Caribbean Shrimp (or chicken) Salad packed with tropical fruit, sweet coconut, roasted macadamia nuts and Island marinated shrimp all doused in sweet and tangy bright Citrus Balsamic Vinaigrette.
You might have noticed Carlsbad Cravings is lacking in the shrimp department. Actually, its nonexistent in the shrimp department. This is not because I don’t love shrimp. But rather, because Patrick is severely allergic.
Patrick wasn’t always allergic. Patrick loved shrimp. It wasn’t until a few years ago when he almost single handedly ate a shrimp platter from Costco in one sitting that the anaphylactic reaction set in. At first his ear was itchy. Then really itchy. So itchy he asked me to itch it for him – deeper – no deeper! Then his throat began to tingle. We finally put two and two together so I unwisely left him alone and ran to get an antihistamine at Rite Aid.
Meanwhile, Patrick, left all by his lonesome, felt his throat constricting. Fearing the constricting would continue to the point he couldn’t breath, he called 9-1-1. He was advised to take Claritin and to stay on the phone. By the time I got home, his breathing was regulated and his symptoms subsiding. But no more shrimp for Patrick. Or so you would think. On Christmas Day a year later, Patrick thought he could “try” shrimp again. He only had a few pieces, but this time his reaction was more immediate and severe. Now, no more shrimp for Patrick. But we do have an epi-pen just in case.
Thus, I don’t cook shrimp very often because I like to make food that Patrick will like – or at least actually be able to eat. That being said, making a sumptuous shrimp salad that Patrick can’t eat has its advantages. Its mine. ALL mine. (Buuuttt…if you are feeling generous, you can also make this with chicken for your anti-shrimp eaters.)
The pre-cooked shrimp is marinated in splashes of orange juice, lime juice, soy sauce, ketchup and Island spices so each morsel is packed with flavor – just look at its marinated color!
While the shrimp marinates for an hour (not longer or it will become tough), you can prepare your salad ingredients – delectable mangoes (my FAV ever), crisp jicama (if you have never cut jicama before, its SO easy, watch this video HERE), sweet kiwis, crunchy bell peppers and creamy avocados garnished by salty, roasted macadamia nuts (or sub your favorite nut) and sweetened toasted coconut flakes all on a bed of spinach.
And if that cast wasn’t delicious enough, the salad all gets drizzled with Citrus Balsamic Vinaigrette layered with hints of orange juice, lime juice, balsamic vinegar, honey and ginger. If you think of it, I like to make my vinaigrette the day before so it can chill and the flavors can fully blend. so irresistible.
