Lemon Garlic Aioli

- 4 cloves garlic, minced
- 1ยฝ tablespoons freshly squeezed lemon juice
- 1 cup mayonnaise (see Notes for yogurt/sour cream)
- 1/2 teaspoon Dijon mustard
- ½ tsp EACH paprika, dried dill (or 2 tsps fresh dill)
- 1/4 tsp EACH salt, pepper
Instructions
- Stir the garlic and lemon juice in a medium bowl. Let it rest for 15 minutes for the flavors to meld.
- Meanwhile, you can measure the remaining ingredients into a second bowl or wait to add them to the lemon/garlic after 15 minutes.
- After 15 minutes, add the remaining ingredients and stir until combined. Time permitting, refrigerate for 15 minutes.
- Season with additional salt, pepper, and lemon juice to taste.
