ย Celebrating National Dairy Month in June with foolproof 5 Minute Silky 5 Minute Chocolate Sauce AND The Dairy Good Cookbook!ย
Happy National Dairy Month!ย Milk, cheese, sour cream, cottage cheese, cream cheese, yogurt, ice cream, ice cream covered in chocolate sauce – this chocolate sauce – I ย love it all! ย I was the reason my mom had to make โin-betweenโ grocery shopping trips just for milk because I would guzzle it glass after glass.
The Dairy Good Cookbook is from Americaโs 47,000ย dairyย farm families celebrating the people who work hard to bring us delicious, wholesome, nutritious, versatile dairy foods and products. The book shares 113 tried and true, scrumptious, easy-to-make recipes starting with Sunrise Breakfast featuring delicious farm fresh breakfast creations such as Fresh Berry-Stuffed French Toast with Vanilla Yogurt Sauce, Summer Vegetable Frittata and Pancake Stratas.
Next, it’s time for Midday Lunch featuring a huge variety of soups, sandwiches, salads, pizzas, and on and on such as Toasted Italian Chicken Subs, Blackened Fish Tostadas with Watermelon Salsa and Caraway Cheese Soup.ย Are you drooling yet?ย I am.ย Especially because I am looking at the gorgeous photos of each of the recipes.ย Oh my goodness.ย I donโt know what to make first!
Next, it’s Sundown Supper including recipes such as Parmesan Chicken Fettuccine, Slow Cooked Beef Stroganoff and Roasted Sweet Potato Empanadas with Garlic-Red Pepper Dipping Sauce.ย Finally, letโs finish our epic palate-pleasing day with After Dinner Desserts such as Triple-Layer Chocolate Cake with Vanilla Buttercream, Honey-Roasted Caramel Pie and/or Caramelicious Milksicles.ย I want to try every recipe, but I have a special place in my heart for caramel โ actually, half of my heart might be dedicated to caramel.ย Smooth, rich, creamy, velvety caramel.ย ย I want that Caramellicoius Milksicle. ย Now.
There also is another complete section dedicated to sides, and special occasion recipes because The Dairy Good Cookbook does it right. What I love almost as much as the recipes, is getting to know the dairy farmers behind the recipes through stories and beautiful on-the-farm photography – from farmers like John and Kim Koepe who run the family farm that has been passed down from generations (since 1875) in Wisconsin to Lucas and Alise Sjostrom who quit their city jobs to join the dairy farm of her parents.ย But one thing all the farmers seem to have in common is their love and pride for their farms, cows, and products.ย As John Koepke says, โWe love what we do here on our farm.ย We work outside with our family, with the cows and with the land.ย We produce a food weโre proud of.ย Every day is Earth Day when you make your living off the land.โ In The Dairyย Good Cookbook,ย dairyย farmers share their secret (and not so secret) stories, traditions, and family recipes that have been passed down through generations. ย So in honor of the dairy farmers that make so many of our family recipes possible, I am excited to share one of my own family recipes made possible by dairy – our 5 Minute Silky Chocolate Sauce!
Whether it was family game night, family movie night, family ice cream night, or simply dessert time, this 5 Minute Silky Chocolate Sauce would almost always make an appearance. ย A very brief appearance because its smooth, creamy, rich chocolate deliciousness wouldn’t last long with five eager children and two adults ready to inhale it. ย Inhale it drizzled on popcorn,ย enveloping pretzels, bathing churro chips, smothering brownies or ice cream. ย This chocolate sauce made every family night better and all my memories more delicious.
And still does today.
To make this easy chocolate sauce, melt butter in heavy cream…
Add your favorite semi sweet chocolate and melt until smooth…
Then stir in vanilla and optional cinnamon and a splash of corn syrup (if you are opposed to corn syrup, it is still delicious without) and your Silky Chocolate Sauce is ready to make every memory more delicious.
Youย can thank American Dairy farmers who make this Chocolate Sauce possible and enjoy hundreds of delicious recipes by purchasing your own copy ofย The Dairyย Good Cookbook. The Dairy Good Cookbook retails for $25.00 and is available wherever books and e-books are sold.ย You can also purchase online at:ย Amazon.com (click HERE), Barnes and Noble (click HERE) and Indie Bound (click HERE).

My dad’s side of the family is Italian and he always made great lasagna and baked ziti dishes for our occasions. I now make these dishes because they are delicious and feed a lot of people.
My Mom made the best Hush Puppies when I was growing up. She got the recipe from her Mom, and I also made them when I was growing up, and now make them with my daughter! We use buttermilk in my Hush Puppies, and they are so delicious!
Homemade potato & cheese pierogies is our tradition in my family. Its a recipe that we make every holiday, and it has been passed down for many of years. Always brings back so many memories too, i also love hearing stories from my mom when she made them with her mom & grandmother.
My grandfather and his mother as well had a recipe for peach ice cream which was out of this world tasty. My mom makes it now…and some day I will be making it for my family….but not just yet.
Growing up, my grandma lived in Georgia and when I was little, the first recipe she taught me to make was cheesy mashed potatoes with whole milk. We make these potatoes every Christmas in honor of her. Over the years, our family has modified the recipe by adding bacon or garlic to the potatoes, but they are still as cheesy as ever. We now call these potatoes Granny Potatoes!!
My mom’s turkey meat lasagna is a recipe that we’ve enjoyed for years. When I got married, she included the recipe in a box for me to try out in my new home.
Our family loves ice cream. Making strawberry ice cream was a favorite July 4th memory as was making “snow ice cream” in the winter using fresh dairy cream that our milk man delivered to our door. If we weren’t home, he left it in a special large insulated metal box in the shade next to our door.
One of our family favorite recipes is stuffed pasta shells. I got this recipe clear back in high school in a food service class and to this day the whole family still makes them.

My dad is Swedish (I am adopted from Korea) and his mom always made him “Swedish pancakes” which are flour, milk, eggs, baking powder, and a little salt. I am not sure of their exact European origin, but they are different than typical American fluffy pancakes. They are slightly thicker than a crepe and he used to make them for me growing up every Sunday morning. I would enjoy them with a little butter and syrup then place a sausage link on top and roll it up ๐ Now I make them for my husband and son and I still love them. So simple, but delicious and reminds me of my childhood!
This recipe celebrates our love for dairy and includes cows milk and cheese. We found it online and we love to have it on Sunday mornings a few times a month. These breakfast meals are meaningful to us because we enjoy a wonderful meal together and great family time. bacon and eggs casserole recipe

In a large bowl, beat eggs. Add milk, cheese, sour cream, onions, salt and pepper.

Not really an official recipe – but I learned to make Chicago style pizzas – with extra extra cheese! My husband is from Chicago and I like making him something that reminds him of where he grew up.
We always have sweet potato gratin for holiday get-together. It is a family tradition dish that has been passed down through the generations.

A dish I have always loved was cheese stuffed Italian shells. My mom always used cottage cheese instead of ricotta. I liked it so much, I would request it for my birthday dinner as a kid!
I grew up in Hong Kong and one of the famous dessert is custard tart. The silky custard is made with whole milks, eggs, sugar; all baked in a buttery crust. My Aunt make this tart every year at our Christmas family gathering and I make it for my kids from time to time at home. It’s probably my favorite dessert to enjoy.
A recipe that has been passed down to me in my family is ham & cheese crepes, they are just so delicious and can be frozen!
Recipe as follows
โข 2/3 cup cold water
โข 2/3 cup plus 4 to 6 tablespoons cold milk, divided
โข 1 cup all-purpose flour
โข 2 eggs
โข 1/4 cup butter, melted
โข 1/4 teaspoon salt
โข
โข 1 to 2 tablespoons Dijon mustard
โข 8 thin slices deli ham
โข 1 cup (4 ounces) shredded cheddar cheese
โข
โข โข In a blender, combine the water, 2/3 cup of milk, flour, eggs, butter and salt. Cover and process until smooth. Refrigerate for 1 hour. Add remaining milk if batter is too thick.
โข โข Heat a lightly greased 8-in. nonstick skillet over medium heat; pour 3 tablespoons batter into the center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between. Cover and freeze for up to 3 months. Yield: 16 crepes.
โข โข To use frozen crepes: Thaw 8 crepes in the refrigerator for about 2 hours. Spread each with mustard; top with a slice of ham and sprinkle with cheese. Roll up tightly.
โข โข Place in a greased 11-in. x 7-in. baking dish. Bake, uncovered, at 375ยฐ for 10-14 minutes or until heated through.
We have a cream cheese pound cake recipe that has become a family standard and favorite. My dad was first to make it and I also make it on occasion. This super rich cake has a whopping 6 eggs in it and 2 full sticks of butter! As kids, my siblings and I loved this cake and now our chilren have grown to love it as well to the point that they fight over who’s going to get the last piece.

When I was a kid, I used to help my grandma cook and bake a lot. I learned so much from her! One of her best, and my favorite, recipes was for her creamy wild rice soup. Heavy cream and milk made it so creamy and delicious!
I have a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great.
Combine 3 1/2 cups peeled and diced potatoes, 1/3 cup diced celery, 1/3 cup finely chopped onion, 3/4 cup diced cooked ham and 3 1/4 cups water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in 2 tablespoons chicken bouillon granules, salt and pepper to taste. In a separate saucepan, melt 5 tablespoons butter over medium-low heat. Whisk in 5 tablespoons all purpose flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in 2 cups milk as not to allow lumps. Continue stirring over medium-low heat until thick, 4 to 5 minutes. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.
My dish would be lasagna with ricotta cheese. My grandma used to make this on special occasions like birthdays and holidays. Although she passed away 5 years ago, it reminds me so much of the great family celebrations we had with her when she still was alive. I still make her recipe on birthdays.
When I lived in Wisconsin, we visited the Wisconsin State Fair every year primarily for the cream puffs that were served in the dairy building. Cream puffs filled with sweetened whipped cream, and dusted with confectioner’s sugar-simply the best!
Waffles are a favorite in my family — ever since I received a waffle iron as a gift from my parents a few years back. It was the best gift ever — and whole family can enjoy homemade waffles anytime we want.
I love dairy in anything! but my very favorite way to have it is in a milkshake!! Any and all flavors. I just LOVE milkshakes ๐ this is special to me because it was always a special treat that my mom would make or that weโd get when weโd go out together ๐
My mom cooked the basics for my dad…meat and potatoes, nothing special or fancy. At some point as I got older, I became the mashed potato maker at thanksgiving. Everyone said how they liked my potatoes (perhaps in was the work involved in peeling and mashing that no one else wanted to do, or perhaps it was the addition of just the right amount of milk and butter. So, still nothing fancy and for about 40 years now, my specialty remains mashed potatoes.
For every special occasion my family requests my mini chocolate cheesecakes with cherries. I taught my daughter-in-law how to make them and now her family requests them also.
One year we were invited to some friends’ house for Thanksgiving dinner and I made a cherry cheese pie to bring along. After dinner the pie was quickly DEVOURED leaving some of the other pies nearly untouched. They insisted there must be MORE, so we drove around on Thanksgiving afternoon trying to find a store that was open so I could get the ingredients to make another! Since then I have made that pie for many family holidays as well as potlucks and it is always well received.
Growing up my mom made the best potato soup. In college I called her to get the recipe and she informed me it was basically nothing more than potato cubes heated up in milk. I’ve never been able to get it to taste anywhere near as good as hers was!
It is nothing special and not even a dish really but every time I have cheese and crackers I think of my mother-in-law. I have been married for almost 22 years and with my partner for over 25 years. During those years, the one thing that ALWAYS happens when we visit my partner’s family is that his mom puts out crackers and cheese slices. LOL I love that about her.
My favorite dish is my homemade clam chowder with shredded cheese on top. My grandmother made it every winter as it would get so cold in winter. I live in MS but make it all the time as it reminds me of her and growing up.
You are so welcome Ada! That should be fine, your ganache might just be a little thinner so maybe start with less cream then add more as needed. Enjoy!

When I was a kid, my dad made us pancakes almost every Saturday. To this day, making pancakes using his recipe takes me back to my childhood.

My favorite is homemade mac & cheese. Could live off of this.
Thanks so much.

Can you ship this? I am wanting to ship a “ice cream” box to a friend and want to know if this will hold up
Jen says
Hi Heather, this should be refrigerated so I would only ship it if you can do so with ice packs. And what a nice friend you are!!!
Ada says
Thanks for this recipe I will be making it this morning. I donโt have heavy 35% cream just 15. Will that do or what can I substitute it with?
Jen says
You are so welcome Ada! That should be fine, your ganache might just be a little thinner so maybe start with less cream then add more as needed. Enjoy!
