Ingredients

Grinder Salad

  • 1 head iceberg lettuce, chopped
  • 4 oz Genoa salami, chopped
  • 4 oz pepperoni, chopped
  • 4 oz deli turkey, chopped
  • 4 oz provolone cheese, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/3 cup sliced pepperoncini (sub banana peppers for milder)

GRINDER SALAD DRESSING

  • 1/2 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 1/4 cup freshly grated parmesan cheese, like powder
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons pepperoncini juice
  • 1 tsp EACH garlic powder, dried oregano
  • 1/2 tsp EACH dried parsley, dried basil, onion powder, paprika, salt, pepper

Instructions

  • Make the Dressing: Whisk together the ingredients until smooth and creamy. Refrigerate while you prepare the salad (the longer the better).
  • Assemble: Add the lettuce to a large serving bowl. Add the rest of the salad ingredients.
  • Toss with the Dressing: Pour about three-quarters of the dressing over the salad and toss thoroughly until every ingredient is lightly coated. Add additional dressing as needed until the salad reaches your desired creaminess.
  • Taste and Adjust: Taste before serving and adjust with extra salt, freshly cracked black pepper, Parmesan, etc. Serve immediately.
