  • Olive oil: Feel free to substitute with another neutral flavored oil or use a combination of oil and butter.
  • Parmesan cheese: Use only freshly grated cheese on a micro grater. The cheese isn’t a standout flavor but adds an alluring, salty, nutty depth.
  • Spices: Fragrant dried herbs like oregano, basil, and thyme infuse a rich, herbaceous depth, while paprika, garlic powder, salt, and pepper bring warmth and a subtle kick, creating a well-rounded flavor profile that elevates every bite.

  • You may need to cut some potatoes in half and leave some whole. These potato halves are about 1-1 ½ inches in size, but it really doesnโ€™t matter as long as the potatoes are cut into similar sizes so they roast evenly; then, be prepared to adjust the roasting time as needed.
  • Dry the potatoes thoroughly after washing, or they will steam instead of caramelize. The drier the potatoes, the crispier the skin!
  • Don’t use fresh herbs or garlic: These can burn at high roasting temperatures.
  • Spread out: Leave space between the potatoes for even roasting, or they will steam instead of becoming crispy. If you are scaling up the recipe, you must bake the potatoes on two baking sheets.
  • Season to taste: Make the potatoes perfect for YOU by adding freshly cracked salt or pepper after roasting.
