of tomatoes. It it was perfect, everyone had seconds I was expecting to save some for the next day (today) but that didn’t happen hahaha. Thank you so much for this hit recipe…….Merry Xmas!

    • Jen says

Thank you so much for such an awesome comment Eli! I’m thrilled this was such a hit despite the initial family skepticism 🙂 Merry Christmas!

  85. Lindsay says

I love this recipe, have made it a few times now! But how the hell do you your lasagna pieces look so perfect?? Is there a trick or am I just too rammy? Mine mainly just crumble when I break them haha. It ain’t pretty but it tastes so good. Thanks!

  86. Sandy says

Oooh, yum! Am making this on New Year’s Eve day! Thanks for sharing. 🙂

    • Jen says

You are so welcome! Enjoy and Happy New Year!

  87. Allie says

I accidentally only bought 14 oz jar of pasta sauce but I want to make the 6 ish servings! Is it possible to use more can tomatoes so I can get by with less prego sauce?

    • Jen says

Absolutely! If you have crushed tomatoes or tomato sauce you can use that and will just need to add a little more sugar and seasonings. Hope that helps!

  88. Christine L Shipley says

Jen–any ideas how this would taste with beef broth vs chicken broth?

    • Jen says

Hi Christine! I find chicken broth to more of a “neutral” in this recipe and I think you would taste the beef broth – not to say that’s bad, it will just be an added flavor, still delicious, but I prefer the chicken broth. Hope that helps!

  89. Christine L Shipley says

Thank you Jen. I might try the beef broth sometime & will let you know.

  90. Bethany says

I don’t have lasagne noodles but I have egg noodles that I didn’t use when I made chicken noodle soup last week. Could I use these in place of the lasagne noodles?

    • Jen says

Absolutely! You will just want to check the noodles to see if they are done cooking earlier so you don’t end up with soggy noodles. Enjoy!

  91. Jan says

I sent this recipe to my sister who was looking for something to take to her church soup contest (raised money for those in need). She said hers was the only empty soup pot after it was all said and done. I am making a double batch today to keep my household fed while I work nightshift the next 4 nights. I can already tell it will be delicious! Thank you! Jan

    • Jen says

Hi Jan, thank you so much for taking the time to comment! I am so happy your sister – and the church! – loved the soup so much! This is a great soup to double and makes great leftovers – your family will eat well! Bless you for taking the time to cook for your family while you also work so hard! xo

  92. Liyah says

Is there a way that I can make half of this? I made it 2 times already but the amount of it is a lot for a single person m i able to cut the recipe in half for just one person???

  93. Susan says

Made this last night for my family and it was a hit. I used small shells instead of the lasagna pasta since that is what I had in my pantry and it turned out real good. I am amazed at how you have a way of incorporating just the right amount of spices resulting in amazing, delicious and very tasty recipes. Thanks!

    • Jen says

Awesome Susana, I’m thrilled it was a hit with the entire family and I’m glad it worked great with small shells! Thank you so much for your kind words – I just love cooking and I’m glad we share the same foodie palate 🙂

  94. Cia Black says

Loving this, Made it and can not wait to make it again. we love lasagna but it takes much more to make. This took about 45 minutes. We used no boil noodles and it cooked in half the time.

    • Jen says

I am so happy this is a favorite Cia! I totally agree, it’s hard to go back to traditional lasagna when this is so much easier!

  95. Janice says

Saw this and had to try it. I am so glad I did. Absolutely delicious.

    • Jen says

I’m so glad you tried it too and loved it! Thanks Janice!

  96. Tula says

This is Fabulous. I have made other one pot Lasagna’s and this is by far the best. I did add more spices as I make my own tomato sauce from cans so I needed to flavour it to match the jarred variety that was used in the original. I halved the stock and the noodles and added mushrooms. My shredded mozza went right into the pot as well. Nice and thick, full of flavour and just the right amount of creaminess even with whole milk rather than cream. This recipe is copied and thrown into my regular routine now. YUM.

    • Jen says

Thank you so much Tula! I’m thrilled this is the best Lasagna Soup recipe you’ve ever made and your homemade marinara and addition of mushrooms sounds fantastic!

    • Jen says

I don’t recommend freezing it, sorry!

  97. Larissa says

Recommendations on making the recipie in an Insta Pot?

    • Jen says

Sorry I don’t have an instant pot so I can’t help you 🙂

  98. Tina Olson says

Can this all be made in a crock pot?

    • Jen says

Hi Tina, I would brown the meat first then you can add it and the rest of the ingredients to the crockpot. I don’t recommend cooking your lasagna noodles in the crockpot because noodles can easily get a funky texture if cooked at too low of heat, so I would cook them separately then add them to the crockpot. Enjoy!

  99. Dawn says

Have you tried. this with gluten free noodles?

    • Jen says

      Sorry, I haven’t, good luck!

    • Laura says

I made this tonight with gluten free lasagne corte noodles & it was delicious.

    • Shannon says

I just used them tonight its cooking as we speak
      Should that make a difference?

  100. Ruthie says

I have made this before and it’s fabulous!!! However currently I’m trying to cut back on carbs but not a specific diet plan. Today I made this amazing soup and in place of the pasta, I used two zucchini!!! WOW!! So so good! Thanks for sharing all your great recipes!!

    • Jen says

What a great idea, thanks for sharing Ruthie! I am definitely going to try that!

  101. Bev Dube says

Hi Jen! Just wanted you to know I made your Lasagna soup and the Million Dollar Mac & Cheese last night and my husband couldn’t believe how amazing these dishes are!! He thinks I’m incredible for making these crazy good dishes, but it only came together because of you and your recipes!! I love your site and can’t wait to make the next dish!! Have a great weekend!! From snowy Canmore, Alberta!!

    • Jen says

Hi Bev, what a night with both Lasagna Soup and Million Mac – YUM! You are amazing for making them both! I’m thrilled they were such hits and I’m excited for you to explore my site too, welcome!!!

  102. Amanda L says

Really good. Seriously. This is comparable to a traditional lasagna… but SO MUCH EASIER and faster! I use a whole box of uncooked lasagna noodles to make it even thicker. I put leftovers into a smaller casserole dish and then it’s just like a traditional lasagna the next day and can be sliced into squares for serving. Thanks for a great recipe!

    • Jen says

Awesome Amanda! I’m thrilled you loved it and found it so much easier than traditional lasagna! I LOVE your idea of making it thicker with more lasagna noodles and slicing the leftovers the next day – brilliant!

  103. Meg Cason says

This soup is absolutely AMAZING!!! I have never been successful at making good lasagna so I tried this recipe and it’s to die for!!! Thank you SO much for sharing!

    • Jen says

You are so welcome Meg! I’m thrilled you loved it so much and found a new way to make/eat lasagna!

  104. Jessica says

Outstanding! It’s super chilly here today, so one of my kids asked for soup. The other asked for lasagne. So, I went searching. I found your recipe. I’m definitely not a novice cook, but this was so easy, and my kids LOVED it. I added some fresh spinch and frozen carrots just to get some veggies without making a side. Absolutely divine!!!

    • Jen says

Thank you so much for taking the time to comment Jessica! That is awesome you were able to appease both the soup request and the lasagna request with this lasagna soup! I also love your addition of fresh spinach and carrots!

  105. Tammy says

Made this for dinner tonight. OMG!!! This is delicious!!! You must make. I had some crusty Italian bread with it. Amazing flavor! used beef and Italian sausage I also added the cream. Thank you so much for Another amazing recipe

    • Jen says

You are so welcome Tammy, I’m so pleased you loved it so much!

  106. Nano says

I have many times with gf. Noodles and herd no complaints from my 4 picky eaters

    • Jen says

That is awesome! I’m so pleased its a winner with gf noodles too!

  107. Linda says

OMG!!! Girl you knocked this recipe out of the park!! I’ve been wanting to make lasagna soup and decided to make the one you posted and so happy I did. It is FANTASTIC!! and much easier than I thought it would be to make. It came together so quickly and easily.
I opted not to use the crushed tomatoes and it was perfect for me. Also used a combination of ground beef and Italian sausage. I can not believe how good this is. Thank you so much for sharing your recipe!!!

    • Jen says

Ah, thank you so much Linda, I’m so pleased you found this Lasagna Soup easy and delicious!

  108. Layne says

My sister keeps telling me how good this is and how it’s a family favorite. I finally gave it a try tonight have to agree with my sister! The noodles were definitely slurpelicious. Yum!

    • Jen says

LOL! Yay for slurpelicious! I’m so pleased it did not disappoint!

  109. Donnie says

This was very good however I am not a fan of prego sauce so I used ragu (my personal preference) and I must say it was awesome! Thank you for sharing

    • Jen says

You are so welcome, thanks Donnie!

  110. Kass says

Wow! I just made this soup tonight for the first time. It was AMAZING, and pretty easy…Thank you for sharing!! Can’t wait to try some of your other recipes. 🙂

    • Jen says

Thanks so much Kass! I hope you have fun exploring my site and find many new family favorites!

  111. Chloe says

This recipe= <3 <3 <3. I am pregnant and have ONLY been craving soup. This meal was delicious. My husband HATES soup, he cries, "It's not a true meal…". But he absolutely loved this! I can't wait to make this for my growing family one day. So yummy… thank you! 🙂

    • Jen says

I’m so pleased both you and your husband loved this Lasagna Soup! Congrats on your pregnancy and growing family!

  112. Hollis Ramsey says

i love this recipe but will not be using Prego, unless it’s what’s in my pantry already, which i doubt. i’ll also use the half-sausage/half-beef option and DEFINITELY the cream (there’s always cream in my fridge). i prefer fresh chopped/chiffonaded parsley/basil, but i can deal with dried oregano. i’m even considering dumping in a box of frozen spinach. should i defrost and squeeze the excess water out first, or just reduce the amount of liquid? what do you think?

great recipes, the ones i’ve looked over. dying to try them all! thanks for your hard work, Jen!

    • Jen says

I’m so happy you enjoyed it! As far as the spinach, you can just reduce the amount of liquid – I think addition will be delicious!

  113. Lacie says

What I love about this recipe is how easy it is to be made vegetarian or vegan. I omit the meat and cheese, and instead I add vegan cream cheese from Trader Joe’s (it’s also really good without any type of cream). I’ve made this for years and it is always a great choice!

    • Jen says

That is awesome Lacie, I’m so pleased you can still enjoy it!

  114. Dina says

Have you used no-boil lasagna noodles in this? If not what is your opinion on my using them?

    • Jen says

Hi Dina, I like to simmer the soup for longer than no-boil noodles would require and I find they are more fragile and tear more easily but you are welcome to try them, good luck!

  115. Lynne says

I’m making this for a soup exchange. Do you know how many cups it makes? I’ve made it once before and it was a big hit with the family so I’m sure that everyone will love it.

    • Jen says

Hi Lynne, a soup exchange is such a fun idea! My apologies but I haven’t measured this soup – sorry!

  116. Katie Campbell says

I doubled this recipe and my whole family loved it!! I used Bechtle Traditional German Egg Noodles Mini-Lasagne and they worked great! Defiantly going to make this again!

    • Jen says

Thanks so much Katie, I’m so happy its a new repeat!

  117. Eden says

Thank you for this amazing recipe. I’ve made this a few times before and it’s absolutely delicious! I’m craving it again, but with less time at home now, I am wondering how this would go in the slow cooker? Has anyone tried this in a slow cooker/crock pot? Should I still brown the beef first?

    • Jen says

You are so welcome Eden! I would definitely brown the meat first and I would cook the lasagna noodles separately as they can become a funny texture if not cooked at a roaring boil.

  118. Rachel Graham says

This was soooooo good. Thanks for the recipe. I loved it. I did have to use ground cayenne pepper instead of pepper flakes because I didnt have flakes.

    • Jen says

You’re welcome Rachel, I’m so pleased it was a winner!

  119. Win says

Hi!! I’ve always been intimidated by all the steps to making a traditional lasagna, but this lasagna soup is soo simple! For a single person, I would like to make the soup ahead of time in the week and boil the lasagna pieces as needed separately. By how much would you adjust the 6 cups of chicken broth for lasagna soup if boiling pasta separately?

    • Jen says

Sorry for the delay Win as I’ve been in Italy for weeks and playing catch up, but I’m so happy you’re loving this soup! I have never made this soup without all the broth so it’s hard for me to guesstimate but I would say reduce it by 3 cups and add more to individual servings if needed.

  120. Nicole says

I just made this without changing anything and oh God is it good! Finally, a work lunch I actually look forward to, thank you so much for this recipe!

    • Jen says

You’re so welcome Nicole, I’m so pleased it was an easy winner!

  121. Rebeca says

Would gluten free para work as well?

    • Jen says

Hi Rebeca, I’m sorry but I have never tried this lasagna recipe with gluten free pasta. I imagine you can substitute the noodles with gluten free like in all pasta recipes but they will be a slightly different texture/taste.

  122. Arls says

Thank you so much for this delicious recipe! My husband and I love it! It’s the 2nd time I make it. It’s even better the next day for lunch!

    • Jen says

You are so welcome Aris! I love hearing it’s a keeper!

  123. Claudia says

This is an awesome recipe. I left a previous reply to someone who asked about freezing, but this comment is just to say thank you for posting such a delicious recipe. The only thing I did differently was use all hot Italian sausage instead of 1/2 beef / 1/2 sausage. The sausage was pretty lean, so didn’t make the soup too oily. But I added all of the seasonings, including max amount of pepper flakes even with hot sausage, because, well, we likes us some spicy food. 🙂 However, the addition of the cheeses mellowed out the heat, and that was just fine. I also used all 10 cups of chicken broth (homemade broth really kicks it up a notch IMO, if you have the time for that) and the 1/2 cup of cream. Super, super delicious. My hubby (also a Patrick) is a fan and asked that it be added to our rotation.

As I said in my other comment, I serve the pasta on the side because Pat and I have different preferences for the amount of pasta we like, and I dislike how pasta absorbs the liquid in soup when left overnight. I might halve the recipe some time and cook the pasta in just to try it. I’ll bet it’s amazing.

    Thanks again, Jen!

    • Jen says

Thank you for taking the time to comment Claudia! I’m thrilled you and your husband both love this lasagna soup recipe so much! I can only imagine how delish it must be with homemade broth – can’t wait to try that! Thank you!

    • Elizabeth says

      Claudia,

What’s your recipe for homemade broth?

  124. Kate says

Thanks for this- it is delicious!

Can you please post instant pot times for this?

    • Jen says

Thanks so much Kate! I haven’t made it it in my instapot, but maybe a reader can help..

  125. Beth Elsbrock says

Hi! I can’t wait to try this – can it be made in a crock pot? Would you change anything to do that?

    Thank you!

    • Jen says

Hi Beth, I don’t recommend making in a crockpot as the pasta needs to boil to cook or it can turn out gummy.

  126. Patti says

Made this in the Instant Pot. After sautéing meat and onion, set Manual to cook 3 minutes. Then QR. could have used a bit less stock.
    Yummy.

    • Jen says

Thank you so much for the instant pot instructions Patti!

  127. Samantha says

    AMAZING RECIPE!!! <3

    • Jen says

      Thank you so much Samantha!

  128. marilee says

i love your recipes and your inspiring life story! Thanks for sharing both!

    • Jen says

You are so welcome, Marilee! I am so pleased that you love my recipes! I have been working my way through a backlog of comments and see yours somehow got lost in the mix! I appreciate you and hope you’re well!

  129. Marie says

I love this recipe but have a ? .. in your pic i see cheese in soup but i see no instructions of when to put ricotta and mozzarella in.. when do u do so ? Thx

    • Jen says

Thank you so much, Marie! I have been working my way through a backlog of comments and see yours somehow got lost in the mix! I appreciate you and hope you’re well!

  130. Nancy says

Amazing soup. Hubby absolutely loved it! If you love lasagna, but don’t have the time, then this soup is for you. I highly recommend it.

    • Jen says

Thanks for the recommendation Nancy, I’m so happy even your husband loves it!

  131. Julianne says

Love this recipe!! It’s a favorite in our household. Even our 9 year old loves it!

    • Jen says

That’s awesome, thank you so much Julianne!

  132. Michelle says

Excellent recipe, our family likes the lasagna soup better than regular lasagna. This recipe is a keeper for sure!

    • Jen says

That’s awesome Michelle, I’m so pleased this Lasagna soup is a repeat family favorite! Thank you so much!

  133. Masooma Z says

This was SO good! Easier to make than the traditional lasagna but had all the flavor. Thank you!

    • Jen says

Yay! I’m so happy it was a winner, thank you for taking the time to comment Masooma!

  134. Charles Norman Putnam says

I used Cheese stuffed Tortellini for the noodles…FAMILY WENT NUTS!

    • Jen says

That sounds AMAZING! Can’t wait to try it, thanks for sharing!

  135. karen says

hello from annapolis! i came across your recipe when i was google-ing chicken recipes for the buffalo wings. low and behold what a treasure chest i have discovered. i am a beginner sailor and will be adding lasagna soup to my prepped meals list when underway. i can sense it will be total comfort food! hi5 and thank you for sharing to make my life as a sailor easier!!! actually i think your recipes suit the sailing life. bless your heart miss jen!

    • Jen says

What a fun adventure you have in store as a sailor! I’m so pleased you discovered my site and hopefully it can make your life easier rand more delicious!

  136. Kelly says

I made this tonight and we LOVED it!!!! THANK YOU!!

    • Jen says

You’re so welcome Kelly, I’m so happy it was a hit, thank you!

  137. Ashley says

Do you think this would turn out fine if I substituted the chicken broth for vegetable broth?? Thanks!

    • Jen says

Hi Ashley, it would turn out fine but would be missing a layer of flavor. If you have beef or chicken bouillon I would add 1-2 teaspoons to amp up the flavor.

  138. Amanda says

Yummy! This was delicious! I used Italian sausage and gluten free noodles and it turned out great. Can’t wait to have it again for lunch tomorrow

    • Jen says

Awesome Amanda, I’m so pleased it was a winner with gluten free noodles!

  139. K P says

Is there anyway to make this as a regular lasagna? The flavours are incredible and I’m wanting to make it as a standard lasagna to freeze.

  140. Michael V says

I absolutely love this recipe. I actually substitute the noodles with Bowties or other noodles to make it easier. I also add Mozzarella cheese into the soup at the end to make it a little cheesier, then add my dollop of ricotta and sprinkle more Mozzarella cheese and then sprinkle some Italian Seasoning atop as well.

I cannot tell you how many times I have made this and shared the recipe with friends and family.

AND, I am making it again tonight and making a double batch to freeze some for lunches for the week or month.

    • Jen says

Thank you so much for your wonderful comment/review Michael! I’m so pleased this lasagna soup is a favorite and I love that you add mozzarella directly to the soup – yum!

    • ROSE says

Loving it! I was in the mood for Rigatoni. I also added some baby meatballs. It was fantastic! Thank you. I needed something easy. I had shots in my back and once I assembled the ingredients, I could almost sit down the whole time!
Love your recipes, thanks abunch! Bon Appétit.

      • Jen says

I love your twist with rigatoni and mini meatballs – yum! I hope you make a speedy recovery!

  141. Kylee Jenkins says

This is SOOOOOO good! We freaking loved it!

  142. Sage says

How did you break the noodles so perfectly?? I am older and have never had luck breaking lasagna noodles so they look nice or even. Suggestions would be wonderful. Anymore I need all the help I can get, but we love lasagna noodles too. I could use a different pasta but might not be the same. I don’t have an oven or stove, just a microwave, so use my crockpot for recipes like this. Thank You for a really great recipe 🙂

    • Jen says

You’re so welcome Sage! I snap them against a hard flat surface like a ruler – but don’t worry too much about them being perfect! I know you’re hesitant about using a different pasta, but many readers have commented that they love it that way too. Good luck!

      • Tanya says

Can this be made in a slow cooker?

        • Jen says

Hi Tanya, I don’t recommend cooking the lasagna noodles/any pasta in the slow cooker because they can become a gummy texture (because they aren’t boiled at high heat), but you can add everything else to the slow cooker then add cooked pasta at the end.

  143. Ashley says

This soup was sooooo good I didn’t use the heavy wipe cream and it still turned out fantastic. Thank you so much for this easy recipe I will be making this again soon.

    • Jen says

Thanks for taking the time to comment Ashely! I’m so pleased it is a new repeat favorite!

  144. Emily says

I am going to try to experiment with this recipe to use the instant pot, thinking I will reduce the chicken broth by 1-2 cups.. I’ll update on how it works out!!

      • Emily Carr says

I reduced the chicken broth to 4 cups but otherwise followed the recipe as written but subbed the beef for ground turkey. I browned the turkey, onions, and garlic on the sauté setting. I wasn’t sure exactly which setting I should use, so I cooked on soup/broth for about 3 minutes and then switched to pressure cook for about 4 minutes and let the pressure release for about 15 minutes and then did quick release. I added the heavy cream at the end and it turned out perfectly! In the future I would probably just use the manual pressure cook for 6 minutes and use the same time for pressure release! Hope this helps for anyone asking about using the instant pot!

  145. Victoria says

I just wanted to say that I have been making this recipe for several years now. My family absolutely loves it! It is so easy to put together! Thank you!

    • Jen says

Thanks so much for taking the time to comment Victoria! I love hearing this soup is a repeat family favorite!

  146. Franklin Patrick says

Can you substitute cottage cheese for the ricotta? This looks fantastic and I definitely will be making this soon.

    • Jen says

Hi Franklin, I think that comes down to personal preference. IF you like cottage cheese it definitely could work.

  147. Stephanie says

This lasagna soup recipe is phenomenal. I used all Italian sausage, 3 cups of bow tie pasta and found 7 cups of chicken broth was the thickness I wanted it at. The cheeses & ricotta on top made it so yummy. Your garlic bread made a dunk worthy partner for the soup too, thank you!

    • Jen says

Mmmmm, I love the use of Italian sausage! I’m so pleased your family loved it!

  148. Rebecca says

Cant wait to make this. I think rather than broken lasagna noodles, I will try it with frozen cheese tortellini.

  149. Angie says

    Could you use stuffed ravioli!?

    • Jen says

absolutely! Just add the ravioli to cook per package instructions.

  150. Catherine says

Hi Jen! Maybe this has been addressed in the comments, but I don’t have time to read through all of them! I’ve made this soup before with lasagna noodles and it’s delicious, but I want something easier for my little kids to eat, so I want to use shells. And I want to make them and keep them separate until serving (and for leftovers). How would you suggest I adapt it for that/how much less broth? I still want it to be thick like it is with the lasagna noodles. Thanks for any suggestions!

    • Jen says

Hi Catherine, possibly start with 4 cups then add more as needed. Good luck!

  151. Molly says

Love this recipe! So good and so easy! Great for the cold winter months here in the Midwest!

    • Jen says

Thanks so much Molly, I’m so pleased it’s a favorite!

  152. Cydnee says

This lasagna soup is really something! We absolutely loved it!! I used mild Italian sausage only & 4 cups of chicken broth because we like it thick. We of course added some cream…yum! This is a keeper! Thank you!

    • Jen says

Thanks so much Cydnee! I like your style with the rich and creamy – yum!

  153. Bethany says

Finally got around to making this one, after the white lasagna soup being a favorite for the past few years. This was SO good! Even my tomato-soup-hating husband had two bowls. I used half and half instead of heavy cream and didn’t measure, so I’m sure I used over a cup. Subsequently I only added about one additional cup of broth right at the end. We thought the thickness of the soup was just right. I topped each bowl with a little shredded Parmesan and some burrata. Can’t wait for leftovers at lunch tomorrow!

    • Jen says

Thanks for taking the time to comment Bethany, I’m so pleased even your tomato hating husband loved it! Your addition of burrata sounds divine!

  154. Paula says

Can I use fire roasted diced tomatoes v the crushed? I ran out of regular!

    • Jen says

Hi Paula, you can blend the fire roasted tomatoes to create the crushed – they’ll taste great.

  155. Heather Del-Colle says

This is a delicious recipe and so incredibly easy to make! Thank you!!

    • Jen says

I’m so pleased it was a hit, thanks Heather!

  156. Carla Gardner says

I have made this recipe several times and taken it to many winter parties , Everyone raves over it and my family just loves it too, It’s so quick and easy , thank you for sharing

    • Jen says

You’re so welcome Carla, I’m so pleased it’s a repeat favorite!

  157. Lynet Nelson says

My family loves this soup – I do add a pound of Italian sausage plus the pound of ground beef to make it heartier. Easy recipe but so good!!

    • Jen says

Thanks Lynet, I’m so pleased it’s a favorite!

  158. Keli says

This is a HUGE hit at our house!! One my husband requests often this time of year. I’m curious how beef broth would be. I think I’m going to try it out this week as I have so much beef broth to use up in our pantry. Thank you so much for sharing this delicious recipe!!!

    • Jen says

I love hearing that Keli, thank you! Beef broth will still be delicious – just more beefy ;)! Please let me know which you prefer!

  159. Yvette says

This recipe is AMAZING and so adaptable! I’ve made it as is and I’ve veganized it and made it with no meat and just veggies! Every outcome has been WONDERFUL!! Thank you so much

    • Jen says

Thanks Yvette, I love hearing you’ve been able to adapt this recipe!

  160. Elle says

So.. The bay leaf… It’s just in the list for fun? It didn’t seem to be in the directions… Other than discarding it lol
    What’d I miss?

    • Jen says

I guess I consider it a type of spice, I will clarify – or not, just for fun 😉

  161. Tammy says

My family absolutely loves this soup. It is so easy to make and is just perfect. With it colder now I find myself wanting this soup just about everyday. I do make it once a week because it is just that good.

    • Jen says

That is amazing you make this soup so often Tammy! I love that it is a favorite, thank you!

  162. Mary says

Hello! I make this recipe often as it is one of our favorites! The next time I make it, it has to be vegetarian. Would it still taste good if I cut out the meat and swap the chicken broth for veggie?

    • Jen says

Hi Mary, yes, it would still taste good – it’s just personal preference. You may want to add some additional veggies in place of the beef.

      • Denise says

I will have a great of bolognese sauce from one of your previous recipes. It suggest I can use the leftover sauce for this recipe. Would you provide me the steps or your rendition of it?
        I’d appreciate it.
        Thx

        • Jen says

Yes, you can absolutely use the leftover Bolognese then thin it out with broth per this recipe. Enjoy!

  163. Anne Claire says

I’ve made this soup quite a few times now. My daughter and I love it. Thank for this wonderful meal.

    • Jen says

You’re so welcome, I’m so pleased it’s on repeat!

  164. Tiffany B says

This was fantastic!!! Absolutely LOVE this soup. I does taste exactly like your eating traditional Lasagna – but so much easier to put together. As in all your recipes, perfectly seasoned – just plain yum!!

    • Jen says

Thanks so much Tiffany, I’m so pleased it filled those lasagna cravings!

  165. Irene says

I volunteer in the kitchen of a sleep away summer camp. A few years ago I introduced this soup in our menu. It was a huge success. The next summer not only kids but also some adults couldn’t wait for me to make this soup again. Parents call me to ask for the recipe. Thank you so much. And now I have to go and make the Lasagna Soup with my grandkids.

    • Jen says

That is amazing, what an incredible tradition! Thanks for sharing my recipe, and more importantly, for sharing your time and talents!

  166. Hannah says

I made this recipe for the family yesterday and it was delicious; yesterday and the leftovers today. I did do a few modifications. I used homemade deer sausage in place of Italian sausage, my favorite pasta sauce, added some brown mushrooms, used 4 cups chicken stock along with ~1 cup of water from rinsing the pasta jar out and didn’t use the heavy cream since the soup was already at the consistency I liked. We all liked the lasagna noodles, mine weren’t as precise in size, but we liked it. Being able to cut through noodles or slurp them up was yummy. Thanks for the recipe, it’s a save for me.

    • Jen says

Thanks Hannah, I’m so pleased you loved “slurping” this soup! Thanks for sharing your modifications as well!

  167. Chris hammond says

This is my goto soup ! When I travel to families houses this is what I cook and knocks their socks off!! They tell me I should be a chef !! Btw way love your other recipes please keep posting .

    • Jen says

Thank you so much, Chris! Will do – I am thrilled that it’s such a hit! I hope you find more recipes to enjoy!

  168. BR says

This made more than my family could eat, would this freeze well?

    • Jen says

Unfortunately this soup doesn’t freeze well. Sorry!

      • Sheila says

Freezes well without the noodles and cheese. Add when you decide to eat.

  169. Jim says

I just wanted to say after making this about 20 times, this is a great recipe, I also have an instant pot version very similar but it just isn’t as good as this one. Something about all that broth cooking down into the noodles pushes this over the top.

    • Jen says

Hi Jim! I love hearing it’s a repeat favorite! I hope you have a wonderful week and find more recipes to enjoy!

  170. Veronica says

Oh dear Lord, where has this been all my life??! This tasted awesome! I followed the recipe but after 30 minutes, it was not thick enough and I didn’t need to add more broth. I did add a couple of extra noodles, higher heat, and a few more minutes and all was right with the world. This was the best! Rest assured, it will be back on our table in no time!

    • Jen says

Thanks Veronica, I’m so pleased it’s a new repeat favorite!

  171. Terri says

I’m not sure I commented in the past, but OMG This recipe is fantastic and an award winner! It is a total crowd pleaser! We are making this for the third time as a fundraiser and are sure it will be a hit. Thank you for the wonderful recipe. Much appreciated! Definitely appreciated by all!

    • Jen says

Wow! Thank you so much, Terri- what a glowing review! I am so happy this is such a hit! I hope your fundraiser is a success!

  172. Tiffany J Spann says

I made this recipe tonight and it was easy and it tastes wonderful!

    • Jen says

Yay! So happy to hear this was a success! Thanks, Tiffany!

  173. Stacey says

I will be making this for the most part. I will be using tortellini instead of noodles. I have become a bit burnt out on tortellini soup and this is a good mix for fixing that. Thank you for the insight and idea.

Hey this recipe was DELICIOUS! However if you know, can you put the nutrition facts here? I am curious to know how much is one serving and how much protein, carbs, fat, etc are in the soup for my food tracking purposes. Thank you!

Should I mix the ricotta and parmesan cheese together and just put a dollop in the middle of the soup?

    • Jen says

You can but you don’t have to! Either mix together or add them individually – whatever you prefer. Enjoy!

Just made it and smells amazing. Does this freeze well?

    • Jen says

I’m so glad! It doesn’t freeze very well as the noodles can become mushy once thawed. If in the future you would like to freeze it, leave out the noodles and reduce the broth. When you are ready to enjoy, cook the lasagna noodles separately and add them to the thawed, warmed soup. Hope this helps!

Another winning recipe!! Made this tonight per my daughter’s request and it blew us all away! I left out the cheese and cream because that’s our general preference – those who wanted it added shredded parm on top. This is a delicious and straightforward recipe – a definite keeper!!

Thanks Nancy! I’m so glad that it will be a repeat!

Hi! Could I use oven ready lasagna noodles?

    • Jen says

Hi Lisa! I would definitely recommend using regular lasagna noodles or 2 1/2 cups uncooked small shells, just simmer for less time. Hope this helps!
