These easy, cheesy beef taquitos are one of my favorite recipes to come out of my kitchen and will be the touchdown game day (or any day!) appetizer at all your gatherings and parties! You can even make the filling completely ahead of time for an easy roll and toast appetizer!

I love jalapeno poppers so much so that I’ve made Jalapeno Popper Dip (a MUST), Jalapeno Popper Muffins and now these Jalapeno Popper Taquitos!  There is just something about the ooey, gooey, cheesy spiciness that can’t be beat.  Or so I thought.  Add some beef and some Mexican seasonings and roll the deconstructed jalapeno popper in a tortilla and hello addicting deliciousness!

With this Crispy Jalapeno Popper Beef Taquito recipe yielding 12 taquitos, you would think it would serve 6 but for Patrick and I, it serves 2 because we just could not stop inhaling this beefy cheesy deliciousness.   And my friend who made the taquito video?  She said they were all gone in seconds after the last shot.  We are talking some serious, heavy hitting, undeniable deliciousness.

These Crispy Jalapeno Popper Beef Taquitos make a favorite-ever dinner or if you really want to steal the show at your next football party and have every guest begging you for the recipe, serve them as a new unique favorite-ever #partyfood!  In addition to their ridiculously delectable filling, these Crispy Jalapeno Popper Beef Taquitos are made with my very favorite TortillaLand tortillas that you purchase raw at Costco so they puff up and crisp up in minutes as you cook them in the skillet.  You can cook them without any oil at all but I like to use 1 teaspoon so they get even crispier.

I featured these TortillaLand tortillas specifically in my mouthwatering sweet heat Slow Cooker Honey Buffalo Chicken Taquitos, but I use these tortillas all the time because as my Mexican food connoisseur husband always says, Mexican food is only as good as the tortillas, and these TortillaLand tortillas are the best with far superior texture and fresh taste!  TortillaLand tortillas are made of five simple recognizable ingredients – wheat flour, water, canola oil, salt sugar – love the freshness.  So #gotortillaland and don’t skimp on the TortillaLand tortillas, they truly make a difference!

These Jalapeno Popper Beef Taquitos are done in under 30 minutes so you can be cheering on your favorite team from the sofa instead of the kitchen.  To make, simply, brown beef with jalapenos, onions and garlic. Stir in your fiestalicious spices, salsa and cream cheese followed by Pepper Jack Cheese.

Then roll your creamy, cheesy filling in your TortillaLand tortillas and shower the filling with more cheese.

Finally, cook your taquitos in the skillet for just a couple minutes and the TortillaLand uncooked tortillas puff to golden deliciousness.  Serve with guacamole, avocado crema, sour cream,  Pico de Gallo , Homemade Salsa, or Salsa Verde and either Cilantro lime rice or Restaurant-Style Mexican Rice

Crispy Jalapeno Popper Beef Taquitos

Ingredients

Instructions

  • Add beef, jalapenos and onions to a large skillet and cook over medium heat until onions are softened and meat is cooked through. Add garlic and sauté for 30 seconds. Drain off any excess fat (if there is any).
  • Stir in all of the spices/seasonings, followed by salsa and cream cheese. Heat over medium low heat until cream cheese is completely melted, stirring often. Stir in 1 cup pepper Jack cheese until melted. Remove from heat.
  • To assemble, add a heaping ¼ cup filling to the bottom third of each raw tortilla and top with a heaping tablespoon cheese. Tightly roll up tortillas.
  • Heat one teaspoon olive oil in a large nonstick skillet over medium heat (optional for extra crispiness). Working in batches, add taquitos and cook, until golden brown on all sides, rotating as needed.

    These were absolutely the best!!! I froze what my husband and I could not eat and we have been eating them once a week for the past 3 weeks. Just thaw, heat in the microwave, then toss them in a fry pan to “crisp” up. Amazing…………………………………

        I would cook them first to help prevent them from becoming soggy. Let them cool completely in a single layer then line on a baking sheet so they aren’t touching. Flash freeze for 1-2 hours or until solid, then transfer to a large freezer bag and squeeze out any excess air. Alternatively, wrap each taquito individually in foil then place in a freezer bag. Freeze for up to 3 months.

    For those of us that don’t live near a Costco or can’t find uncooked tortillas I used regular flour tortillas brushed with oil and baked them at 450 for ten minutes after filling the taquitos. Totally delicious!

    Tortilla Land Tortillas definately can’t be beat!!! We make a southwestern tostada with the tortillas. We cook the tortilla and then layer everything on the top and let it cook and warm together! Delicious!

    We don’t have a Costco in my town but I was excited to find these tortillas at my local Wal Mart in the refrigerated section near the Mexican cheeses and chorizo. I made these last night and they were a hit at my house…so yummy! I will be making these again for sure. Thanks for the great recipe!

    We loved this recipe! I have a super picky eater and he even asked for seconds. I can count on one hand how many times that’s happened.

    We did make one minor change. I didn’t have fresh jalapenos, so I substituted with diced pickled jalapenos. Stirred them in with the seasonings and salsa.

    Definitely plan on making these again. Only thing we might do differently is bake vs fry (for ease), but they were good made as directed!

    I haven’t made these yet, but they look delicious. I just had a question…how do the tortillas get “done” in the middle of the taquito? It looks like just the outside gets cooked, and not the middle.

      Hi Amy, they cook in the middle from residual heat but only the outsides get crispy. I hope you love them as much as us!

    These taquitos look delish! I’m super thankful for all the comments because I’d have hesitated to try them if I couldn’t find raw tacos. Now I know they can be made by brushing regular tacos with oil and baked, can be deep fried and made in various ways. Flexibility is great!

    Loooove this recipe! I made them a lot when I was in grad school and then “lost the recipe” until recently! I can’t wait to make them again. Question though – do you think they would turn out just as good if I air fried them instead of in the pan? Do you have any rec’s for cooking them that way?

    These look and sound absolutely delicious! Your recipes never disappoint. I’d love to try these, if you’ve got some pull with tortillaland maybe you could encourage them to come to Costco in Canada! Lol. We don’t have them here but I’d love to try this recipe with your recommended tortillas.

    These are going to be regular in my house. They were so easy to make, and so delicious. My picky 6 year old ate two! I didn’t add jalapeños, but otherwise made the recipe as is. Love all your yummy recipes!

    We loved these! Made a batch and froze them. Reheated them at 425F for 20-25 minutes flipping them halfway through bake time. Nice and crisp. Will make again.
