Rotel Dip Recipe Ingredients

Let’s take a closer look at what you need to make this recipe (measurements in the printable recipe card at the bottom of the post):

  • Rotel: The namesake of the recipe! This recipe was tested with MILD Rotel-don’t drain before using. If you choose to use spicy, then omit the cayenne pepper and add to taste.
  • Lean ground beef: Adds hearty, savory flavor and protein. You may substitute with ground turkey or sausage.
  • Flour: Helps thicken the dip and stabilize the cheese sauce, preventing it from becoming grainy.
  • Salsa verde: Adds bright, tangy notes to cut through the richness of the dip. If you don’t have it on hand, you may substitute with milk.
  • Milk: Creates a smooth, creamy base for the cheese sauceโ€”any milk will work.
  • Cream cheese: Makes the dip luxuriously creamy and smooth. Use block style, full-fat so it melts beautifully without curdling.
  • Spices: Chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and cayenne pepper provide warmth, smokiness, and mild heat.
  • Mild or medium cheddar cheese: Melts perfectly into the dip without becoming grainy; shred fresh and avoid pre-shredded to prevent additives that stop smooth melting.

How to MAke Rotel Dip

Let’s take a closer look at how to make this recipe with step-by-step photos (full recipe in the printable recipe card at the bottom of the post):

  • Step 1: Cook the Beef. Brown the meat in a large skillet over medium-high heat until itโ€™s almost cooked through. Then add the flour and spices, and cook for one minute (ground beef should be fully cooked).

Rotel Cheese Dip Tips

  • Cook low and slow: Melt the cheese gently over low heat to keep it creamy and smooth.
  • Scrape up the browned bits: After adding the milk, salsa verde, and Rotel, use a wooden spatula to scrape the bottom of the pan to lift all the flavorful browned bitsโ€”these add extra depth and richness to your dip.
  • Use very soft cream cheese: Cube it and spread it out on a plate. Microwave for 30 seconds, then at 10-second intervals until super soft and almost melty. This will make it easy to blend with the milk and cheese without lumps.
  • Control thickness: The dip will thicken as it cools, so stir in milk or cream as needed to reach the perfect dip consistency.
  • Serve in a crockpot: Transfer the dip to a warm crockpot to keep it melty and crowd-ready for parties, game days, or casual gatherings.

Rotel Cheese Dip Recipe variations

  • Gluten Free: Replace the flour with one tablespoon of cornstarch mixed with the milk before adding it to the skillet.
  • Spicy Kick: Add additional cayenne pepper, or diced jalapeรฑos, serranos, or a splash of hot sauce for extra heat.
  • Bacon Lovers: Stir in cooked, crumbled bacon for smoky, savory goodness. See how to cook bacon in the oven.
  • Veggie Boost: Fold in sautรฉed onions, bell peppers, or corn.
  • Meat Swap: Substitute the ground beef for shredded chicken, chorizo, ground turkey, or sausage.
  • Cheesy Twist: Mix in pepper jack, Monterey Jack, or a blend of cheeses.
  • Taco Night Remix: Add black beans or pinto beans for a hearty, protein-packed dip.

Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons flour
  • 2 teaspoons chili powder
  • 1 ยผ teaspoons salt
  • 1 teaspoon ground cumin
  • 1/2 tsp EACH smoked paprika, garlic powder, onion powder
  • 1/2 teaspoon cayenne pepper, more or less to taste
  • 1 10 oz. can MILD Rotel
  • 1/2 cup mild salsa verde
  • 1 ยผ cup milk, plus more as needed
  • 8 oz. full fat block cream cheese, cubed and very soft
  • 2 cups freshly shredded mild or medium cheddar cheese (NOT SHARP! See Notes)

For Serving

  • Tortilla chips
  • Diced tomatoes
  • Cilantro
  • Hot sauce to taste

Instructions

  • Cook Beef: Brown the meat in a large skillet over medium-high heat until itโ€™s almost cooked through. Then add the flour and spices, and cook over medium heat for one minute (ground beef should be fully cooked).
  • Add Ingredients and Simmer: Stir in the Rotel with juices, salsa verde, and milk. Bring to a simmer while scraping the brown bits from the bottom of the pan, then cook over medium heat for 5 minutes, stirring occasionally.
  • Make it Cheesy: Reduce the heat to low and stir in the cream cheese until melted, then add the cheddar cheese, a handful at a time, until melted.
  • Adjust and Serve: Adjust to taste with hot sauce/cayenne pepper and/or salt. Thin with milk if desired. Serve with tortilla chips and additional garnishes. I recommend keeping it on the warm setting in a crockpot.

Notes

  • Rotel: This recipe was tested with MILD Rotel-don’t drain before using. If you choose to use spicy, then omit the cayenne pepper and add to taste.
  • Sharp cheddar isnโ€™t ideal for smooth dips because of its aging. As cheddar matures, its protein structure tightens and moisture decreases.ย  The low moisture means it doesnโ€™t melt into a creamy sauce; it separates into grainy solids and oily fat.
  • Useย very softย cream cheese: Cube it and spread it out on a plate. Microwave for 30 seconds, then at 10-second intervals until super soft and almost melty. This will make it easy to blend with the milk and cheese without lumps.
