This Lasagna Soup Recipe can’t get any easier!
I looooove Italian food or even anything resembling Italian food from my Italian Vegetable Soup, Tomato Basil Soup, Million Dollar Baked Penne, Million Dollar Macaroni and Cheese Casserole, Zuppa Toscana Soup, Minestrone Soup and everything in between! And while lasagna is technically Italian, it has to be one of America’s favorite foods – and one of my favorite foods! For being a favorite, however, I hardly ever make traditional lasagna – so sad. I just can’t get into the time-consuming, tedious, layering.
But now, I am thrilled to introduce my “can’t-get-any-easier,” One Pot Lasagna Soup! I made this soup twice in a week because I am SO in love with it-and so is my very honest critic, Patrick, who lived in Italy for two years. Sometimes he is a little too honest, but he tells me it’s a good thing, because then I know when he really, really loves something. So as he sat spooning this Lasagna Soup into his mouth, repeating “So good, you nailed it. Insane, taste just like lasagna…,” I knew it was going in my back pocket of easy, “Patrick approved”, delicious recipes.
And it belongs in your back pocket too for all those busy nights when everyone is starting to get hangry (AKA hungry and tired) or simply any time you want to devour something extraordinary.
Why you’ll love this Lasagna Soup
- EASY ONE POT RECIPE. No tedious layering – dump the ingredients together and simmer!
- TASTES LIKE LASAGNA. Lasagna noodles are cradled in a beefy marinara broth, then cradled with Parmesan, mozzarella, and ricotta.
- ADEPTLY SEASONED. Onions, garlic, red pepper flakes, Italian seasonings, and a splash of balsamic create a symphony of flavors.
- SIMMERED TO PERFECTION. The noodles emerge delightfully al dente.
- CUSTOMIZABLE. You don’t have to use lasagna noodles! Use whatever pasta you have on hand, add veggies, use turkey or chicken sausage, go light on the cheeses or pile it on, etc.
What you’ll need for Easy Lasagna Soup
- Lasagna Noodles: Use regular lasagna noodles -NOT no boil lasagna noodles. Break the noodles into 1-2” pieces – they do not have to be perfect!
- Beef: Use lean ground beef, or for extra flavor, use half beef, half Italian sausage.
- Onion: Use one yellow onion diced small so the pieces soften quickly.
- Garlic: I use 5 garlic cloves but you can use more or less depending on your garlic love.
- Marinara sauce: Use one 24-ounce jar of your favorite marinara sauce. Use Prego as pictured, or my new favorite Rao’s brand which you can purchase on Amazon HERE.
- Crushed tomatoes: I recommend San Marzano tomatoes from the brands San Marzano, Cento and Muir Glen. They are highly prized for their sweet, intense tomatoey flavor and lower acidity.
- Tomato paste: Tip! Freeze leftover tomato paste by the tablespoon wrapped in parchment paper.
- Chicken broth: Use low sodium chicken broth so the soup isn’t too salty.
- Herbs and spices: This Lasagna Soup is seasoned to perfection with dried basil, thyme, oregano, and parsley, salt and a bay leaf.
- Red pepper flakes: A pinch of red pepper flakes adds an extra kick but will not make the soup spicy.
- Heavy cream: This mellows the acidity while adding a subtle creaminess and thickness to the soup.
Lasagna Soup Variations
- Pasta: Any small pasta shape will work.
- Bouillon broth: Use water plus chicken bouillon or chicken base to equal 8-10 cups broth. Omit the salt, then add salt to taste. You may also use vegetable broth but it is not as flavorful.
- Turkey sausage: Swap the lean ground beef for turkey or chicken sausage. I recommend adding a tablespoon of beef bouillon, reducing the salt, then salting to taste.
- Italian sausage: Use all Italian sausage for extra flavor. Use hot Italian sausage for a kick!
- Onion: Fresh is best, but you may substitute with 1 ½ teaspoons onion powder.
- Garlic: You may substitute with 1 ½ teaspoons garlic powder.
- Add vegetables: Carrots, celery, bell peppers, zucchini, green beans, spinach, etc. would all be tasty.
Best pot for soup
A large, 7-9 quart Dutch oven is ideal for making soup due to its capacity, heat distribution, heat retention, versatility, and durability. Its size allows for cooking large quantities of soup, while its even heat distribution ensures consistent cooking throughout. The cast iron is extremely durable while its enameled finish makes for easy cleanup.
My recommendation: Le Creuset offers an expensive Dutch oven (pictured in all my soup recipes) or a less expensive Chef’s oven with sloped sides (also great for soups). Alternatively, there are several less expensive options on Amazon like this highly rated one from Lodge.
How to Make Lasagna Soup
To make this One Pot Lasagna Soup, simply brown your beef (or half Italian sausage if you like), onions and garlic…
Then add all your remaining ingredients – Prego Traditional Italian Sauce, crushed tomatoes, chicken broth, spices…
And lasagna noodles!
Now the list of ingredients might seem long, but you are just dumping and running as the sauce simmers, cooking the noodles, and infusing the whole soup with Prego Italian goodness that smells nothing less than heavenly! Prego not only elevates this One Pot Lasagna Soup and can be the answer to your weeknight dinner dilemma without sacrificing any flavor! Finally, top your soup with ricotta, mozzarella and Parmesan – as little or as MUCH as you like and start slurping and shoveling, then repeat.

How to serve Lasagne Soup
Serving Lasagna Soup is where the fun is at! Ladle the soup into bowls, then top with desired amount of mozzarella, Parmesan and a dollop of ricotta. Stir the cheeses into the hot soup to melt and mingle with the noodles. Finish it off with a side of Caesar Salad and garlic bread!
Lasagna Soup Recipe Easy storage
Storage: Store Lasagna Soup in an airtight container in the refrigerator for 4-5 days.
To reheat: You may need to add a splash of broth before reheating. Reheat large batches on the stove over medium heat, or microwave for 90 seconds, stir, then continue to microwave for 20-second intervals, if needed.
Can you freeze lasagna soup?
I do not recommend freezing Lasagna Soup because the noodles can become mushy once thawed. If you would like to freeze the soup, omit the noodles and reduce the broth. When ready to enjoy, cook the lasagna noodles separately and add them to the thawed, warmed soup.

Cheese Garnish
- shredded mozzarella cheese
- freshly finely grated Parmesan cheese
- ricotta cheese
Instructions
- Heat large Dutch oven/large soup pot over medium high heat. Add beef and onion and cook, stirring occasionally until beef is browned. Add garlic and red pepper flakes and saute for 30 seconds. Drain off any excess fat.
- Add Prego Sauce, 6 cups chicken broth, crushed tomatoes, tomato paste, balsamic vinegar, sugar, spices, bay leaf and lasagna noodles. Bring to a boil then reduce to a simmer until lasagna noodles are tender, stirring occasionally (approximately 20-30 minutes).
- Discard bay leaf and stir in heavy cream (optional) and 2-4 cups chicken broth to reach desired consistency. Garnish individual servings with desired amount of cheeses.

**If you want to omit the heavy cream but still would like a thicker soup then I suggest whisking 2 teaspoons cornstarch with some of the chicken broth and adding to the soup to simmer and thicken.

Wondering if the lasagna soup recipe can be cooked in a crock pot? Basically just dump all the ingredients in, and set to cook for 8-10 hours? Will try the recipe none the less….

Hi Dee Dee! I have never made this in the crockpot but I would suggest browning the meat then adding it to the crockpot with all of the other ingredients except the noodles. Noodles can be a little funny in the crockpot so you can either turn the heat to HIGH and add the noodles the last 30+ minutes of cooking and simmer until tender or cook the noodles separately then add to the crock pot. Hope this helps!

I made this last night and while it was very yummy, the consistency was much more runnier than your pictures. I followed the recipe to a “t” minus the extra chicken broth at the end because it was too runny. Any ideas? I’m definitely going to make this again but use less chicken broth.

Hi Laura, So happy you enjoyed the soup! To make it less runny you can simmer it longer or at a higher heat. You can also stir more cheese directly into the soup and not just as garnish – this will definitely thicken it up. Hope this helps!

Made this for dinner last night and it was delicious! It was all the wonderful parts of lasagna that normally fall apart in the bowl anyways. A great way to thicken this up is to add an extra sheet of noodles, extra tomato paste, and let it simmer a little bit longer. It thickens right up! I made this tonight and it was amazing! The perfect meal for a cold, rainy day. I added about 3oz. of fresh spinach with the heavy cream at the end because I was too lazy to make a spinach salad. This was good but I think I was hoping for a meatier flavor than tomato-ey. Maybe I should’ve used Italian sausage instead. I loved the dump and go aspect and it really did feel like a comfort food meal. I am pretty sure I will make it again!

This looks really yummy! I wonder how it would work with a vegetable broth instead of a chicken broth (as my husband and I are vegetarians)? We have a hamburger substitute that we use in our lasagna so that part is covered. This recipe looks like it could be really good. HI Christina! I have never frozen this soup myself as it has always gone very quickly 🙂 but from my experience in freezing, pasta can become mushy, so I would freeze it without the pasta or cream and cheeses. If you end up trying it another way with success, please let me know!

Is it possible to make this in a crockpot?

Hi Kristin, if you make this in the crockpot, I would brown the meat and onions first and then you can simmer the sauce on low but I would not cook the noodles in the crockpot – I think their texture wouldn’t turn out quite right – but you could add cooked noodles to rest of the ingredients in the crockpot. I made this tonight- wonderful! I used whole wheat lasagna noodles (took about 10 minutes extra to cook) and 8 cups broth total, thickened with a cornstarch/broth slurry rather than the heavy cream option. Thank you for the recipe!

I made this yesterday and it was so very, very good and easy too! I used the heavy cream and I think it made it so much more creamy and yummy! The only problem I had was breaking the noodles as they just crumbled no matter how careful I was so I soaked them in some warm water for just a few minutes and then I was able to break them in nice 1-2″ pieces. Is there a trick to breaking the hard noodles? Anyway, we loved this recipe and I know we’ll make it many, many times. Thank you so much for sharing!

Hi Nicole! I am so happy you all loved this soup and found it easy! As far as the noodles go – I wish I had better advice for you! My only thinking is to try and snap them larger than you want them and they will naturally break smaller – so aim for a 3″ breaking point and it will break before that. You could also try scoring the noodles and then using a ruler to snap them – but that seems like too much work. Sorry I can’t be of more help – mine just broke “nicely” 🙂

I could not get this to thicken up. 🙁 I only used the 6 cups of chicken broth and then ended up adding corn starch with the heavy cream and let it simmer for almost an hour trying to thicken it up.
It was very good, just a bit too soupy. Do you have any suggestions? How much of the cheeses do you generally use?

Hi Heather, I am sorry you couldn’t get it to thicken, that is so odd! If you let cornstarch simmer for too long it can thicken and then thin again, otherwise, just simmering for an hour without the cornstarch should have been enough for it to simmer down. Next time you could try sprinkling the meat with 1/4 cup flour and cooking for 2 minutes and then adding the garlic and proceeding with the recipe as outlined. Hope this helps!

Oh. My. Goodness!!!! This was absolutely delicious! My husband is a Police Officer on 2pm-10pm shift, so I have to cook our meals around 1030-11am every day he works, I also homeschool my two teenage sons and my 9yr old son, I did double the entire recipe, except for the heavy cream I only used 1/2 cup, and cooked on low for about 49 minutes to get it super thick. Even with the little amount of cream it still thickened pretty well. This lasagna soup was super easy to make and really filling. I need more meals like this in my life for sure. We had this for lunch today and will also have again this evening. My husband will have some this evening also for his dinner. I served this with garlic bread, a salad and fresh fruit for dessert. I will definitely be trying more of your one pot meals. Thanks so much.

OMG…this was the bomb! LOVED it! I am trying to refrain myself from making it every week…lol. I love your recipes & the soups. Its coming into winter here so I am loving these comfort foods.
We came home hungry & cold after being out all day, I had the sauce simmering in the slow cooker, was not sure how it would turn out but that was the best comfort food and just what we needed, my husband & I could not stop raving about it.
I used vegetarian mince in mine & would definitely take your advice on pre-cooking the pasta first for the slow cooker, I did a lot of separating of the pasta but that does not matter, it was therapeutic…lol.

Since we made this Friday and it made so much (only two adults and 3 year old)I added more broth to leftovers yesterday and left it in slow cooker on low for afternoon. We have been busy this weekend with outside work and it has been feeding the three of us perfectly when we are ready. Plan on having more this afternoon. It’s a go too recipe for us now. Hey! How lean of beef do you recommend? Also do you only cook the beef until the outside is browned or till no pink. My meat was chewy when I made this so I’m wondering where I went off path. I also used a large skillet instead of a Dutch oven since I didn’t have one. Thanks!

Hi Ria, I use 85% lean ground beef. Your beef should be completely browned by the time the onion is done. As far as it not being chewy, using quality meat is key as well as not overstirring/manipulating the meat. Hope this helps!

Hi Tiffany! I would add the cornstarch the last 30 minutes and turn your crockpot to HIGH. I would definitely cook the noodles separately. Also, because the crockpot has a tightly sealed lid the liquid won’t evaporate as much so you will want to reduce the chicken broth by about 1/4. You can always add more later if its not enough. Hope this helps!

I just made this tonight (I love soup no matter what time of year). The only changes I made were to use Hunt’s Traditional Garlic pasta sauce because that’s what I had on hand and bow-tie noodles instead of lasagna noodles because the lasagna noodles I had were the oven-ready variety and I wasn’t sure how well they’d work – probably be just fine but I didn’t want to chance ruining it. We garnished with mozzarella, white cheddar, Parmigiano-Reggiano and cottage cheese (no ricotta on hand). I had a batch of homemade chicken broth which I used instead of canned. The soup was darned DELICIOUS and my husband requested I make it again! Thanks so much.

Ok so, seriously, the easiest, fastest, and MOST delicious lasagna ever. I made this for our wedding anniversary a few days ago since we both love lasagna, but with 3 kids ages 5 and under, I just don’t have time to do the traditional method, more like, i am way too distracted! I found this link on Natasha’s Kitchen, and I’m so glad i did. I subbed cottage cheese for ricotta and didn’t add the extra chicken broth at the end ( I simmered my soup on very low heat). Tasted just like regular lasagna except all the extra creamy tomatoey goodness that I love!

I prepared this recipe yesterday for our 1st cool day of the season, with a few tweaks using what I had on hand(1# Italian sausage and no ground beef; about 1/8 tsp. ground red pepper instead of red pepper flakes; 2+cups Mafalda pasta instead of lasagna noodles). This is Fabulous. I have made other one pot Lasagna’s and this is by far the best. I did add more spices as I make my own tomato sauce from cans so I needed to flavour it to match the jarred variety that was used in the original. I halved the stock and the noodles and added mushrooms. My shredded mozza went right into the pot as well. Nice and thick, full of flavour and just the right amount of creaminess even with whole milk rather than cream. This recipe is copied and thrown into my regular routine now. YUM.

I don’t recommend cooking your lasagna noodles in the crockpot because noodles can easily get a funky texture if cooked at too low of heat, so I would cook them separately then add them to the crockpot. Really good. Seriously. This is comparable to a traditional lasagna… but SO MUCH EASIER and faster! I use a whole box of uncooked lasagna noodles to make it even thicker. I put leftovers into a smaller casserole dish and then it’s just like a traditional lasagna the next day and can be sliced into squares for serving. Thanks for a great recipe!

i love this recipe but will not be using Prego, unless it’s what’s in my pantry already, which i doubt. i’ll also use the half-sausage/half-beef option and DEFINITELY the cream (there’s always cream in my fridge). i prefer fresh chopped/chiffonaded parsley/basil, but i can deal with dried oregano. i’m even considering dumping in a box of frozen spinach. should i defrost and squeeze the excess water out first, or just reduce the amount of liquid? what do you think?

What I love about this recipe is how easy it is to be made vegetarian or vegan. I omit the meat and cheese, and instead I add vegan cream cheese from Trader Joe’s (it’s also really good without any type of cream). I’ve made this for years and it is always a great choice!

This is an awesome recipe. I left a previous reply to someone who asked about freezing, but this comment is just to say thank you for posting such a delicious recipe. The only thing I did differently was use all hot Italian sausage instead of 1/2 beef / 1/2 sausage. The sausage was pretty lean, so didn’t make the soup too oily. But I added all of the seasonings, including max amount of pepper flakes even with hot sausage, because, well, we likes us some spicy food. 🙂 However, the addition of the cheeses mellowed out the heat, and that was just fine. I also used all 10 cups of chicken broth (homemade broth really kicks it up a notch IMO, if you have the time for that) and the 1/2 cup of cream. Super, super delicious. My hubby (also a Patrick) is a fan and asked that it be added to our rotation.
As I said in my other comment, I serve the pasta on the side because Pat and I have different preferences for the amount of pasta we like, and I dislike how pasta absorbs the liquid in soup when left overnight. I might halve the recipe some time and cook the pasta in just to try it. I’ll bet it’s amazing.

I absolutely love this recipe. I actually substitute the noodles with Bowties or other noodles to make it easier. I also add Mozzarella cheese into the soup at the end to make it a little cheesier, then add my dollop of ricotta and sprinkle more Mozzarella cheese and then sprinkle some Italian Seasoning atop as well.
I cannot tell you how many times I have made this and shared the recipe with friends and family.
AND, I am making it again tonight and making a double batch to freeze some for lunches for the week or month.

How did you break the noodles so perfectly?? I am older and have never had luck breaking lasagna noodles so they look nice or even. Suggestions would be wonderful. I reduced the chicken broth to 4 cups but otherwise followed the recipe as written but subbed the beef for ground turkey. I browned the turkey, onions, and garlic on the sauté setting. I wasn’t sure exactly which setting I should use, so I cooked on soup/broth for about 3 minutes and then switched to pressure cook for about 4 minutes and let the pressure release for about 15 minutes and then did quick release. I added the heavy cream at the end and it turned out perfectly! In the future I would probably just use the manual pressure cook for 6 minutes and use the same time for pressure release! Hope this helps for anyone asking about using the instant pot!

Finally got around to making this one, after the white lasagna soup being a favorite for the past few years. This was SO good! Even my tomato-soup-hating husband had two bowls. I used half and half instead of heavy cream and didn’t measure, so I’m sure I used over a cup. Subsequently I only added about one additional cup of broth right at the end. We thought the thickness of the soup was just right. I topped each bowl with a little shredded Parmesan and some burrata. Can’t wait for leftovers at lunch tomorrow!

I made this recipe for the family yesterday and it was delicious; yesterday and the leftovers today. I did do a few modifications. I used homemade deer sausage in place of Italian sausage, my favorite pasta sauce, added some brown mushrooms, used 4 cups chicken stock along with ~1 cup of water from rinsing the pasta jar out and didn’t use the heavy cream since the soup was already at the consistency I liked. We all liked the lasagna noodles, mine weren’t as precise in size, but we liked it. Being able to cut through noodles or slurp them up was yummy. Thanks for the recipe, it’s a save for me.

Well, we pulled this one out yet again and sold out! We volunteer at a Moose lodge in Fawnskin, CA and this is definitely a crowd-pleaser!! The weather turned south just a touch, so out came the soup for one last time. Truly love this recipe and wouldn’t change a thing. The vinegar is that “secret” ingredient that wows every time. I will be making this for the most part. I will be using tortellini instead of noodles. I have become a bit burnt out on tortellini soup and this is a good mix for fixing that. Thank you for the insight and idea.

I’m so glad! It doesn’t freeze very well as the noodles can become mushy once thawed. If in the future you would like to freeze it, leave out the noodles and reduce the broth. When you are ready to enjoy, cook the lasagna noodles separately and add them to the thawed, warmed soup. Hope this helps!

Another winning recipe!! Made this tonight per my daughter’s request and it blew us all away! I left out the cheese and cream because that’s our general preference – those who wanted it added shredded parm on top. This is a delicious and straightforward recipe – a definite keeper!!

Hi Lisa! I would definitely recommend using regular lasagna noodles or 2 1/2 cups uncooked small shells, just simmer for less time. Hope this helps!

Hey Pat! No-boil noodles act like a sponge and can easily become mushy in the soup. If you have other pasta noodles on hand, those will work perfectly fine!

I have made this recipe a few times for my family and making it again tonight! It is always a crowd pleaser. It is delicious and so much easier to make than traditional lasagna. I’m also not a huge fan of ricotta so I tend to never make lasagna or order when out so this recipe makes everyone happy since the cheese is added only at the very end.

I have made this soup many times. If I serve it to guests there is always a request for the recipe. Love that it freezes well. If it seems to soak up the broth during the frozen storage period I just add some broth to loosen it up. Thank you for this!
