Sweet Potato Coconut Oatmeal Pancakes! These pancakes are simply awesome!
When I think sweet potatoes, I think Thanksgiving sweet potatoes with cinnamon and coconut. Add in some oatmeal, and you have yourself one dynamite sweet potato pancake that you can devour year round!
These sweet potato pancakes are made even more awesome in that they are practically an oxymoron: they are uber soft and moist from the potatoes, but at the same time have a hearty texture from the oatmeal and coconut. I just don’t know how they manage it! but I am so happy they do!
The pancake’s soft and hearty texture in addition to their more savory than sweet flavor (although the pancakes themselves do have cinnamon, vanilla and sweet coconut – yes, you can do a happy dance!) create a tasty canvas for whatever you decide to mound on top of them. They kind of remind me of oatmeal in this way (besides that they have oatmeal in them), by providing the satisfying texture and then you decide what flavor scheme you want run with.
You can go the more savory route with butter, honey butter, nuts, apple sauce, pear puree, etc., or you can go the sweeter route with syrups and such – thus the parentheticals around “Apple Cinnamon Syrup” because it is completely up to you and your preference or mood!
As for me, I am always in the mood for these Sweet Potato Coconut Oatmeal Pancakes WITH 15 Minute Cinnamon Apple Syrup!
In fact, I created this syrup just for these pancakes, inspired by my love to overwhelm my oatmeal with apples, cinnamon and brown sugar. But this syrup is light-years tastier than just apples and cinnamon!
This succulent sweet syrup is just begging for the perfect companion to compliment, to enhance, to douse in its cinnamon decadence.
I think I found the perfect companion:

Every bite textures of soft, coconut, oatmeal pancakes intermingled with sweet syrup and tender cinnamon apples.
Sweet Potato Coconut Oatmeal Pancakes with Cinnamon Apple Syrup. Hearty and sweet at the same time. Does it get any better than this?!!
Sweet Potato Pancakes

Ingredients
Dry Ingredients
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup sweetened coconut flakes
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 teaspoon cinnamon
Wet Ingredients
- 2 eggs
- 1 1/4 cups packed mashed sweet potatoes
- 2 cups milk
- 4 tablespoons butter, melted
- 1/2 teaspoon vanilla extract
- 1 Recipe 15 Minute Cinnamon Apple Syrup
Instructions
- Begin preparing/simmering Cinnamon Apple Syrup (optional).
- In a medium bowl, whisk together the dry ingredients.
- In a separate bowl, beat eggs, then mix in sweet potatoes,milk, butter and vanilla.
- Add dry ingredients to the "wet" ingredients and mix until just combined.
- Lightly grease a nonstick skillet (butter, oil or nonstick spray) and heat over medium heat. Add batter to the center of the pan and swirl to spread batter into circles. Cook until golden brown on each side, flipping when the surface begins to bubble.
- Top with Cinnamon Apple Syrup (optional).

These look great! I took my mom to her favorite brunch restaurant for mom’s day. She likes to get a special pancake that they serve. But we found out the restaurant was closed. Sadness!
