Hasselback Sweet Potatoes with Garlic Herb Butter

These Hasselback Sweet Potatoes are tender, melt-in-your-mouth and bursting with garlic herb, butter flavor!  They look wonderfully gourmet for holidays and special occasions but are everyday easy!

Servings 4 potatoes

Ingredients

  • 4 medium sweet potatoes/garnet yams
  • 3-4 tablespoons olive oil

Herb Butter

  • 6 tablespoons unsalted butter melted
  • 2 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 TBS EACH finely chopped fresh parsley, fresh chives (or 1 tsp. EACH dried)
  • 1 tsp EACH finely chopped fresh rosemary, fresh thyme (or heaping 1/4 tsp EACH dried)
  • 1/2 tsp EACH paprika, salt
  • 1/4 teaspoon pepper
  • pinch ground nutmeg

Optional, HIGHLY RECOMMENDED

  • 8 ounces regular or smoked Gouda cheese, thinly sliced into 1-inch squares

Toppings

  • sour cream
  • Herb Goat Cheese
  • green onions

Instructions

  • Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil and spray with nonstick cooking spray.
  • Wash and dry potatoes. Make a series of 1/8-inch slices along the top of each potato, stopping 1/2 inch from the bottom so you don't slice all the way through the potatoes.
  • Add the potatoes to the baking sheet and drizzle with some olive oil. Rub the olive oil all over the potatoes. Bake sweet potatoes for 40 minutes. Towards the end of the 40 minutes, whisk all of the Herb Butter ingredients together (not too early, or the butter will harden).
  • Remove the potatoes from the oven and brush in between the slices with the Herb Butter.
  • Return to the oven and bake another 10-20 minutes OR until the center potato slices are very tender. Brush sweet potatoes with any of the butter that has accumulated at the bottom of the pan. Season with additional salt and pepper to taste. Serve with Sour Cream or Herb Goat Cheese or see Gouda option below.
  • Optional: When potatoes are fully cooked, remove from oven and distribute Gouda evenly in between every few potato slices. Return potatoes to oven and cook just until cheese is melted, 3-5 minutes more.

Notes

Tips and Tricks for Hasselback Sweet Potatoes

  • My grocery store calls sweet potatoes garnet yams.  So look for garnet yams or your sweet potatoes might actually be white inside!
  • Purchase sweet potatoes that are uniform in sizes so they cook evenly.
  • Scrub the outsides of the potatoes clean because guests are more than likely eating the skins - we don't want any grit in their teeth.
  • Pat the potatoes very dry after washing or the skins won't get as crispy.
  • Don't slice the potatoes all the way through the potato.  Some people like to lay their potato in between chopsticks which will prevent you from slicing all the way through the potato.
  • Try and make the slices as uniform as possible as this will ensure more even cooking.
  • After the potatoes are cooked, you can add slices of Gouda or your favorite cheese on top of the Hasselback Sweet Potatoes and bake until melted for extra decadence.
