Healthy Hollandaise Sauce

Healthy Hollandaise sauce
Ingredients
  • 1cup plain Greek yogurt*
  • 3 egg yolks
  • 1teaspoons lemon juice
  • 1clove garlic, finely minced
  • 1-2teaspoons Dijon mustard
  • 1/2teaspoon salt
  • 1/2teaspoon dried basil
  • 1/4teaspoon ground cumin
  • 1/4teaspoon paprika
  • 1/8-1/4 red pepper flakes
  • 1/8-1/4teaspoon ground pepper
  • 1/2teaspoon sugar, more or less to taste
Instructions
  1. Using a double boiler (or as pictured above, you can place a strainer over a saucepan and place a bowl in the sieve), thoroughly beat yogurt, lemon juice, and egg yolks. Stir in garlic.
  2. Heat over approximately 1″ simmering water, stirring frequently, for 15 minutes, or until sauce has thickened.
  3. Stir in Dijon (starting with 1 teaspoon), basil, cumin, paprika, red pepper flakes, salt, and pepper. Taste and add approximately 1/2 teaspoon sugar, more or less depending on how “sour” your yogurt is. Taste and add additional Dijon, salt, pepper and/or red pepper flakes if desired.

Recipe Notes

*Fat free, low fat or regular Greek Yogurt are all delicious. Do NOT use regular yogurt as it is not nearly as thick as Greek yogurt.
