OLD Lemon Chicken Pasta with Roasted Vegetables


Lemon Chicken Pasta is light and refreshing bursting with tender, juicy lemon basil chicken and garlic roasted vegetables tossed with lemon linguine, Parmesan and fresh herbs!   I could eat this for days!


Lemon Basil Chicken Pasta is summer on a plate that you will want to eat year round!  It’s quick and easy to prepare and you can customize the veggies, add bacon, more cheese, etc.  The possibilities are endless!

I have always been a big fan of vegetables.  I love their hearty texture and how they are a chamelon of flavor, absorbing whatever spices they are cooked with.  My brother, on the other hand, not such a fan.  Growing up, he would strategically position himself at the dinner table next to the floor vent so with one yawn, he could stealthy reach his arm back and drop his peas into the vent.  A dog would have come in very handy.

But if you do like vegetables, you will love the zucchini, asparagus and tomatoes tossed in olive oil, garlic, salt and pepper and then roasted until crisp-tender.   The seasoned vegetables and garlic infused olive oil are then tossed with the linguine along with fresh lemon juice, sauteed red onion, fresh oregano, thyme, parsley and basil.  There is so much fresh, garden flavor going on in this pasta you will feel bright and light before, during and after eating it!

The roasted vegetables, lemon and herb linguine is all topped with Lemon Basil Marinated Chicken.  Incredibly moist, tender and saturated with lemon basil goodness that with every forkful your eyelids will automatically be drawn shut so you can savor the juicy marinated  flavor.  Dramatic?  No.  Accurate?  Yes!

Eat the pasta as is, or go a little crazy and top with freshly grated Parmesan cheese and bacon.

Lemon Chicken Pasta with Roasted Vegetables

Ingredients

Roasted Vegetables

  • 1 12 oz. pkg. cherry tomatoes
  • 1 small zuchhini, halved and sliced
  • 1/2 bunch asparagus, ends trimmed, cut into 1” pieces
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Linguine

  • 1 pound linguine or thin spaghetti
  • 1 cup reserved pasta water
  • 1 small red onion, diced
  • 1/4 cup lemon juice (1-2 lemons)
  • 1 1/2 teaspoons fresh thyme or ½ teaspoon dry thyme
  • 1 tablespoon finely chopped fresh oregano 1 teaspoon dry oregano
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped

Garnish (optional)

  • freshly grated Parmesan cheese
  • crumbled bacon

Instructions

  • Roasted Vegetables: Preheat oven to 400°F. In a medium bowl, toss vegetables and garlic with olive oil, sugar, salt and pepper until well combined (there will be a generous amount of oil – this will transfer to the pasta later). Spread vegetables on a baking sheet lined with a slip mat or parchment paper. Roast for 15 minutes or until asparagus is crisp-tender.
  • Pasta: Meanwhile, cook pasta al dente in generously salted water. Drain and reserve 1 cup pasta water. Add pasta to a very large mixing bowl or pot.
  • Chicken: Meanwhile, remove chicken from marinade and proceed to grill chicken or cook indoors by heating 1 tablespoon olive oil in a nonstick skillet over medium high heat. Add chicken and cook for 3-5 minutes or until well browned on one side. Flip chicken over, reduce heat to medium, cover and cook an additional 5-7 minutes or until chicken is cooked through (time will depend on chicken thickness). Remove to a cutting board to rest for 5 minutes before slicing.
  • Assemble: Add red onion to the same skillet chicken was cooked in (add additional olive oil if necessary). Saute onions over medium heat until soft and translucent, approximately 5 minutes. Add red onion to the cooked pasta, along with thyme, oregano, parsley, basil, lemon juice, and roasted vegetables. Toss to combine. Add reserved pasta water (a little at a time) to reach desired consistency. Taste and add additional salt and pepper, and red pepper if desired.
  • Optional: Garnish with freshly grated Parmesan and bacon.

    Oh, my goodness, you are awesome. I was just looking at some of your other posts (the scalloped potatoes, which I sent to my daugher) and I had to check you out on Pinterest and just gave up and decided to follow all your pins. Not only do your recipes sound delicious, they look amazing! The only problem is right now, I am starving and I don’t have many great choices in my fridge and nothing that compares with what you presented. Wow!

        My daughter immedietly replied to the recipe for the scalloped potatoes and asked me if I was channeling her husband and that he told her that he thought they sounded AMAZING. She is a very good cook and he is always willing to try any new recipe. Seriously, what man (or person) doesn’t like cheese and bacon with anything?
