Grilled Chicken Caesar Wrap

  • LEMON BASIL CHICKEN. The best chicken wraps start with the best chicken!
  • SHORTCUT CHICKEN. Of course, you can use rotisserie chicken too.
  • BACON.BACON.BACON
  • HOMEMADE DRESSING. Use store-bought or hypnotic creamy, bright, tangy, garlicky, homemade Caesar dressing!
  • CRUNCH WRAPS. Enjoy them plain, or toast in a skillet or air fryer (without any oil) for that satisfying crunch!
  • CUSTOMIZABLE. Add or omit whatever you like!
  • Chicken: Chicken breasts or thighs are marinated in olive oil, lemon juice, basil, oregano, garlic, onion, and red pepper flakes.
  • Lettuce:  Use Romaine lettuce for its crunchy freshness.
  • Bacon: Use thick-cut bacon when possible for maximum crunch or turkey bacon.
  • Tomatoes: Halved cherry or grape tomatoes are ideal because they are juicy and sweet without being overly watery like other tomatoes.
  • Parmesan cheese: Look for imported Parmigiano-Reggiano from Italy, as opposed to domestic Parmesan which pales in comparison (they will be labeled Parmigiano-Reggiano and Parmesan).
  • Croutons: I recommend garlic herb croutons, as opposed to plain, for depth of flavor.
  • Seasonings: Minimal seasonings of garlic powder and pepper are required because the chicken, croutons dressing are highly flavorful.
  • Caesar salad dressing: This marries all of the flavors together with its bright, tangy, garlicky, umami creaminess. I highly recommend my homemade Caesar dressing it blows store-bought versions out of the water!
  • Chicken: Rotisserie chicken.
  • Lettuce: Pre-chopped lettuce or salad.
  • Bacon: Microwavable bacon or bacon bits.
  • Parmesan cheese: Refrigerated pre-shredded.
  • Croutons: Store-bought.
  • Dressing: Store-bought.

  • 1. Marinate chicken: Whisk all the marinade ingredients together and add the chicken. Marinate chicken for 4-12 hours in the refrigerator. You can prep the rest of the ingredients during this time.

  • 2. Cook chicken. Grill chicken undisturbed for for 5-7 minutes per side, or until chicken is cooked through. (An inserted thermometer should read 160 degrees F, then rise to 165 degrees with carryover.)

  • 3. Combine filling. Add the cooked chicken, lettuce, tomatoes, croutons, bacon, Parmesan cheese and dressing to a large bowl and toss to evenly combine.

  • 4. Assemble wrap. Place tortillas on a flat surface and add the filling towards the bottom third of the wrap. Wrap up burrito-style.

  • Don’t skip pounding chicken breasts before marinating. This makes a world of difference in producing crazy tender chicken without a long marinating time.
  • Don’t cook the chicken cold. Let the chicken sit at room temperature for 20-30 minutes for juicer, more evenly cooked chicken. This is the perfect time to get your filling ingredients ready. 
  • Use large tortillas. The large tortillas will ensure your filling stays in one place! Anything smaller than 10 inches is very difficult to wrap, so you may need to make tacos instead.
  • Warm the tortillas:  Cold tortillas are more likely to break and tear.  Wrap the tortillas in damp paper towels and microwave for 20-30 seconds.
  • Wrap them one at a time: After you warm the tortillas, assemble the chicken wraps one at a time so you can keep the unused tortillas covered and warm. 
  • Leave a border:  Leave a couple inches around the filling as a buffer for enclosing and wrapping.
  • Prevent soggy wraps: Use less dressing if not consuming immediately. Serve remaining dressing as a dipping sauce.

Ingredients

FILLING

  • 2 cups Lemon Basil Chicken recipe <-click for recipe OR 2 cups any shredded, cooked chicken
  • 6 slices bacon cooked, chopped
  • 3 cups Romaine lettuce, chopped
  • 2/3 cup cherry tomatoes, halved
  • 1/4 cup freshly grated parmesan cheese
  • 1/2 cup garlic herb croutons
  • 1/2 cup Caesar salad dressing <-click for the best homemade!
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper

WRAPS

  • 5 burrito size (10-12 inch) flour tortillas

Instructions

  • Chicken: Prepare Lemon Basil Chicken according to recipe directions (click HERE for recipe). Let rest 10 minutes before chopping. Chicken can be prepped 3-5 days ahead of time.
  • Filling: Add all of the Filling ingredients to a large bowl and toss to evenly combine.
  • Assemble: Place tortillas on a flat surface and add the filling towards the bottom third of the wrap in a line.
  • Wrap: Roll up tortillas burrito-style by folding the edges in next to the filling, folding up the bottom over the filling, then tightly rolling from the bottom, squeezing in any escaping filling as you roll. Place seam side down.
  • Toast (optional, recommended): Heat a cast iron skillet or nonstick skillet over medium-high heat. Working in batches, add wraps seam side down and toast, rotating as each side turns golden.
