Why These Are the Best Pecan Pie Bars

Pecan pie bars look simple, but the gap between gooey, sliceable squares and a soggy, cloying slab comes down to a handful of choices I dialed in batch by batch. I started with my Best Pecan Pie and ended with the Best Pecan Pie Bars:

• A CREAMED BROWN SUGAR SHORTBREAD bakes up tender and buttery yet sturdy enough to slice cleanly—no rolling, crimping, or soggy bottoms.
• POURING THE FILLING ONTO A HOT CRUST seals the surface instantly, so the shortbread stays crisp instead of soaking up the custard.
• A FILLING BUILT FOR BARS uses a touch of flour and less butter than my pie, so the thick, gooey layer sets firm enough for clean squares without pooling butter on top.
• A FULL 3½ CUPS OF PECANS and a finishing sprinkle of flaky sea salt balance the rich filling with nutty crunch and salty-sweet contrast in every bite.
• A WARM SPICE BLEND of cinnamon, nutmeg, and cloves—something most pecan pie bars skip—plus a splash of maple syrup turns one-note sweetness into cozy, layered holiday flavor.

Pecan Pie Bars Ingredients

Let’s take a closer look at some key ingredients you’ll need to make this recipe (measurements in the printable recipe card at the bottom of the post):

  • Butter: Room temperature for the crust (soft enough to dent with a finger, but not shiny or greasy) so it creams into a tender shortbread. The filling uses melted butter, cooled slightly so it doesn’t cook the eggs.
  • Sugars: Light brown sugar gives the crust a gentle caramel note. Dark brown sugar in the filling brings molasses depth, so it needs only a little granulated sugar.
  • Dark corn syrup: The secret to pecan pie’s glossy, gooey texture—it keeps sugar crystals from forming, so the filling never turns grainy. And no, it isn’t high-fructose corn syrup.
  • Pure maple syrup: Use the real thing, not pancake syrup. A dark, robust grade has the most flavor.
  • Eggs: Room-temperature eggs whisk smoothly into the filling instead of firming up the melted butter. Set them in warm water for 5 minutes if you forget to pull them out.
  • Flour: Builds the shortbread, and 2 tablespoons in the filling help it set into sliceable squares.
  • Vanilla, salt, and warm spices: Cinnamon, nutmeg, and cloves add holiday warmth, while salt keeps the sweetness in check.
  • Pecans: Chop them roughly—big pieces give every bite crunch, while finely chopped pecans disappear into the filling. Taste one first; pecans go rancid quickly and will ruin the whole pan.
  • Flaky sea salt: Maldon-style flakes add little pops of contrast. Fine table salt sprinkled on top tastes harsh.

How to Make Pecan Pie Bars

Let’s take a closer look at how to make this recipe with step-by-step photos (full recipe in the printable recipe card at the bottom of the post):

  • Step 1: Cream the crust. Beat the butter, brown sugar, and salt until pale and fluffy, about 2 minutes. Mix in the flour on low just until clumps form and no dry flour remains.
  • Step 2: Press and chill. Press the dough into an even layer, paying extra attention to the corners. Chill 15 minutes while the oven heats to 350°F.
  • Step 3: Par-bake. Bake until the edges are golden and the center looks dry, 18–22 minutes. Flatten any puffed spots with the back of a spoon.

  • Step 4: Mix the filling. Whisk the filling ingredients just until smooth while the crust bakes.
  • Step 5: Assemble. Immediately scatter the pecans over the hot crust and pour the filling evenly on top.
  • Step 6: Bake. Bake 30–40 minutes, until the center reads 200°F or barely jiggles and springs back when tapped. Sprinkle with flaky salt right away.

  • Step 7: Cool and chill. Cool completely, then refrigerate for at least 2 hours before slicing.

Tips for Perfectly Gooey Pecan Pie Bars

• The pan matters: Glass and ceramic heat slowly, so the edges overbrown before the center sets. If glass is all you have, bake at 325°F and plan on extra time.
• Trust a thermometer over the clock: Pull the bars too early and the filling stays runny; leave them too long and it turns grainy, cracked, and hard. 200°F in the center is the sweet spot.
• Don’t overwhisk the filling: Whipping in air creates a foamy, pale top instead of a glossy one.
• Slice cold, serve at room temp: Chilled filling cuts cleanly, while warm filling smears. Press a long chef’s knife straight down rather than sawing, and wipe the blade between cuts. Then let the bars sit 20–30 minutes so the filling turns gooey again.

Pecan Pie Bar Variations

• Chocolate pecan pie bars: Scatter 1 cup semisweet chocolate chips over the crust with the pecans. Love that combo? Try my Chocolate Pecan Pie.
• Bourbon pecan pie bars: Whisk 2 tablespoons bourbon into the filling. Its warm bite cuts the sweetness and plays beautifully with the maple.
• Brown butter: Brown the filling butter until nutty and amber, then cool slightly. It adds a toasty, toffee-like depth.
• Espresso: Add 1 teaspoon espresso powder to the filling to deepen the caramel flavor without tasting like coffee.
• Additions: Toffee bits, ½ cup shredded coconut, or ½ cup dried cranberries for a tart, festive contrast. If using, toffee or cocount, reduce the sugar.

What to Serve with Pecan Pie Bars

• Toppings: A dollop of lightly sweetened whipped cream or a scoop of vanilla ice cream adds a cool, creamy contrast to the chewy filling.
• A creamy pumpkin dessert: Smooth, spiced pumpkin balances rich, nutty bars on a holiday dessert table. Try my Pumpkin Pie, Mini Pumpkin Pies, or No-Bake Pumpkin Cheesecake.
• Something fruity: Tart apples cut through all that caramel sweetness—Traditional Apple Pie is the classic partner.

Pecan Pie Bars FAQs

Can I turn my favorite pecan pie recipe into bars?

Yes, but not by simply pouring it into a 9×13 pan. The pan has more than twice the surface area of a pie plate, so one batch of pie filling bakes up thin. Increase the filling by about a third and add a couple of tablespoons of flour so it sets firm enough to slice.

Why are my pecan pie bars runny?

They were either underbaked or cut before chilling. If the center hasn’t reached 200°F, return the pan to the oven. If they’re fully baked, they just need a few more hours in the fridge to set.

Why did my filling turn grainy or crack?

The bars were overbaked. Once eggs go much past 200°F, the custard tightens and separates. Start checking at 30 minutes, especially in a dark metal pan.

Can I make these in an 8×8 pan?

Yes—halve every ingredient, using 2 eggs. Par-bake the crust 15–18 minutes and start checking the filling at 25 minutes.

Ingredients

Brown Sugar Shortbread Crust

  • 3/4 cup (1½ sticks) unsalted butter, at room temperature
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour

Filling

  • 4 eggs, at room temperature
  • 1 cup dark corn syrup (see notes for substitute)
  • 1/3 cup pure maple syrup
  • 2/3 cup packed dark brown sugar
  • 1/3 cup granulated sugar
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 2 tablespoons all-purpose flour
  • 2½ teaspoons vanilla extract
  • 3/4 teaspoon EACH salt and ground cinnamon
  • 1/4 teaspoon EACH ground nutmeg and ground cloves

Pecans and Topping

  • 3½ cups (about 14 oz.) pecans, roughly chopped (not too fine)
  • Flaky sea salt for sprinkling

Instructions

  • Prep the pan: Line a 9×13-inch pan with parchment paper, leaving extra hanging over the long sides so you can lift the bars out later. (See notes if using a glass pan.)
  • Make the crust: Beat the butter, brown sugar, and salt using the paddle attachment on a stand mixer on medium speed until light and fluffy, about 2 minutes. Scrape down the bowl. Add the flour and mix on the lowest speed just until the dough comes together in clumps, 30–45 seconds. Stop as soon as no dry flour remains.
  • Press and chill: Press the dough evenly into the pan, using floured fingertips or the bottom of a measuring cup. Make sure the corners and edges are as thick as the center. Don’t prick it with a fork. Chill the pan for 15 minutes while the oven heats to 350°F.
  • Par-bake the crust: Bake 18–22 minutes, until the edges are golden and the center looks dry and set. If the center puffs, press it flat gently with the back of a spoon as soon as it comes out of the oven.
  • Make the filling: While the crust bakes, whisk all the filling ingredients together in a large bowl until just combined. Don’t overwhisk, or the top will be foamy.
  • Assemble: Scatter the pecans evenly over the hot crust right away, then pour the filling over the top.
  • Bake: Bake for 30–40 minutes, until the center reads 200°F on an instant-read thermometer (it barely jiggles and springs back when you tap it lightly). If the edges darken too quickly, tent the pan loosely with foil around the 25-minute mark.
  • Salt and cool: Sprinkle flaky sea salt over the bars as soon as they come out of the oven. Cool completely on a wire rack for about 1½ hours, then refrigerate at least 2 hours, until firm.
  • Slice and serve: Use the parchment to lift the bars out of the pan. Cut them while they’re cold with a sharp knife, wiping the blade between cuts for clean edges. Let the bars sit at room temperature for 20–30 minutes before serving, so the filling softens and the flavors come through.

Notes

  • Corn syrup substitute: Golden syrup (Lyle’s) can replace the dark corn syrup 1:1. For flavor closer to dark corn syrup, use 1 tablespoon of molasses in place of 1 tablespoon of the golden syrup.
  • Glass pan: Glass heats slowly, so the edges overbrown before the center sets. If glass is all you have, bake at 325°F and plan on extra time.
  • Storage: Refrigerate in an airtight container for up to 5 days. To freeze, wrap them well and freeze for up to 3 months, then thaw overnight in the refrigerator.
