Toss the Snack Mix ingredients together in a very large bowl.
Combine the White Chocolate Lemon Glaze ingredients in a small bowl. Microwave at 50 percent power at 30 second intervals, stirring in between, until melted; whisk until smooth.
Pour the White Chocolate Lemon Glaze over the Snack Mix a and toss until evenly coated. Divide Snack Mix between two baking sheets. Sprinkle with powdered sugar and lemon gelatin and toss until evenly coated.
After being coated, spread Snack Mix on prepared baking sheets in an even layer and let dry; 30-60 minutes. Broil for a couple minutes to dry out further if desired.
I would NOT store this mix in an airtight container as it can get soggy due to the glaze.
