HOW TO freeze Turkey Noodle Soup Recipe
Freezing turkey noodle soup is straightforward but requires a few adjustments to maintain quality:
1. Avoid Adding Noodles: Omit the noodles and freeze the soup without them to prevent sogginess. Add fresh noodles when reheating.
2. Cool Completely: Allow the soup to cool before transferring it to freezer-safe containers.
3. Portion Appropriately: Freeze in single-serving or family-sized portions for convenience. Allow room in containers for the soup to expand as it freezes. Write the date and contents to ensure you use it within 2-3 months.
4. To Reheat: Thaw in the fridge overnight and warm gently on the stove, adding noodles if needed.
How to Reheat homemade turkey soup
Reheat large batches on the stove over medium-low heat, stirring occasionally until warmed through, adding additional broth as needed. For smaller batches or individual servings, transfer the soup to a microwave-safe dish and cover it with a microwave-safe lid or paper towel. Microwave for 90 seconds, stir, then microwave for 30-second intervals, if needed.
Homemade Turkey Soup FAQs
If your turkey soup tastes bland, it may be due to a lack of seasoning, insufficient richness in the broth, or underdeveloped flavors. Hereโs how to enhance it:
1. Season Generously: Add salt and pepper gradually, tasting as you go. Also, try herbs like parsley, thyme, or oregano.
2. Boost Flavor: Use additional chicken bouillon to deepen the broth’s taste.
3. Add Acidity: A lemon juice or vinegar splash can brighten flavors.
4. Simmer Longer: Allow the soup to simmer longer to meld ingredients fully.
This soup is meant to be brothy, but if you like to thicken the soup, try these methods:
1. Roux: Whisk equal parts flour and butter, cook until golden, then stir into the soup.
2. Cornstarch Slurry: Mix 1 tablespoon cornstarch with cold water and add gradually.
3. Pureed Vegetables: Blend some cooked carrots, potatoes, or other vegetables from the soup and stir them back in.
4. Mashed Potatoes: Add a spoonful or two for quick thickening.
5. Use Evaporated Milk: Replace 2 cups of chicken broth with one 12-ounce can evaporated milk.
Taste as you go to maintain balance!
Yes! Simmer turkey bones with water, onion, carrots, and celery for a few hours to make a rich homemade stock as the base for your soup.
Simmer the noodles for only 5 minutes before checking for doneness. Alternatively, cook the noodles separately and add them to the soup just before serving. This keeps them firm and fresh.
Itโs better to freeze the soup without the noodles. For the best texture, add freshly cooked noodles when reheating. See the post for instructions on freezing successfully.
Carrots, celery, onion, parsnips, potatoes, and leafy greens like spinach or kale complement turkey soup beautifully.
Absolutely! Rotisserie chicken is a great substitute for turkey, especially when you donโt have leftovers.
You can replace 2 cups of the chicken broth with cream or evaporated milk or blend a portion of the soup with potatoes or beans for a creamy texture.

Ingredients
- 3 cups leftover turkey, shredded (may sub rotisserie chicken)
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 medium yellow onion, diced
- 1 1/2 cups carrots, peeled and sliced 1/4-inch thick
- 1 1/2 cups celery, sliced โ -inch thick
- 4 garlic cloves, minced
- 9-10 cups low sodium chicken broth
- 2 teaspoons chicken bouillon (granulated, crushed cubes, or base)
- 1 tablespoon dried parsley
- 1 tsp EACH dried oregano, dried basil
- 1/2 tsp EACH dried thyme, salt
- 1/4 tsp EACH pepper, rubbed sage
- 2 bay leaves
- 2 cups wide egg noodles, uncooked
Instructions
- Melt the butter and olive oil over medium-low heat in a large Dutch oven/soup pot. Once melted, increase heat to medium-high and add onions, carrots, and celery; sautรฉ until the onions are softened, about 5-7 minutes. Add the garlic and sautรฉ for 30 seconds.
- Add the chicken broth, bouillon, spices, and bay leaves. Cover the soup to bring to a simmer, then displace the lid so it partially covers the pot, with about a one-inch opening. Simmer over medium-low for approximately 15 minutes until the carrots are tender, stirring occasionally.
- Add the noodles to the soup and bring to a vigorous simmer. Cook uncovered until al dente, approximately 5 minutes.
- Stir in the shredded turkey, and heat through for 1-2 minutes. Taste and season with additional salt and pepper if desired (if the soup is missing something, it's probably salt). Stir in additional broth for a less chunky soup. Serve immediately.
