OLD Chipotle Mango Salsa

Remember when I said I dream of mangos, chipotle peppers and bacon?

Chipotle-Mango-Salsa--mainWell this has two of the three, and to make up for the absence of crispy bacon, it can be served with crunchy chips!  So in my eyes, it doesn’t get much better than this.

Chipotle-Mango-Salsa8Sweet mangos, creamy avocados, crunchy red bell peppers, sweet corn and black beans brightened by lime juice and cilantro then spiced to your desired heat with chipotle peppers.

Chipotle-Mango-Salsa5Its fresh, vibrant, delish and simple to make!  Just chop, toss, eat!

Chipotle-Mango-Salsa3This salsa delishifies chips, tacos, salads, salmon, nacho chicken (oh yes, I have that one coming for you!), and is even fabulous plain!  Patrick was actually eating this straight out of the bowl as he repeatedly said, “This is SO good!”  

Chipotle-Mango-SalsaThis Chipotle Mango Salsa is perfect for spring and summer gatherings and perfect for you because you can tailor this salsa to your personal tastes by adding more or less of any of the components.  Sometimes I half the recipe and add more mango, because we know how much I LOVE mangoes!

When I devour this Chipotle Mango Salsa, its the one time I want my salsa to chip ratio to be 10-1 with more salsa because “This is SO good!”

Chipotle Mango Salsa with Black Beans, Avocado & Sweet Corn

Ingredients

  • 2 large mangoes, chopped
  • 2 small avocados, chopped
  • 1 1/2 cups fresh corn from 2 ears sweet corn (may sub sweet frozen corn/thawed)
  • 1 15 oz. can black beans, rinsed and drained
  • 1 red bell pepper, chopped
  • 1/4 large red onion, chopped
  • 1-3 tablespoon chipotle pepper in adobo sauce, minced (from canned chipotle chilies)
  • 2 garlic cloves, finely minced
  • 1/4 cup lime juice
  • 1/3 cup fresh cilantro, roughly chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Add all the ingredients (starting with just 1 tablespoon chipotle peppers) to a medium mixing bowl and toss well. Taste and add additional chipotle peppers, salt, pepper, lime etc. to taste if desired.

Notes

You can adjust the salsa to your own personal preferences by adding more or less (or leaving out completely) any of the components.

      That is so nice Tara! I use a Canon Rebel T3i, 17-75 lens. I usually have it set to a 70 zoom and am about 2 -3 feet away from the food. Thanks again!
