Don’t you just love a good snack mix? Â (like my Italian Parmesan Party Mix HERE) Â No matter the combo of pretzels, peanuts, chex cereal, etc., there is just something magical about all those contrasting textures crunching together in one bite. Â You almost don’t even need to add any extra flavovring to that big bowl of texture and it would still be hard to stay away. Â But of course, we always are going to make things better here at Carlsbad Cravings…
Enter this wonderfully addicting Lemon Snack  Mix!  The light, refreshing sweet and tangy combo is summer in bowl, in a handful, and in your mouth.  I love that its SO EASY, doesn’t heat up your kitchen and is make head/stores beautifully so there is no stressing about what to bring or bustling around the kitchen for a last minute snack or appetizer.
This Lemon Snack Mix is a delectable combiation of Crispix cereal (may FAV but may sub rice/corn chex), mini pretzels, Nilla Wafers (may sub graham crackers or animal cookies, and cashews (or peanuts). Â It reminds me of a cross between a snack mix and muddy buddies because after we mix all of our goodies together, they get smothered in White Chocolate Lemon Glaze followed by powdered sugar. Â best. thing. ever.
The White Chocolate Lemon Glaze is silky, sweet and slightly tangy and as simple as melting white chocolate, lemon curd, lemon juice, and lemon zest together. Â If you don’t want to make your own lemon curd (as this only uses ¼ cup), you can usually find lemon curd next to the jams/jellies at the grocery store in a similar looking jar. Â It makes this recipe, and is awesome to have on hand for sneaking a spoonful or its delectable on bread, pancakes, crepes, in oatmeal, with berries, as a cake filling, for thumbprint cookies, pre-baked tart shells, and on and on.
After you smother your Lemon Snack Mix with the luscious White Chocolate Lemon Glaze, you stir until all the mix is evenly coated. Â You can do this in a large bowl, Â or if the bowl is too tight, feel free to pour the mix onto your baking sheets for more working room. Â Once coated, we shower with powdered sugar AND lemon gelatin AKA lemon Jell-O for the perfect finishing touch to enchance the wonderfully delicious tangy sweetness.
At this point, the snack mix will be still a little “wet” from the glaze and will need to dry out for at least 30 minutes. Â Â As you periodically test for quality control purposes of course.

Ingredients
Snack Mix
- 6 cups Crispix Cereal
- 2 cups mini pretzel twists
- 2 cups mini Nilla Wafers may sub animal crackers or graham crackers
- 2 cups roasted salted cashews or peanuts
White Chocolate Lemon Glaze
- 1 1/2 cups white chocolate chips
- 4 tablespoons unsalted butter
- 1/4 cup jarred lemon curd*
- 2 tablespoons lemon juice
- zest from 2 large lemons
- 1 cup Powdered sugar
- 1/4 cup powdered lemon gelatin (Lemon Jell-0)
Instructions
- Line 2 baking sheets with parchment paper.
- Toss the Snack Mix ingredients together in a very large bowl.
- Combine the White Chocolate Lemon Glaze ingredients in a small bowl. Microwave at 50 percent power at 30 second intervals, stirring in between, until melted; whisk until smooth.
- Pour the White Chocolate Lemon Glaze over the Snack Mix a and toss until evenly coated. Divide Snack Mix between two baking sheets. Sprinkle with powdered sugar and lemon gelatin and toss until evenly coated.
- After being coated, spread Snack Mix on prepared baking sheets in an even layer and let dry; 30-60 minutes. Broil for a couple minutes to dry out further if desired.
- I would NOT store this mix in an airtight container as it can get soggy due to the glaze.

Step #4 and Step #5 are a little conflicting. Spread on the sheets twice?

Hi Terri, you divide the snack mix and then sprinkle with powdered sugar/gelatin and then spread evenly. Hope that helps!

If you wouldn’t store this mix in an airtight container, how do you store it? Just in an open bowl? Afraid of it getting stale as I probably shouldn’t eat this all at once 🙂

Hi Carrie, unfortunately this Snack Mix is best served the day of. If you are not serving for a party then I would store it on the baking trays in the oven.
