The secret to the best Caprese Skewers? First, toss the tomatoes in basil pesto and finish with a drizzle of sweet-tangy balsamic glaze for layers of fresh, bold flavor in every bite. These skewers are quick and EASY, make-ahead friendly, and effortlessly elegant!
In a large bowl, toss the tomatoes with one tablespoon of pesto.
Thread the skewers in this order: tomato, basil (fold in half if large), mozzarella ball, basil, tomato. Transfer to a large platter.
At this point, you can cover and refrigerate if needed.
When ready to serve, drizzle the skewers with olive oil and balsamic glaze and sprinkle with salt and pepper.
Notes
Small mozzarella balls: There are two sizes of small mozzarella balls, "pearls" and one size larger. If you have the option, choose the larger ones that are closer in size to cherry tomatoes. They will be located in the specialty cheese section near the deli. If you can't find either, use larger fresh mozzarella balls and cut them into bite-sized pieces.
Fresh basil: I like to use larger leaves and fold them in half, but any size will work.
Appetizer skewers or cocktail picks: 4- to 6-inch skewers are ideal for serving. I use these 4.7-inch skewers from Amazon.
