Why you’ll love this Jennifer Aniston Salad Recipe

This recipe is a meal-prep-friendly salad you’ll actually crave all week! Here’s why you’ll love it:

•Protein-packed. Chicken, quinoa, chickpeas, and feta make every serving hearty and satisfying. Adding chicken transforms it into a complete meal.
•Roasted chickpeas take it to the next level. Instead of using chickpeas straight from the can, crispy roasted chickpeas tossed in a little lemon vinaigrette add an irresistible golden crunch and extra flavor.
•Next-level flavor-infused vinaigrette. Dijon mustard helps create a smooth, emulsified dressing, fresh lemon juice brightens every bite, and oregano, basil, and a pinch of red pepper flakes add layers of complexity.
•Fresh and flavorful. Every bite is loaded with crisp vegetables, fresh herbs, crunchy pistachios, and bright lemon dressing.
•Perfect for meal prep. The flavors continue to develop as the salad chills, making it even better the next day.
•Easy to customize. Swap proteins, vegetables, herbs, or cheese based on what you have on hand.

Jennifer Aniston Salad Ingredients

Let’s take a closer look at some key ingredients you’ll need to make this recipe (measurements in the printable recipe card at the bottom of the post):

FOR THE quinoa salad

  • Quinoa: Cooking the quinoa in chicken or vegetable stock instead of water infuses every grain with extra savory flavor. Use pre-rinsed or rinse it yourself.
  • Chickpeas: I like to remove the skins and roast them, but that is optional.
  • Fresh vegetables: Crisp English cucumber adds refreshing crunch, while finely minced red onion provides a mild bite.
  • Pistachios: Roasted salted pistachios add buttery crunch, rich flavor, and a satisfying contrast to the tender quinoa and creamy feta. Buy them shelled for a shortcut.
  • Feta cheese: Crumbled feta adds a creamy, salty finish. Use a block of feta for the best flavor and texture, if available.
  • Fresh herbs: A generous combination of fresh parsley and mint gives this Mediterranean-inspired salad its signature bright, fresh flavor.

For the Lemon Dressing.

  • Olive oil: Creates the rich, flavorful base for the homemade lemon vinaigrette. Use a good-quality extra virgin olive oil for the best taste.
  • Fresh lemon juice and zest: Brighten the salad with fresh citrus. Zest the lemon first, then juice it.
  • Red wine vinegar: Adds tangy acidity that makes the flavors pop and gives the dressing a more complex flavor.
  • Dijon mustard: Helps emulsify the dressing so the oil and vinegar blend smoothly while adding a subtle savory depth.
  • Honey: A touch of sweetness balances the lemon and vinegar.
  • Garlic and seasonings: Fresh minced garlic and dried oregano, basil, salt, pepper, and red pepper flakes add layers of Mediterranean-inspired flavor and a gentle kick of heat.

How to MAke Jennifer Aniston Salad

Let’s take a closer look at how to make this recipe with step-by-step photos (full recipe in the printable recipe card at the bottom of the post):

  • Step 1: Make the Dressing. Add the ingredients to a small bowl or jar and whisk/shake to combine. I LOVE this salad dressing mixer (it’s so great I give it as a gift).

  • Step 2: Roast Chickpeas (Optional). I roast my chickpeas while my quinoa is cooking because I prefer them on the crispy side. Dry them thoroughly and remove any loose skins. Bake without any oil for 15 minutes, then toss with oil and bake an additional 10-15 minutes.

  • Step 3: Rinse the Quinoa. Rinse the quinoa in a fine-mesh strainer under cold water, rubbing the grains gently with your fingers.
  • Step 4: Cook Quinoa. Add the broth to a small saucepan and bring to a boil over high heat. Add the quinoa, turn the heat down to low, and cover. Simmer until the quinoa is tender and the broth has been absorbed.

Tips for the Best Jennifer Aniston Salad

•Rinse the quinoa before cooking. Quinoa is naturally coated with saponin, which can create a bitter or soapy flavor. Rinse it well or purchase quinoa labeled pre-rinsed.
•Let the quinoa cool completely before assembling. Warm quinoa can wilt the fresh herbs and vegetables and make the feta soften too much. Pop it in the fridge, or if you’re in a hurry, spread it out on a baking sheet to cool faster. It can also be cooked and refrigerated 2 days ahead.
•Finely chop the fresh herbs. Parsley and mint are key flavor components, and finely chopping them helps release their oils and distribute their bright, fresh flavor throughout the salad.
•Let the salad rest before serving. While you can enjoy the salad immediately, if you give the assembled salad at least 30 minutes in the refrigerator, the dressing has time to mingle with the ingredients for more flavor.
•Adjust to taste before serving. Quinoa and chickpeas absorb flavors, so taste the salad after chilling and add more lemon juice, salt, pepper, or feta as needed to brighten the flavors.

Jennifer Aniston Quinoa Salad variations

  • Use a different grain: Substitute with farro, bulgur, couscous, brown rice, or cauliflower rice.
  • Dairy-free: Omit the cheese or use a dairy-free feta alternative.
  • Change the cheese: Try goat cheese, queso fresco, Parmesan, or shaved asiago.
  • Swap the nuts: Use sliced almonds, chopped walnuts, pecans, sunflower seeds, or pumpkin seeds, although pistachios are my fav!
  • Add more vegetables: Customize your salad with cherry tomatoes, roasted red peppers, bell peppers, avocado, carrots, or baby arugula.
  • Switch up the protein: This salad is delicious with grilled chicken, ground chicken or turkey, shrimp, salmon, or steak. You can also leave out the chicken for a vegetarian quinoa salad.
  • Make it sweeter: Add dried cranberries, raisins, chopped dates, or pomegranate arils.

How to Serve Jennifer Aniston Chickpea Salad

This chicken quinoa salad is hearty enough to serve as a complete meal, but it’s also versatile enough to fit any occasion.

•As a meal prep lunch: Portion into individual containers for easy grab-and-go lunches throughout the week. Add extra lemon juice or dressing just before serving to freshen the flavors.
•As a light dinner: Serve chilled or at room temperature with warm pita bread, naan, or a simple soup for a satisfying meal.
•As a side dish: Omit the chicken or serve smaller portions alongside grilled chicken, steak, salmon, or Mediterranean-inspired dishes for a fresh, flavorful side.
•For entertaining: Serve it at picnics, potlucks, barbecues, or summer gatherings because it holds up well at room temperature and tastes even better after the flavors meld.
•As a wrap or bowl: Spoon the salad into pita bread, lettuce cups, or a grain bowl with extra greens and toppings for a fun variation.

Jennifer Aniston Salad FAQs

Why is it called the Jennifer Aniston Salad?

The salad earned its name after a quinoa salad recipe went viral online and was rumored to be the salad Jennifer Aniston ate every day while filming Friends. While Jennifer has said that wasn’t actually the case, the name stuck and the recipe became one of the internet’s most popular healthy salad trends.

Is Jennifer Aniston Salad healthy?

Yes! This salad is packed with nutrient-dense ingredients, including protein-rich chicken and quinoa, fiber-filled chickpeas, fresh vegetables, herbs, healthy fats from pistachios and olive oil, and plenty of flavor from the homemade lemon dressing.

Can I make Jennifer Aniston Salad ahead of time?

Absolutely. This salad is ideal for meal prep because the flavors improve as it sits. Prepare it up to 4–5 days ahead and store it in an airtight container. For the freshest texture, add delicate toppings like avocado or extra nuts just before serving.

Can you freeze Jennifer Aniston Salad?

No, freezing is not recommended because the cucumbers, fresh herbs, and dressing-based ingredients will lose their crisp texture once thawed. The cooked quinoa and chicken can be frozen separately, then combined with fresh ingredients when ready to serve.

Ingredients

Quinoa Salad

  • 1 15 oz. can chickpeas, drained and rinsed
  • 1 cup dry quinoa (uncooked)
  • 2 cups chicken broth (may use vegetable)
  • 1 1/2 cups shredded chicken (optional, like rotisserie)
  • 1 English cucumber, sliced & quartered
  • 1/2 cup diced red onion
  • 1 cup roasted salted pistachios, chopped
  • 1 cup (4 oz) crumbled feta cheese
  • 1/2 cup packed flat leaf parsley, minced
  • 1/2 cup loosely-packed fresh mint leaves, minced

Lemon Vinaigrette

Instructions

  • Preheat oven: If roasting chickpeas (optional), preheat the oven to 425°F.
  • Dressing: Add the ingredients to a small bowl or jar and whisk/shake to combine. I LOVE this salad dressing mixer (it’s so great I give it as a gift). Refrigerate until ready to use.
  • Roast the Chickpeas (Optional): See the Notes for directions. I roast my chickpeas while my quinoa is cooking because I prefer them on the crispy side.
  • Rinse the Quinoa (or use pre-rinsed): Place the quinoa in a fine-mesh strainer and rinse thoroughly under cold water for at least 30 seconds, rubbing the grains gently with your fingers. (This removes the natural coating called saponin, which can make quinoa taste bitter or soapy.)
  • Cook Quinoa: Add the broth to a small saucepan and bring to a boil over high heat. Add the quinoa, turn the heat down to low, and cover. Simmer until the quinoa is tender and the broth has been absorbed, 12-15 minutes. Fluff the cooked quinoa with a fork, then transfer to a large bowl. Place in the refrigerator to cool while you prep the salad ingredients. (The quinoa can be cooked two days ahead of time and refrigerated in an airtight container.)
  • Combine: Top the chilled or room-temperature quinoa with the remaining salad ingredients. Drizzle with the desired amount of dressing, then toss to combine.  Time permitting, chill for 30 minutes or serve immediately. Season with salt, pepper, or lemon juice to taste. Refrigerate for up to 4-5 days.

Notes

How to Roast Chickpeas (Optional):

  1. Prep: Preheat the oven to 425°F. Line a (half) baking sheet with parchment paper and lightly spray it with nonstick cooking spray.
  2. Dry: Spread the chickpeas out on a kitchen towel and cover them with another towel. Gently roll them around to loosen some of the skins and to thoroughly dry them (the drier, the crispier!). Remove any loose skins (you don’t have to remove too many, just whatever easily pulls away for even crisper).
  3. Bake Without Oil: Transfer to the prepared baking sheet and spread into an even layer. Bake at 425°F for 15 minutes without any oil/spices.
  4. Bake with Oil: After 15 minutes, toss the chickpeas with 1 teaspoon of the dressing, then spread into an even layer. Bake an additional 10-15 minutes, or until they reach your desired crispiness.
  5. Cool in Oven: Turn off the oven and prop the door open slightly, then let the chickpeas cool inside until ready to use—this helps them dry out thoroughly and get extra crispy.
