What is Caprese?
Caprese refers to something from or in the style of Capri, an Italian island. Culinary speaking, “Caprese” refers to its namesake – Caprese Salad of fresh tomatoes, basil and mozzarella. I am a little obsessed with Caprese. The plump, juicy tomatoes, creamy mozzarella and fragrant basil complimented by tangy balsamic are the quintessence of the perfect bite in my book. Healthy yet satisfying, fresh yet cheesy, creamy yet tangy.
I loooooove Caprese flavors so much I have celebrated them in my Caprese Chicken Salad with Asparagus, Avocado and Bacon, Caprese Pasta Salad, Caprese Pasta with Balsamic Chicken. and Sheet Pan Caprese Chicken and Veggies.because Capresiliciousness should be devoured in every form โ but I was still missing an uber quick, portable Caprese recipe ideal for lunch on the go or grab and go lunch in your kitchen. Enter Avocado Caprese Chicken Wraps. Enter the chicken wrap of chicken wraps.
These Wraps are a dream. The easy assembly, refreshing flavors, and meaty, cheesy, crunchy textures will leave your taste buds satisfied and your waist line happy. What sets these Avocado Caprese Chicken Wraps above the rest are: 1) the Balsamic Chicken, 2) the addition of luscious avocado and 3) using Flatoutยฎ Flatbread. So first, letโs talk chicken!
For the chicken itself, you can use a rotisserie chicken, leftover chicken, or make some chicken breasts ahead of time. Your pre-cooked, shredded chicken gets tossed and coated in a Balsamic โMarinadeโ of balsamic vinegar, splashes of olive oil, Dijon and lemon juice and seasoned with brown sugar, garlic powder, onion powder, salt and pepper. The pre-cooked chicken seeps up an astonishing amount of flavor and is eat-plain cravilicious.
You can prep the balsamic chicken while youโre making all your wraps or you can make and refrigerate the chicken at the beginning of the week so its ready at a seconds notice (as opposed to a minute 😊)
The assembly of these Avocado Caprese Chicken Wraps starts with Flatoutยฎ Flatbread – another one of my obsessions โ Iโve even made French Toast Roll Ups out of them (seriously flavor and texturally amazing)! Typically, a wrap is rolled in a tortilla but once I tried them in Flatoutยฎ Flatbread, they became my new go-to.
The flatbread is soft yet thicker than a traditional tortilla so it doesnโt tear or get soggy AND Flatoutยฎ Flatbread is actually good for you! I used Flatoutยฎ Multi-Grain with Flax which is made from 100% stone ground whole wheat and are high in fiber, with half the calories and half the carbs of two slices of 100% whole wheat bread! Flatoutยฎ also boasts a gluten free flatbread and many other flavor variations (their Italian Herb would also be amazing in these wraps).
Next, we smother the surface of our Flatoutยฎ Flatbread with either mayo, sour cream or yogurt โ totally your preference or what you have on hand. I like a combo of half mayo and half sour cream. This simple step is crucial as it adds a delightful creaminess and silky refreshing layer to compliment the hearty filling.
Next, itโs a simple layering of our crunchy romaine, balsamic chicken, creamy avocados or guacamole, milky mozzarella, juicy tomatoes, fresh basil and crispy bacon. Hello gorgeous! Iโve added the ingredient amounts in the directions, but just remember, these wraps are completely customizable โ there is no right or wrong way to fill your Avocado Caprese Chicken Wraps. You can even play it up with other flavor combinations such as sun-dried tomatoes, roasted bell peppers, etc., just as long as you donโt forget the Balsamic Chicken. Or bacon.
These quick and easy, crazy delicious Avocado Caprese Chicken Wraps mean no more boring, bland or unhealthy on the go lunches. They are best fresh (and like I said, take 15 minutes to throw together) but can be assembled the the night beforehand and refrigerated for an instant perfectly portable on the go lunch for all your end of summer fun!

Ingredients
- 4 Flatoutยฎ Flatbreads (I use Multi-grain with Flax)
Filling
- 1 1/4 cups shredded Rotisserie chicken
- 1/4 cup any combo of mayo, sour cream, or yogurt (I use 2T mayo, 2T sour cream)
- 2 cups chopped romaine lettuce
- 2 small Roma tomatoes, sliced
- 4 oz. sliced mozzarella cheese (may sub shredded)
- 1 large avocado or 2 small, sliced
- 1/2 cup basil, chiffonade
- 4 strips Cooked and crumbled bacon (optional)
Balsamic Chicken โMarinadeโ
- 3 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 1/2 teaspoons Dijon mustard
- 1 1/2 teaspoons lemon juice
- 1 teaspoon brown sugar
- 1/2 tsp EACH garlic pwdr, onion pwdr, salt
- 1/4 teaspoon pepper
Instructions
- Whisk all the Balsamic Chicken Marinade ingredients together in a medium bowl. Remove 2 teaspoons and add to a bowl with your chopped tomatoes. Toss to coat.
- To the remaining marinade, add chicken, stir until evenly coated.
- Spread the entire surface of each Flatbread with 1 tablespoon mayo/sour cream/yogurt.
- Evenly divide lettuce between flatbreads in a row in the bottom third of the flatbread. Top evenly with chicken, avocado, cheese, tomato, basil and bacon.
- Roll up flatbreads and slice in half. Serve with extra balamic vinegar if desired.

As an Italian, I’m crazy about Caprese, too. We may not be able to grow a whole lot in our yard but basil we can. We have lots of basil and frankly, I could roll around in it and wear it as perfume. I made a grilled portabella mushroom caprese and if you like portabella mushroom it tastes fantastic. We are big mushroom eaters and this has been one of our favorites. I want to find a easy & good “make your own rotisserie chicken”, you know like Costco’s (don’t have a Costco nearby).
The wraps look easy enough. I think I may want to warm or slightly melt the Mozzarella.

This was a perfect dinner for summer! I love anything caprese, add in chicken and avocado and wow! I used spinach herb tortillas for wraps. I may add balsamic glaze next time. Awesome recipe!
