Happy National Dairy Month!  Milk, cheese, sour cream, cottage cheese, cream cheese, yogurt, ice cream, ice cream covered in chocolate sauce – this chocolate sauce – I  love it all!  I was the reason my mom had to make “in-between” grocery shopping trips just for milk because I would guzzle it glass after glass.

Today, I am just as dependent on dairy – from my cheesy pasta sauces (like this Skinny Garlic Parmesan Mozzarella Fettuccine Alfredo), to my cremas (like this Pineapple Sriracha Crema), to my obsession with everything cream cheese/cheesecake (like my Key Lime Cheesecake Sugar Cookie Cups), to my dressings (like my 5 Minute Blender Tomatillo Avocado Ranch), to smoothies (like my Aloha Bliss Pineapple Smoothie) to my Easy Creamy Caramel Sauce – I am in love with dairy – thus I am in love with The Dairy Good Cookbook.

Next, it’s Sundown Supper including recipes such as Parmesan Chicken Fettuccine, Slow Cooked Beef Stroganoff and Roasted Sweet Potato Empanadas with Garlic-Red Pepper Dipping Sauce.  Finally, let’s finish our epic palate-pleasing day with After Dinner Desserts such as Triple-Layer Chocolate Cake with Vanilla Buttercream, Honey-Roasted Caramel Pie and/or Caramelicious Milksicles.  I want to try every recipe, but I have a special place in my heart for caramel – actually, half of my heart might be dedicated to caramel.  Smooth, rich, creamy, velvety caramel.   I want that Caramellicoius Milksicle.  Now.

There also is another complete section dedicated to sides, and special occasion recipes because The Dairy Good Cookbook does it right. What I love almost as much as the recipes, is getting to know the dairy farmers behind the recipes through stories and beautiful on-the-farm photography – from farmers like John and Kim Koepe who run the family farm that has been passed down from generations (since 1875) in Wisconsin to Lucas and Alise Sjostrom who quit their city jobs to join the dairy farm of her parents.  But one thing all the farmers seem to have in common is their love and pride for their farms, cows, and products.  As John Koepke says, “We love what we do here on our farm.  We work outside with our family, with the cows and with the land.  We produce a food we’re proud of.  Every day is Earth Day when you make your living off the land.” In The Dairy Good Cookbook, dairy farmers share their secret (and not so secret) stories, traditions, and family recipes that have been passed down through generations.  So in honor of the dairy farmers that make so many of our family recipes possible, I am excited to share one of my own family recipes made possible by dairy – our 5 Minute Silky Chocolate Sauce!

Whether it was family game night, family movie night, family ice cream night, or simply dessert time, this 5 Minute Silky Chocolate Sauce would almost always make an appearance.  A very brief appearance because its smooth, creamy, rich chocolate deliciousness wouldn’t last long with five eager children and two adults ready to inhale it.  Inhale it drizzled on popcorn, enveloping pretzels, bathing churro chips, smothering brownies or ice cream.  This chocolate sauce made every family night better and all my memories more delicious.

To make this easy chocolate sauce, melt butter in heavy cream…

Add your favorite semi sweet chocolate and melt until smooth…

Then stir in vanilla and optional cinnamon and a splash of corn syrup (if you are opposed to corn syrup, it is still delicious without) and your Silky Chocolate Sauce is ready to make every memory more delicious.

5 Minute Silky Chocolate Sauce/Ganache

Servings: 1 ½ cups

Ingredients

  • 1 cup heavy cream
  • 1 tablespoon salted butter
  • 8 oz. semi-sweet chocolate, chopped
  • 2 tablespoons corn syrup, optional**
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)

Instructions

  • Melt butter in heavy cream in a medium saucepan over medium heat, stirring occasionally.
  • Once butter has melted, stir in chocolate until melted and smooth. Stir in corn syrup, vanilla and cinnamon.
  • Remove from heat and cool to room temperature. Store in an airtight container in the refrigerator for up to 2 weeks. To reuse, heat in the microwave or on the stove.

Notes

*Use your favorite quality chocolate for the best tasting chocolate sauce.
**Corn syrup adds extra smooth silkiness but you can omit if desired and the sauce will still be wonderful.

    Can you ship this? I am wanting to ship a “ice cream” box to a friend and want to know if this will hold up

      Hi Heather, this should be refrigerated so I would only ship it if you can do so with ice packs. And what a nice friend you are!!!

    Thanks for this recipe I will be making it this morning. I don’t have heavy 35% cream just 15. Will that do or what can I substitute it with?

      You are so welcome Ada! That should be fine, your ganache might just be a little thinner so maybe start with less cream then add more as needed. Enjoy!
